Exclusive Interview | Hardik Shah, Director of Food and Bevrage Four Seasons Bengaluru

Editor: Tell us about your journey. How did it all start?

It happened actually by accident, after my commerce graduation, I decided to pursue Hospitality out of keen interest in how hotels operate and was always intrigued by how things work in restaurants while my uncle ran a chain of restaurants in South Africa. I started my journey with the Leela group as a management intern and moved on to Taj Mahal and then Four Seasons in Mumbai. Went on to my first international assignment with the Ritz Carlton, Doha handling multiple outlets and then banquets. It was a home calling with the Four seasons Mumbai where I was heading the F&B driving the highly successful F&B operation there. Currently heading the F&B at The Four Seasons Hotel in Bengaluru with their stunning new property.

 

Editor: What do you think it takes to succeed in this industry?

I think Resilience and the Passion to deliver is something that is essential for success. The hunger to learn and grow is the most important thing one should never cease for long-term success in hospitality.

 

Editor: What are the attributes you look for while selecting or hiring?  If someone wants to work with you, what should they do?

I primarily look at the attitude of anyone I am hiring. That’s one thing that cannot be taught or inculcated. Skills can be acquired but attitude and passion are inherent and that’s what is required to join and succeed at the Four Seasons. We have a very detailed Behaviour Based Interview technique that has 4 different levels probing some key aspects which are required to succeed at The Four Seasons.

 

Editor: What advice would you give to a young, aspiring hotelier for their internship?

Learn and grasp things as much as you can, this will stay with you forever. Never shy away from asking questions about something you don’t know/understand. Better to clarify and get it right than assume and make mistakes.

 

Editor: What are some of the trends you see impacting the hospitality industry?

Pandemic has taught us new ways of doing things. Most people are now moving towards wellness, wellbeing, and a healthy lifestyle. Many millennials and Gen Z are now also looking at sustainability and local produce to enhance their experience and are supporting these aspects and making decisions about their travel based on these things.

 

Editor: Two things you would like to change in the industry.

Work-life balance ( especially during the pandemic)

Due Recognition for the people working in the most diverse environments

 

Editor: What is your favorite interview question and why?

Why would you want to join Four Seasons and what does success mean to you. This gives me an understanding of the person applying is actually keen on the brand or just wants another job. Also, it helps me gauge his understanding of success. If success is based on growth and learning then the person would have a long-term commitment and would contribute more to the Brand and for himself.
