Aangan meaning courtyard in English, is referred to as a warm and welcoming dining space where food is shared and enjoyed with family and friends. Complete with an alfresco terrace, Aangan majestically overlooks the turquoise waters of the Gulf of Oman. Taking inspiration from Oman’s heritage and India’s homeland, soaring ceilings and artistic archways create a magnificent sense of place. Guests enter the dining area through the grand double doors flanked with bold blue drapes, inviting diners to enter another world and enjoy the heartfelt hospitality Shangri-La is renowned for.

The extensive menu designed to share; allows diners to mix and match dishes to tease and tantalise the palate. Chef Ghai has taken a contemporary approach to traditional Indian cuisine and has created dishes that burst with flavour. Dishes include an Aloo Tikki, one of the most well-known street food dishes in India and set to be a favourite on the menu. The crispy potato cake with sweet and tangy tamarind, lentils and fresh mint is balanced with honey yoghurt to create a perfect combination of sweet and sour flavours. Ghai’s signature batter fried crunchy Masala Prawns get their spice from the Kashmiri chili. Cooked with sesame, peanut and tamarind, the perfectly cooked prawns are finished with a light dusting of desiccated coconut.

Accompanied by a twist on a traditional chokha, the Rogan Josh Lamb Shank dish is not to be missed. Slow cooked for eight hours until the meat is tender, the hearty dish is accompanied by a sauteed onion base, green and Kashmiri chili, cumin, coriander, and a touch of ginger. A smooth, velvety sauce is the perfect accompaniment to the rich and tender lamb.

 

Meanwhile the vegetarian Dhokla is crunchy on the outside with a soft cake like interior that is peppered with fresh apple and tempered baby heritage beetroot. To finish, a sweet, fresh Mango cheesecake is finished with green pistachio and a little kick of pink peppercorns to perfectly balance sweet and savoury flavours.

 

To complement the dishes, an extensive beverage list has been carefully curated with wines hailing from old and new world vineyards.  Expertly crafted cocktails include the signature Gin & Tonic Pushpanjali, meaning a handful of flowers in English. Meanwhile, the whiskey-based cocktail Somras packs a punch and is a cross between a Manhattan and an old fashioned. The drink is inspired by the Sanskrit culture and was believed to have been consumed as a potion by the Hindu gods to remain immortal and invincible.

The fourth bottling of its permanent 19-year-old expression, Ardbeg Traigh Bhan (pronounced tri-van) will be made available in the country exclusively via Duty Free retail outlets in Mumbai and Delhi airports. Bringing the strictly limited edition launch to India is Ardbeg’s first step in fulfilling the growing demand of its prestige offerings in the country. 

 

Produced in small batches and released year-on-year, Ardbeg Traigh Bhan 19 Years Old Batch 4 is an exceptionally rare and ever-changing whisky, drawing its inspiration from Islay’s Traigh Bhan beach, known locally as the Singing Sands. Matured with a higher proportion of Oloroso Sherry casks, Batch Four is subtly different to the previous releases of Traigh Bhan, taking on more flavours of chocolate and raisin, alongside a distinctive mentholic character.  

 

This sublime dram is the epitome of an aged Ardbeg. On the nose, rising aromas of herbal pine and fennel flow into sharp notes of citrusy lime sorbet and medicinal lozenge. On the palate, an intense wave of wood smoke leaves ripples of decadent dark chocolate and ground coffee in its wake. Sweeter notes of lemon curd and peanut brittle cut through the swell to reveal delicate hints of creamy raisin fudge and hazelnut. Finally, menthol, fresh lemongrass, aniseed, clove and white pepper emerge from rich, smoky depths.

 

The taste profile isn’t the only thing that changes year-on-year. Each Traigh Bhan whisky carries its own unique batch code, batch symbol and signature from one of the Distillery’s famous faces – this year it’s Colin Gordon, the Distillery Manager

The Maldives’ Largest Under Ocean Restaurant Only BLU Opens at OBLU SELECT Lobigili & OBLU XPERIENCE Ailafushi


From unforgettable deep-sea dining to food trucks serving succulent grills on a starlit beach — these two new COLOURS of OBLU resorts have endless culinary delights on offer. 

Only BLU, the newest restaurant in the Maldives, invites diners on an unforgettable culinary journey beneath the ocean. Launched recently, Only BLU is one of the most sought-after outlets in the destination. Surrounded by exotic blue hues and a colourful flow of marine life, this deep-sea dining experience is a unique way of connecting with nature and with loved ones. 

The restaurant is accessed through a wooden jetty between the two island resorts, OBLU SELECT Lobigili and OBLU XPERIENCE Ailafushi. As guests descend 6.8 meters below sea level, they pass by an open kitchen showcasing the chefs’ artistry in an inviting display and are welcomed with canapes and sparkling wine. 

There is a distinctly ‘only blue’ vibe with colours, patterns, and textures all chosen to complement the spectacular ocean vistas. A horseshoe-shaped design ensures every table has its own window view of the coral reef. With a 190 sqm dining space and 46 seats, Only BLU is the largest under ocean restaurant in the Maldives.


While the show-stealer is the mesmerising under ocean setting, the Modern Gourmet Cuisine is just as tempting. Dining experience is personalised with a choice of seafood and fish, meat and poultry, or vegetarian fare, all paired with red and white wines and a selection of beers. On-menu are carefully crafted dishes such as,

  • Panko and Sesame Crusted Tofu served with enoki mushroom, scallion, and tossed greens

  • Maldivian Yellow Fin Tuna Poke served with Peruvian avocado, Spanish onion, mango, and edamame

  • Guinea Fowl Ballotine served with foie gras and wild mushroom emulsion, spinach, potato pave, and butter tossed young root vegetables

Plates of delicious appetisers and mains are stacked in rantangs (wooden stands) and placed on the table – creating a personalised culinary tower that adds an element of visual delight. The smart and discreet service keeps the focus completely on savouring the flavours and soaking in the spellbinding marine show.

At OBLU SELECT Lobigili, the Lobi PlanTM includes one complimentary dining experience at Only BLU for a minimum of four days of stay. Dining at Only BLU is not included in the Fushi PlanTM. However, guests at OBLU XPERIENCE Ailafushi have the option of booking lunch or dinner for an additional charge.  

Speciality Food Truck Experience

For those looking to step out and relish a carefree meal on the beach, there are two vibrant food trucks - Gaadiya 17 at Lobigili island and The Copper Pot Food Truck at Ailafushi island, which serve grab-and-go style grills. 

Gaadiya 17, which opened on 13 June 2022, specializes in certified, farm-raised game meat. On the menu are Angus Striploin and Kobe Tataki steaks, Wild Maldivian Lobster, Lagoon Prawns, and Octopus Legs. The Copper Pot Food Truck is all about fresh Surf & Turf grills.

These aromatic and succulent dishes can be savoured by the ocean, enveloped in starry skies, soft music, and a refreshing breeze.

At OBLU SELECT Lobigili, guests can also dine at Ylang Ylang all-day restaurant and relax at the eye-catching Swing Bar with an infinity pool. Dining options at OBLU XPERIENCE Ailafushi include the Element X Restaurant which serves modern Western, Central Asian, and Far Eastern cuisines and X360 Bar featuring a 1000 sqm infinity pool. La Promenade, opened on 11 June 2022, offers an engaging social scene with a café and wine boutique.

Mumbai, September 2022: The Covid lockdown (2020 & beyond..)brought out the hidden chef in a lot of people. While most of us decided to limit our experiments to personal kitchens, one SoBo entrepreneur, owner of Gateway Brewing co., decided to take things further and Pizza Dude came to life in August 2022. Pizza Dude is a delivery kitchen that will transport Mumbaikars to the city of Rome, offering Roman-style pizzas that one can buy “by the slice & create a mixbox '' to sample 12 different types that are on offer. Since each variant is a slice measuring 5 inches by 4 inches, a person can easily try 3 variants in one go versus buying a whole regular round pie. Additionally, just like Pizza Romana Dude’s dough is not only slow-fermented but also naturally fermented sourdough! Only flour, water & salt are used.


While most of us are familiar with round pizzas, Pizza Dude offers square pizzas, sold by the slice that are cut from a rectangular piece and baked on a sheet pan. During the lockdown, Navin started experimenting with pizza & other sourdough pieces of bread to re-create what he had experienced in Rome in 2019.  After days and months of trials and testing, the madness gave birth to Pizza Dude.  “In 2019, I was in Rome where I was introduced to pizza Romana, which is made from dough that is slowly fermented over 24 hours. Cut to 2020, there was a lockdown and I had plenty of time to experiment with this style of pizza, and now I’m happy to share it with the people of Mumbai,” says Navin. 


Using a naturally fermented, pillowy, yet strong sourdough base to hold generous amounts of toppings, the pizza is best enjoyed one slice at a time. This also encourages customers to indulge in several flavors at a time. The menu is designed keeping in mind those classic and adventurous palettes, with innovation, local, and variety is the main drivers of the product.


On the menu, one can try classic flavors such as Cherry Tomato, Basil & Fresh Mozzarella, tomato sauce, dude mozzarella blend topped with roasted cherry tomatoes & fresh buffalo mozzarella, finished with basil, extra virgin olive oil, and herbs; Creamed Spinach & Corn, white sauce, dude mozzarella blend topped with creamed spinach & sweet corn kernels and finished with crispy garlic flakes; and Truffled Mushroom, garlic white sauce, dude mozzarella blend topped with pan-roasted mushrooms, finished with caramelized onions, truffle oil and greens. Those who like to explore can try novel toppings such as Eggs Kejriwal, garlic white sauce, dude mozzarella blend topped with scrambled eggs. This finished with spicy coriander chili pesto and chives; Hot Chicken & Ranch, tomato sauce, dude mozzarella blend topped with shredded chicken in ghost pepper hot sauce, finished with onion jam & ranch drizzle; Turkish Chicken Doner, dude mozzarella blend topped with spiced chicken, finished with peppers and garlic yoghurt mayo; and Lamb & Za’atar, dude mozzarella blend topped with za’atar spiced mince lamb, finished with fresh salad and labneh. The tomato sauce is made in-house which complements the soft cheese and crispy, light crust. To finish the meal, the Tiramisu makes for the perfect, sweet ending.

Anand is passionate about food and has spent her professional career finding, funding, and founding food businesses across the globe. She spearheads multiple national and international food businesses under KGV and is also focused on lifting up female founders and guiding them through the male-dominated F&B industry. Both she and Anand are mothers, a key factor that determined their interest in introducing and promoting truly healthy foods to audiences across the globe. What’s more, Gourmestan’s offerings are also ideal for people living with conditions like celiac disease, PCOS, hormonal imbalances, and lactose intolerance among others, enabling them to enjoy tasteful foods that are still good for them.

Under the KGV banner, Anand drives the homegrown Circle of Crust and King’s Dairy brands across India along with a more recent investment, We Idliwale, while preparing for the launch of the Fuji Cream frozen dessert line. In Dubai, Neha leads the international expansion of Circle of Crust. In May 2022, Anand also launched the flagship location of their newest brand Jun’s, a Progressive Asian modern dining experience in Downtown Dubai on the famous Sheikh Mohammed Bin Rashid Boulevard. 

Via this investment, Gourmestan will continue expanding across India, as well as focus on its international debut, as it looks to soon launch its first store in Dubai.

BOCA Dubai introduces sustainable and waste-free cocktail menu

BOCA’s Omar Shihab commissioned an artist to design the new illustrated menu

BOCA Dubai, Gault&Millau UAE 2022’s Sustainable Kitchen of the Year, has launched a new cocktail menu inspired by local and regional ingredients and an obsession with reducing waste in the bar. The new cocktail list is the result of months of research and close collaboration within the restaurant.

Founder and GM Omar Shihab sat down with Caterer Middle East to chat about the new cocktail offering. He said: “Our new bar offering features ingredients that are local and new, perhaps never been explored in the bar. Some of the ingredients are made out of waste from the kitchen.”

Introducing new ingredients can always be challenging Shihab explained, but due to his culinary team’s extensive experience with sustainable ingredients, he knew that adapting the ingredients into a drink format was doable. He said: “We understand these ingredients’ taste profiles and we know how they react to specific preservation methods. Giedre Bielskyte, our bar manager, was mapping out the taste profiles of each drink and seeing what we need to match the botanics of the cocktail’s main liquor.

“We were able to look at new items that are considered waste in the kitchen. Things like tomato water and fruit skins. We found ways to maximise those ingredients. For example, we use the skins as dehydrated garnish. We also thought it was very important to tap into what the kitchen usually buys. That was our inspiration for the pimientos del padron cocktail, which is our take on a paloma, made with BOCA’s favourite tapas.”

Oher cocktails on the list include the cold brew martini made with the UAE’s own Boon coffee. The foraged martini is made with UAE-native desert plant khansour, dried apricots and apricot leather made from apricot skin. The summer in Bethlehem cocktail is made with Palestinian brandy. Others include a frankincense negroni made with white Omani frankincense, and tomato and rayhan, made using tomato pulp that’s left over from paellaand native basil.

“We spent a lot of time with the kitchen team when developing this menu. They helped us explore new ingredients and provided us with a new source that may have been destined to the bin,” added Bielskyte.

The growing popularity of non-alcoholic beverages


BOCA’s new cocktails are also available with a low-ABV or no alcohol option using Lyre’s Non-Alcoholic products. Shihab said: “We are going through an evolution in the market. We are seeing a lot of new bars and menus including the no ABV option. The idea is how to integrate that in an organic way, without having to create a brand new category and what we are doing with this menu. We are using Lyre’s products in replacement for alcoholic products. So essentially we keep the cocktail the same but use zero-proof spirits instead. It is important not to alienate the non-drinkers.”

Over the last year, Shihab has seen see the market adapting a lot more to zero-proof beverages. He added: “The products are getting a lot more visibility, so the consumer is more open to drinking non-alcoholic beverages. We are so happy to get behind that as well.”
