Tbilisi has emerged from obscurity to become a world heavyweight culinary destination, yet only a few restaurants offer a high quality fine dining experience. Chef Jaume Puigdengolas, a Barcelona native, earned his Michelin stars in Marbella before creating the F&B concepts for Kerten Hospitality. The Blue Fox, named after an old Georgian cartoon character, is a 72-seat restaurant and the chef’s latest achievement. Riffing off of Tbilisi’s multi-cultural heritage, Chef Jaume’s menu combines western and eastern ideas with a Georgian foundation to create something uniquely Tbilisian. “I respect traditions and work closely with local products and producers,” he says.

 

Khachapuri is one of Georgia’s most iconic dishes. Chef Jaume simply turns the stuffed bread inside out, with beans and marinated onions on top, or marinated salmon, lemon and cucumber, or Sulguni and Imeretian cheese with local truffles. There are several more, which he calls “Pizzettas.” Georgian tomatoes and cucumbers are among the best in the world, which may explain why they are a salad staple on every table in the country. Chef Jaume has playfully tweaked the salad by serving tomato wedges on a pool of lightly spiced cucumber gazpacho. Although clearly not Georgian, Caesar Salads have recently appeared on nearly every menu in the country. The Spanish chef dipped into his roots and turned the salad into a tapas - a chicken croquette stuffed with béchamel and served on a leaf of Romaine. Main dishes include a tribute to Georgian mtsvadi - skewered meat roasted over coals. Here, they include marinated chicken, and the tenderest beef in the country, served with a selection of locally spiced dipping sauces. Some might call it fusion, but The Blue Fox is simply continuing the Tbilisi tradition of innovation.

 

Tbilisi’s legacy is built upon the Great Silk Road where it was an important trading hub, bridging Europe with Asia. This is evident in Tbilisi’s Old Town, where the local mosque is around the corner from the local synagogue, which is next to an Armenian church. An old Zoroastrian temple is above. Nearly a century of communism devastated this heritage, but it is now being rebuilt by individuals and groups like Kerten Hospitality. July 2022, New Delhi: IHG® Hotels & Resorts, one of the world’s leading hotel companies has signed a management agreement with Dahej Hotels & Hospitality Pvt. Ltd a subsidiary of Karmvir Group, for a new hotel – Holiday Inn Express Dahej Bharuch Road in Gujarat. The new-built hotel featuring 120 keys is expected to be operational by the first quarter of 2025. The hotel will not only solidify IHG’s presence in the state of Gujarat but also strengthen the company’s growth in secondary markets, in line with the growing demand for quality branded accommodation in the country.

Vignette Collection hotels prioritise creating and cherishing a sense of place. With this in mind, local design studio, P49 Deesign utilised the story of the Bangkok Tram to enhance the design of the hotel's lobby area. From the 1920's until 1968, the Silom line would pass Ratchadamri Road – just moments from Sindhorn Midtown – before terminating at Pratunam intersection. Dark metal symbolised tram tracks that previously ran by the hotel, and is applied to the front desk at the hotel lobby by P49 Deesign.

Each of its 393 rooms feature large format bathroom amenities from Karl Lagerfeld and modern comforts such as Fritz Hansen’s iconic Drop™ chairs. The Fitness Centre offers panoramic city views, as does the Horizon Pool, which is located on the 18th floor. Works by Fine Art Photographer, Visarute Angkatavanich, whose image of a Siamese fighting fish was launched on the iPhone 6s in 2015, can be found on every floor.

COLOURS OF OBLU brand brings yet another fresh, innovative concept to the Maldives with the launch of JustWok at OBLU SELECT Sangeli. The Contemporary Pan Asian restaurant, included in the resort’s Serenity PlanTM, opened on 4 June 2022.

JustWok serves bountiful shared platters and playful culinary creations for a convivial, family-style dining experience. Large dishes of food replace the individual portions. The concept is that of families feeling at home with the serving and handpicking of the delicious food platters and connecting over shared laughs and chatter. 

Located in One Banyan mini-island, JustWok replaces the resort’s Simply Veg outlet. Crystalline ocean views and swaying palm trees frame the indoor-outdoor restaurant. From delicate cherry blossom patterns on the cutlery to accents of orange and aqua blue hues, there is a pleasing Oriental vibe in the design. 

A carefully curated à la carte menu features family-style platters full of exotic flavors. Aromatic soups, fragrant kimchi, and the daily chef’s special all showcase fresh produce and authentic spices. The steamed section has much-loved Asian favorites, including handmade dim sums filled with Himeji, shitake, and cream, edamame bean dumplings, and classic har gaw with beans and prawns. 

In the main course, guests can tuck into blissful wok-tossed delicacies. Kung pao chicken, mapo tofu, reef fish fillet, and Australian Angus tenderloin served with sides of steamed jasmine rice and braised noodles make for hearty meals.

IHCL debuts in Manali with the signing of a new SeleQtions Hotel

Indian Hotels Company (IHCL), India’s largest hospitality company, today announced that it is stepping into Manali, Himachal Pradesh with the signing of a new SeleQtions hotel. Located at Kullu-Manali Marg, the current Baragarh Resort & Spa will be converted to an IHCL SeleQtions resort post upgradation. The resort has a management contract with the Khullar’s.
