Andaz Delhi has a new Head Chef- Akshay Bhardwaj. With a culinary experience of more than a decade, Bhardwaj has worked with some of the industry's most well-known names. In July 2008, he began his career in hospitality with ISTA 5 star Luxury Hotels. Over the next few years, he interned at Le Chatelain Hotel in Brussels, Wildflower Hall in Shimla, Hotel Vatel in Nimes, France, and Le Bateau Ivre (a 2 star Michelin Star Restaurant) under celebrity chef Jean Pierre Jacob. As Demi Chef de Partie, he joined Oceania Cruises, an upper-tier cruise line, in 2011. 

In 2012, he moved to India to work as a Chef de Partie at Pullman Hotels, and in April 2013, he relocated to Canada to work in the same capacity at Sawridge Hotels Alberta. He worked in Canada and Denmark for the next three years before returning to India in August 2016 as the Executive Chef for the pre-opening of Whisky Samba in Gurgaon. He was promoted to Corporate Chef at Eastman Colour Restaurants Pvt. Ltd. two years later (La Roca, Aerocity and Unplugged Courtyard in Connaught Place and Gurgaon). His most recent position was as Executive Sous Chef at the ITC Maurya in Delhi.

Four Seasons Hotel Kuwait at Burj Alshaya has brought in Thierry Papillier as executive chef. He has spent the past 12 years with Four Seasons and will be the “culinary custodian” for the property, looking to elevate Kuwaiti dining as a whole.

Papillier joined Four Seasons Hotel Cairo at Nile Plaza as executive sous chef before moving up to executive chef for the group in Mauritius.

He spent two years on the island archipelago before moving to Morocco as the executive chef for Four Seasons Casablanca. He stayed in the country for more than five, also working at Four Seasons in Marrakech.

Now in the Gulf, he said: “I was thrilled to be given the opportunity to relocate to Kuwait because I had heard great things about the dining scene here.

Sunil Sharma joins Holiday Inn Mumbai International Airport as the Director of Food & Beverage. Hailing from Himachal Pradesh, Sunil was brought up in the capital city, Delhi and is a Hospitality Management graduate holding a degree in Economics Honors. Sunil brings with him over a decade of experience in the Hospitality Industry and has worked in multi-national hotel chains like Waldorf Astoria in the UAE, The Torch in Doha, Hilton Hotels in the Middle East and India, The Leela Palace in Chennai and Mumbai. He is also a certified Sake Sommelier and has rich experience in managing Indian, Japanese, Middle Eastern and European aspects of F&B Service. He loves exploring the world of gastronomy and beverages and is an adventure sports enthusiast.  

On joining Holiday Inn Mumbai International Airport, Sunil says; “I am really excited to join the prestigious hotel. The vibe and positivity within the team is something I have never experienced before.” Talking about how Covid has changed the way we look at the hospitality industry, he adds; “Change is the only constant. Hotels have also learnt to adapt with ghost kitchens, focusing more than ever on healthy eating, home deliveries and contactless experiences. We are all learning and evolving from our daily experiences and there is a lot yet to unfold in the new realm of hospitality.”
