Hyatt Regency Phnom Penh Appoints New F&B Director-Sandeep Jinarajan

The soon-to-open Hyatt Regency Phnom Penh is already elevating its culinary appeal with the appointment of Sandeep Jinarajan as the hotel’s director of food and beverage. Located within walking distance to some of the city’s biggest attractions including the Royal Palace and the Mekong River, the 247-room hotel is scheduled to open in the Cambodian capital on Jan. 6, 2021.

With more than 20 years of food and beverage operation experience, Jinarajan will be fully in charge of the hotel’s five dining outlets and bars, including Market Café Restaurant & Lounge, FiveFive Rooftop Restaurant & Bar, The Attic, Metropole Underground as well as the Poolside Bar. Additionally, Sandeep will oversee the hotel’s in-room dining and banquet service.

“I’m excited to be bringing a unique rooftop venue to Phnom Penh in the form of FiveFive Rooftop Restaurant & Bar. The restaurant will focus on fresh, sustainable seafood, local produce, and hand-crafted cocktails while boasting the best views in the city,” said Jinarajan. “Our executive chef, Richard Bias, and his team have developed a unique Asian fusion menu, with some interesting twists on traditional Cambodian favorites. We can’t wait for travelers and locals to experience it.”

Prior to joining Hyatt Regency Phnom Penh, Jinarajan worked as the food and beverage director at The St. Regis Astana in Kazakhstan as well as the assistant director of food and beverage at Park Hyatt Abu Dhabi for four years.

Originally from Bangalore in India, Jinarajan began his career at Grand Hyatt Dubai in 2003, where he worked as assistant manager (all-day dining and à la carte) during the hotel’s pre-opening and post-opening phase. Over the next 12 years, Jinarajan held various managerial roles within the F&B department, before working his way up to food and beverage manager, where he managed the property’s 13 award-winning restaurants and bar from 2013 to 2015.

Alma Promotes Chefs Despite COVID-19’s Impact on Tourism

CAM RANH, Vietnam (December 18, 2020) – The Alma resort has appointed two executive sous chefs who bring more than two decades of hospitality experience to 14 restaurants and bars at the new 30-hectare beachfront property.

 Alma’s general manager Herbert Laubichler-Pichler this month named Mai Ly Huong and Francesco Conzattu as executive sous chefs at the five-star family resort overlooking Long Beach on Vietnam’s Cam Ranh peninsula.

 Born and bred in nearby Nha Trang, Huong received a Certificate of Cooking from Nha Trang’s Huong Duong Vocational Centre and started her career at Sheraton Nha Trang Hotel and Spa in 2012. She worked at Sheraton Seoul D Cube Hotel in South Korea, Aloft Al Ain in Abu Dhabi, JW Marriott Phu Quoc and Sun Aqua Iru Veli at the Maldives before joining Alma as a sous chef in September 2019.

 

Describing herself as “able to not only operate but thrive in a high-pressure and high-volume environment”, she said a priority in her new role was to continue developing her leadership skills to help her kitchen staff develop and realise their full potential. 

 Francesco, who was born in Sassari, Italy, decided he wanted to be a chef at a young age when he started helping his grandmother and mother cook. He completed a six-year full-time hospitality course with the Professional Institute for Hotel and Tourism IPSAR Sassari before launching a career in 2007 that has seen him steadily climb the ladder at leading hotels and restaurants in Italy, the United Kingdom, Switzerland and Dubai. 

 He has worked for the likes of both Starwood’s Hotel Cervo in Porto Cervo and Leading Hotel of the World Hotel La Perla in Corvara, both in his native Italy, as well as the Cavalli Club, Restaurant and Lounge in Dubai. He was chef de cuisine at Italian restaurant Armani Deli at Armani Hotel, housed in the world’s tallest skyscraper Burj Khalifa, before his appointment at Alma as chef de cuisine at Alma in September 2019. 

 Francesco, who describes himself as “self-motivated, hands-on team player”, said he wished to “keep learning and growing” in his new role, including learning everything required to oversee the culinary operation of the resort and support the entire F&B team.

 Bold, spacious and emblematic of Vietnam’s maturation as a destination, the independently owned and operated Alma features 580 oversized suites and pavilions, 14 food and beverage outlets, and a cascade of 12 beachfront swimming pools. Jan's hospitality career with Marriott International began in 2008 serving as Resident Manager of two of the most unique The Luxury Collection Hotels in Mexico: Hacienda San Jose, as well as Hacienda Temozon, located in the Peninsula of the Yucatan. Thereafter, he moved over to Spain at Le Meridien RA Beach Resort & Spa, before returning to Mexico to open The Westin Guadalajara as the Food & Beverage Director. Shortly after, he joined the pre-opening team of the W Bogota in Colombia where he was promoted to Director of Operations. In 2017, Jan's expertise brought him to The St. Regis Bahia Beach in Puerto Rico, where months after starting as Hotel Manager, the hotel was forced to close as a result of Hurricane Maria. Jan led the team through a successful closure, renovation, and reopening of this beautiful flagship resort in December 2018. Most recently, he served as General Manager of The Ocean Club, A Luxury Collection Resort in the Dominican Republic.

Chef Fortin has a wealth of culinary management experience from over twenty two years in the industry, most of which served at Fairmont hotels across North America. After earning his professional culinary diploma and completing Chef Training at Trait-Carre Professional Center in Quebec City, his career began in 1998 as Chef de partie at Fairmont Le Château Frontenac in Quebec City. He progressed through various positions of increasing responsibility, including Sous Chef, Chef, Manager and Consultant for different restaurants.

Chef Fortin served as Sous and Executive Chef for a variety of Fairmont hotels from 2005 to 2016 including Fairmont Le Chateau Frontenac, Fairmont Hotel Macdonald, Edmonton, Fairmont Jasper Park Lodge, Fairmont Algonquin St. Andrews, Fairmont Chateau Montebello and finally at the infamous Fairmont Chateau Lake Louise in Alberta, Canada.

Serving as the Executive Chef of the Fairmont Chateau Lake Louise for since 2016, Chef Fortin is excited for the opportunity to get to know Texas cuisine. He and his team have already launched La Taqueria at the Lobby Bar, a new pop up concept at the Fairmont Dallas featuring Tex-Mex classics including tacos, burritos, and quesadillas.

With his rich and diverse experience panning over 17 years in the hospitality and services sector, Bindra will lead the team at the hotel to strengthen its position in the value-driven market of Ahmedabad.

Having started out as a management trainee at the financial services corporation, American Express, Bindra took a leap into the hospitality sector since 2008, when he joined The Oberoi Hotels and Resort. Two years later, in 2010, he joined Westin Gurgaon and Westin Sohna Resort and Spa as a part of the pre-opening team and was further promoted to Director of Sales for complex properties. An alumnus of Institute of Hotel Management in Kolkata, Biswas brings along a diverse experience panning over 15 years during, which he worked with various internationally renowned brands in various capacities.

He started his career as a management trainee in the rooms division in 2005 at the Park Hotel in Delhi and later at The Imperial and The Leela, both in Delhi too. Saptarshi joined Marriott International in 2014, at the JW Marriott Mumbai Sahar, followed by operational assignments at Bengaluru Marriott Whitefield, Westin Chennai as Director of Operations and most recently at Westin Hyderabad as Hotel Manager.

Throughout his tenure, Biswas’work has been recognised and rewarded: He represented India on the coveted APAC Rooms Division Advisory Board to lead key initiatives from 2017 to 2019. That apart, he bagged the Best Arrival Experience Award while at JW Marriott in Asia in 2015 and was also the Lead Trainer for the pre-openings of JW Marriott Singapore, Courtyard by Marriott Bengaluru and Sheraton Grand Chennai.

Samuele Baudoino promoted to executive chef at Rosewood Abu Dhabi

Samuele Baudoino has been promoted to executive chef at Rosewood Abu Dhabi after a successful two-year stint as executive sous chef.

Speaking of his promotion, the Italian said, “I love to travel and properly experience new cultures, and I’ve been fortunate to have worked all over the world during my career, which has definitely added to my flair in the kitchen, although I can never forget my Italian roots.

“I’m extremely happy to have reached this new and important milestone here in Rosewood Abu Dhabi, and I look forward to taking the city’s dining experiences to new heights with my exceptional team.”

Before entering a professional kitchen, Baudoino earned his culinary stripes under the tutelage of chef Sergio Mei, also from Italy. Some of his earliest jobs in hotels were in London, during 2006 where he sous chef for Four Seasons.

Over 22 years, he has jumped between Syria, Bali, Hong Kong, Singapore and the UAE in a range of F&B jobs in hotels. Speaking about his appointment, Rosewood Abu Dhabi said, “With his ‘out of the box’ thinking and continuously strong innovation, in this new role Samuele will continue to spearhead development of Abu Dhabi’s culinary scene with fantastic new food and beverage concepts and enticing menu options across the nine individual Rosewood Abu Dhabi restaurants and lounges.”

Paramount Hotel Dubai welcomes new executive producer of culinary

Paramount Hotel Dubai has rolled out the red carpet for chef Manuel Caicedo, bringing him in as the new executive producer of culinary.

Caicedo will help lead operations at the seven F&B venues found within the glitzy Hollywood-themed hotels. Outlets include a hidden Speakeasy and Californian fine dining restaurant Pacific Groove where the chef will utilize his diverse culinary background to elevate standards and keep the venues popular within the busy Business Bay area.

Caicedo has a post-graduate degree in Cuisine and Kitchen Management from the University Culinary school of Girona, Spain, as well as a Level 4 award in HACCP management. His professional career dates back to 2002 where he was a line cook in Argentina.

Since that point, he has risen through the ranks, dealing with Spanish, Latin American, Mediterranean, and Middle Eastern cuisines across a range of Michelin-Star restaurants.

He moved to Dubai in 2012 as an executive banquet chef for the Ritz-Carlton Hotel Company, a post where he had a hand in generating more than $6.6 million in revenue from banqueting. After several successful years with the group, he moved to the Jumeirah Group, working at the Jumeirah Zabeel Saray.

From 2018 to 2020 he was executive chef at the five-star beachfront hotel, before swapping his apron for one at the new Paramount Hotel Dubai instead.

New F&B director appointed at Fairmont Bab Al Bahr in Abu Dhabi

The Egyptian brings 16 years of know-how to the job, having started out in InterContinental Hotel Abu Dhabi, where he was quickly elevated to banquet operations manager. In 2011 he joined Fairmont Bab al Bahr as banquet operations director, later being promoted to conference services and catering director.

“I’m excited to be part of the team and to continue the ongoing success of this property and to lead the award-winning food and beverage team of Fairmont Bab Al Bahr,” explained Abdulla.

The Abu Dhabi hotel features nine F&B venues, including CuiScene, Café Sushi, Maison Beiruit, Chameleon Terrace, Bridges Bar and two Marco Pierre White venues. In his new capacity, Abdallah will lead them all.

As of last year, the beachfront hotel became home to a second Marco Pierre White restaurant – Marco’s New York Italian. A venue its eponymous creator was confident would be a success from the start.

Commenting on the venue, White said: “Marco’s New York Italian, is all about creating an environment where people can sit and enjoy some great food whatever the occasion and we’ve made sure that the menu and the ambience reflects just that.

“The idea is that the restaurant isn’t just about selling a meal. It’s a great place to share and socialise whether it’s a night out with friends, a family lunch, or somewhere for parents to take children out for a meal,” he added.

Having commenced her career with one of the leading luxury hotel chains of India, Thapliyal brings with her a decade of housekeeping experience. She has ably led a large housekeeping taskforce in her past roles and will take on the mantle to lead the dynamic team of The St. Regis Mumbai.

Thapliyal’s skill and detail to attention over the years garnered through her roles with varied luxury properties has seen her rise through the ranks to her current leadership position. Her most recent role as part of the pre-opening team of one of the largest JW Marriott Hotels, JW Marriott Mumbai Sahar, added many feathers in her cap.

Sarah Moya Joins Anantara Quy Nhon Villas as GM

Taking the helm at Anantara Quy Nhon Villas and sister property Avani Quy Nhon Resort, both in central Vietnam, is Sarah Moya, a well versed international hotelier with more than 25 years’ experience in the hospitality industry. Sarah’s career started in her native Philippines where she climbed the sales and marketing ladder to lead teams for Hyatt both in Manila and then on to Siem Reap in Cambodia.

Sarah’s journey continued at the Bill Bensley-designed Shinta Mani Luang Prabang hotel before joining Anantara in 2018 as General Manager of Anantara Angkor Resort in Cambodia. A passionate traveller with an affinity for mountainous regions, Moya considers her career an integral part of this passion. Pitak Norathepkitti is Appointed GM of Anantara Angkor Resort

Pitak “Chin” Norathepkitti, the Thai-born Master of Arts in Tourism alumnus and former university lecturer, joins Anantara Angkor Resort in Cambodia from Sofitel Luang Prabang and 3 Nagas Luang Prabang, Laos, where he rose through the ranks to become Cluster General Manager. Prior to moving to Anantara Angkor, Chin held various executive management positions in sales and business development at some of the most famous and storied luxury hotels in his hometown of Bangkok.

With a penchant for tourism education, Chin remains active as a part-time university lecturer and programme conductor. Anantara Angkor Resort is an all-suite hotel in Siem Reap, and the closest to the UNESCO World Heritage Site of Angkor Wat. Emanuel Grosch Newly Appointed GM of Anantara Lawana Samui Resort

Emanuel Grosch’s journey with Anantara began in 2019 as Resort Manager of Anantara Riverside Bangkok Resort in the Thai capital, before travelling south to the island haven of Anantara Bophut Samui Resort. Nestled on the quieter north end of Koh Samui’s most famous beach, Emanuel’s new role at Anantara Lawana Samui Resort will utilise his strong operations background and understanding of revenue management.

An international hospitality professional with 15 years’ experience in upscale and luxury hotels and resorts, Emanuel brings with him polished skills and know-how from some of the finest properties around the globe. Having learned the ropes under Capella Group, Emanuel possesses an energetic leadership style that focuses on achieving results, as well as encouraging creativity and vibrant engagement in the workplace.

Stephan Moonen will oversee the award-winning, flagship resort Anantara Peace Haven Tangalle Resort in Sri Lanka in his appointment as General Manager. With an extensive international career spanning almost 30 years, Jesus Juan Arnedo boasts an all-encompassing knowledge of central service commercial launchings and hotel openings. Since joining NH Hotel Group in 2012, Jesus has spent time as Cluster General Manager and Regional Operations Manager for numerous properties across Spain, Mexico and Cuba and is adept at implementing the highest standards for discerning guests and inspiring enthusiasm among his team.
