Grand Hyatt Mumbai Unveils a Masterful Rendition of Italian Elegance with the Relaunch of Celini

Mumbai, February 2025: Grand Hyatt Mumbai announces the relaunch of Celini, a restaurant that celebrates classic Italian cuisine. Over the past two decades, Grand Hyatt Mumbai has continued to be a canvas for innovation and excellence and with the relaunch of Celini, the hotel will further raise bar in the luxury dining space. The restaurant brings Italy’s rich culinary heritage that is infused with stories, celebrations and classic family recipes making for a homecoming to Italy.

As a part of the relaunch, Chef Alessio Banchero, an Italian culinary virtuoso has introduced a new concept Meglio in compangnia ~ Better shared in Company - A distinctive experience where certain dishes are finished by the Chef on the table making for an interactive display of culinary excellence with guests. The newly upgraded restaurant looks forward to providing an easy-going setting where fresh food can be shared, conversations are interactive and any special occasion is transformed into an extraordinary celebration.

The all-new menu features Carre di Agnello alle Erbe which is carved on trolley live in front of guests, Pollo Arrosto in tegame di Argilla that is presented and served in a Clay Pot, Polpette di Pollo della Nonna, Risotto alla Pescatora, Tortellini in Brodo, Gnocchi alla Sorrentina, Trofie Salsiccia Funghi, finocchietto e crema alla zucca, Stinco di Agnello alla Milanese amongst other classics that are signature to Celini which include Taglierini all’ Aragosta, Ravioli di ricotta e spinaci, Insalata di Burrata, Tartare di tonno, Agnello Tonnato, Branzino all Acqua Pazza and more.

Evolving to offer a celestial like dining ambiance, Celini retains its authentic Italian roots while infusing global influences into its techniques, ingredients, and presentation. This culinary fusion pairs with an exquisite collection of classic wines inspired by the rich tapestry of Italian culture.

Grand Hyatt Mumbai Hotel and Residences, has announced the appointment of Srini Raman as Director Food and Beverage. Raman started his career 20 years ago as a Food and Beverage Assistant with the Oberoi Group. Over the years he had worked in different capacities with One & Only and the Shangri La Group before joining Hyatt in 2008 at the Grand Hyatt Muscat, Oman.

His journey of over 10 years with Hyatt has spanned multiple continents in diverse roles and he also worked at the Park Hyatt Goa and the Hyatt Regency Riyadh. His last assignment before joining Grand Hyatt Mumbai Hotel and Residences was with The Ritz-Carlton Bangalore as Director of Food and Beverage.

Speaking on his appointment Raman said, “I am honored to be joining this iconic property and happy to be back with the Hyatt Family. Inquisitiveness to learn and passion towards hotels is the only motivation someone requires to excel.”

With 20 plus years of enriching experience in the hospitality industry, his endeavor is to utilize his immense food and beverage experience in strengthening the Iconic Grand Hyatt Mumbai Hotel and Residences Food and Beverage strategies, guest experiences whilst driving operational efficiency.

Grand Hyatt Mumbai Hotel and Residences recently appoints Srini Raman as the Food and Beverage Director. He had started his career about 20 years ago as a Food and Beverage Assistant with the Oberoi Group. As time passed, he got the opportunity to work with different companies in different capacities. Earlier, he had worked with One & Only and the Shangri La Group before joining Hyatt in 2008 at the Grand Hyatt Muscat, Oman.

Commenting on his appointment, Srini Raman said, “I am super excited and honoured to be joining this iconic property and happy to be back with the Hyatt Family. Inquisitiveness to learn and passion towards hotels is the only motivation someone requires to excel.”
