Puran Poli (Maharashtra):

Ingredients:

  • 1 cup chana dal (split Bengal gram) 

  • 1 cup jaggery

  • 1 cup whole wheat flour

  • 1 cup ghee 

  • water for dough

  • cardamom powder as per taste

Method: 

  1. Cook chana dal, mash it, add jaggery and cardamom powder. 

  2. Make a dough with flour, roll it, stuff with the dal mixture, and cook on a griddle with ghee.



Malpua (North India):

Ingredients: 

  • 1 cup flour

  • 1/2 cup milk

  • 1/2 cup sugar

  • 1/4 cup fennel seeds

  • Ghee for frying 

  • Water as required

Method: 

  1. Mix flour, milk, and water to make a thick batter. 

  2. Add sugar and fennel seeds. 

  3. Fry spoonful’s of batter in ghee until golden.




Thandai (North India):

Ingredients: 

  • 1 liter milk

  • 1/2 cup sugar 

  • 1/4 cup almonds 

  • 1/4 cup cashews 

  • 2 tbsp melon seeds 

  • 2 tbsp poppy seeds

  • 1/2 tsp cardamom powder 

  • saffron strands for garnishes 

Method: 

  1. Soak almonds, cashews, melon seeds, and poppy seeds. 

  2. Blend with some milk. 

  3. Boil remaining milk with sugar, add the paste, and simmer. 

  4. Add cardamom powder and saffron.




Pakoras (Punjab):

Ingredients: 

  • 1 cup chickpea flour 

  • 1 potato (sliced) 

  • 1 onion (sliced) 

  • 1/2 cup spinach (chopped) 

  • 1/2 tsp carom seeds 

  • Salt as required

  • oil for frying.

Method: 

  1. Mix chickpea flour, carom seeds, and salt. 

  2. Add water to make a thick batter. 

  3. Dip potato, onion, and spinach in the batter and fry until golden.


Bhang Ki Chutney (Uttar Pradesh):

Ingredients: 

  • 1/2 cup fresh mint leaves 

  • 1/2 cup fresh coriander leaves

  • 2-3 green chilies 

  • 1/2 tsp cumin seeds 

  • 1/2 tsp black salt

  • 2-3 tbsp bhang seeds 

  • Water as required 

Method: 

  1. Grind mint leaves, coriander leaves, green chilies, cumin seeds, and black salt with some water. 

  2. Add bhang seeds and grind again.

Gujiya (North India):

Ingredients: 

  • 2 cups all-purpose flour 

  • 1/2 cup ghee 

  • 1 cup khoya 

  • 1/2 cup powdered sugar 

  • 2 tbsp chopped nuts 

  • oil for frying.

Method: 

  1. Mix flour and ghee to make a dough. 

  2. Roll out into small circles. 

  3. Fill with a mixture of khoya, sugar, and nuts. 

  4. Fold and seal edges. 

  5. Fry until golden.

Novotel unveils its new flagship hotel at Hamburg Central Station

Accor to open three hotels in Germany's second largest city this year

Accor, a world leading hospitality group, is adding to its presence in Germany with the opening of Novotel Hamburg Central Station. Set to open its doors to guests on 25th March 2024, the hotel features 227 rooms and suites, with a prime location next to the city’s main railway station and shopping street of Mönckebergstrasse. Accor’s development ambitions for the second largest city in Germany

Accor has ambitious plans for 2024, with three hotels scheduled to open in Hamburg, offering a combined capacity of 793 rooms. In 2024, Hyatt’s brand expansion in India and Southwest Asia will continue with its Hyatt Regency, Hyatt Place, and Hyatt Centric brands. To expand the presence of its luxury and lifestyle brands in India, Hyatt also marked the strategic entry of the JdV by Hyatt brand in India with the official opening of Ronil Goa recently. The JdV by Hyatt brand is the ninth Hyatt brand to be introduced in the country reinstating Hyatt’s commitment to growing its footprint in India

Raffles Hotel Le Royal Awarded Prestigious 4-Star Rating from Forbes Travel Guide

Raffles Hotel Le Royal, the luxury heritage hotel in the Cambodian capital, has earned a prestigious Four-Star rating from Forbes Travel Guide, whose designations are among the most highly sought after in the global luxury hospitality industry.

“Raffles Hotel Le Royal has been Phnom Penh’s defining word in opulence ever since its doors first swung open in 1929,” the guide’s inspectors wrote in their review of the hotel.

“It's still the go-to for Cambodian high society looking to host wedding banquets and celebratory balls, while the colonial wood-paneled Elephant Bar is a must for post-event drinks. This is also the best place in Phnom Penh to enjoy afternoon tea; the refined airs and immaculately attired staff practically transport you back in time,” it added.

Raffles Hotel Le Royal was one of only two hotels in Phnom Penh to be recognized by Forbes Travel Guide last month. The Four-Star rating denotes “exceptional properties, offering high levels of service and quality of facility to match.” Forbes Travel Guide, originally launched in 1958 (then as Mobil Travel Guide), is the oldest travel guide in the United States and the creator of the original Five-Star rating system for hotels.

The guide’s inspectors further praised Raffles Hotel Le Royal’s timeless elegance, saying, “While all accommodations [at the hotel] offer Old World luxury, the Landmark Rooms serve as a beautiful time capsule. The high-ceilinged rooms appear much as they did in 1929, including their enticing claw-foot baths.”

They also gave their highest approval to Restaurant Le Royal, the hotel’s signature Khmer fine-dining venue, calling it “one of the best meals in town.”

Raffles Hotel Le Royal features 175 rooms and suites that underwent a full refurbishment as part of a meticulous one-year restoration project in 2019.

IHCL Announces A New Vivanta Hotel In Ujjain, Madhya Pradesh

Indian Hotels Company (IHCL), India’s largest hospitality company, today announced the signing of a new Vivanta hotel in Madhya Pradesh’s ancient pilgrim city of Ujjain. The hotel is a Greenfield project.

During this ritual, rice is cooked atop the heads of three Gades, which are humanoid representations of divinity on earth. In a remarkable display of devotion, three villagers from Canacona taluka's Gaondongorim voluntarily offer their heads as makeshift stoves for cooking rice over a wood fire.

  • 1 teaspoon mustard seeds

  • 2 tablespoons oil

Instructions:

  1. Heat oil in a pan and add mustard seeds. Once they splutter, add curry leaves and chopped onions. Saute until onions turn golden brown.

  2. Add ginger-garlic paste and sauté for a minute.

  3. Add chopped tomatoes and cook until they turn mushy.

  4. Add turmeric powder, coriander powder, cumin powder, chili powder, and salt. Mix well.
