Pedro Samper has joined Four Seasons Resort Dubai at Jumeirah Beach as executive chef. His wealth of knowledge and skill stems from 20 years of experience, working in Michelin star kitchens alongside some of the world’s most decorated chefs. Samper’s role sees him lead the resort’s culinary team, overseeing venues including Sea Fu, Mercury Lounge and Shai Salon.

Samper said: “My love for exploring culture carried me to Dubai, and my passion for pursuing excellence brought me to Four Seasons. Originally from San Sebastian, Spain, Samper spent his formative years in a community where chefs are as revered as doctors and engineers. Although he exhibited an early fascination with food, he decided to pursue a degree in environmental chemistry to expand the breadth of his interests and build an educational foundation. Despite the prospect of a promising career in science, after graduating, he set off on his childhood dream of exploring the diverse cultures and flavours of the world.

Counting passport stamps as badges of honour, Samper has since discovered the colourful spices of India, the meticulous work ethic of Japanese chefs, the complexity of Asian cuisine and the history-infused cookery of Europe. His impressive resume includes stints at Martin Berasategui (Spain, three Michelin stars), Quique Dacosta (Spain, three Michelin stars), Ryugin (Japan, three Michelin stars) and Zurriola (Japan, two Michelin stars).

Samper achieved major successes in Spain as executive chef at Paradores de Turismo hotels and resorts, a brand centred on Spanish heritage and history. The role saw Samper dream up feasts fit for a king, with frequent banquets held for the Spanish royal family. Samper then continued his international forays, thriving in leadership roles across Malaysia, Hong Kong and The Maldives.

The chef counts his depth and profound understanding of cooking, as major assets. His philosophy on cuisine can be broken down into three main pillars: Seasonality, legacy and mastery.

Sahil Arora has joined as Front Office Manager at Doubletree by Hilton Jaipur. In 2013, he got his big break when he joined Hyatt as a Guest Service Officer.

Marriott Al Jaddaf has brought in a top F&B manager who has already made his mark in the group. Anwer Abbas has climbed the ladder in Marriott for years, now helping lead food and beverage at Marriott Al Jaddaf.

Abbas has over 12 years of experience in the industry and started his career in the UK as a shift leader at Marriott Forest of Arden Hotel & Country Club. He then headed to the UAE to join JW Marriott Dubai way back in 2014 as restaurant supervisor/acting manager.

Within a short period of time, Abbas moved to the next level of his career when he moved to Courtyard by Marriott WTC Abu Dhabi as F&B assistant manager. In January 2017, he challenged himself to develop and took bigger responsibilities in a bigger property, the Marriott Hotel Al Forsan Abu Dhabi, a sports resort hotel. Initially hired as assistant manager (pre-opening team) and just after over a year got promoted to multi-outlet manager and handled seven outlets including banquet facilities. He played a huge part in the numerous achievements obtained by the hotel in terms of F&B service both operational and financial.

Before coming back to Dubai, Abbas was the F&B service manager at Kigali Marriott, in Kigali Rwanda. He managed five restaurants including bars, lounges and conference and meeting spaces.

UAE-headquartered hospitality company TIME Hotels has announced five new senior appointments to support the company in its expansion plans across MENA region.

Toufic Tamim joins as vice president – commercial. With over three decades of experience in the hospitality sector, Tamim is an industry powerhouse who will be leading TIME Hotels’ sales, marketing, e-commerce and revenue department. Prior to joining the team, he was the corporate commercial director of Dur Hospitality in Saudi Arabia where he handled the overall sales operations, marketing, communication, revenue management, distribution and digital strategy for nine operating hotels in Jeddah, Tabuk and Riyadh. He served 16 years of his career in Movenpick Hotels & Resort and also held senior positions with other renowned hospitality chains, including Rotana Hotels & Resorts and Hilton International.

Ismail Makda was appointed as vice president of finance. He is a dynamic self-starter and brings over 30 years of hands-on experience in the hospitality industry to TIME Hotels, with a rich mix of financial management and control, operational insight, business turnarounds, internal/external process re-engineering and systems implementation. Having held unit, regional and corporate finance roles, Ismail has a broad understanding and a strong track record of driving value at all levels in the hospitality industry. A commercially focused seasoned hotelier, he previously worked with hospitality chains including Jumeirah Group (Dubai HQ), Prima Hotels (UK), Shire Hotels (UK), Moat Houses (UK). He has a versatile character and is renowned for being a troubleshooter with a history of recalibrating a facility management operation, delivering a shared service center, leading a corporate pre- and post-opening function, and project managing key priorities in an effective manner.

Mary Joe Estiphan is Time Hotels’ new business development manager. She joins the team from the U.S. and has eight years of professional experience in the hospitality industry. Before relocating to the United States, she was with Lancaster Eden Bay Hotel in Lebanon where she was the sales manager handling the leisure market. She also worked as a sales representative in Four Points by Sheraton – Marriott Lebanon where she handled the leisure and corporate market. With her experience in the different markets, Estiphan has gained knowledge in researching organizations and individuals to find new opportunities and contacting potential owners and owner representatives for future business opportunities.

Ghada Ziadeh is the new loyalty program manager. She has been in the hospitality industry for over 17 years and has previously launched three different loyalty and rewards programs with Mövenpick Hotels & Resorts. Her areas of expertise are Marketing, loyalty programs, project management, corporate identity, brand management, training and social media. With her vast experience in this field, she will join to reshape TIME Rewards program and integrate a new CRM Platform.

Rita Giendy was appointed as hotel manager at TIME Asma Hotel. Giendy will be leading TIME Asma Hotel, a four-star hotel in the shopping district of Al Barsha. She has been in the hospitality industry for the last 22 years and has gained knowledge in the formulation of internal controls and policies to comply with our established best practices. Alan Snyman is the new executive chef for Rotana Hotels at the Capital Centre Complex in Abu Dhabi. Snyman will leverage almost three decades of culinary experience at Pearl Rotana Capital Centre, Centro Capital Centre and Capital Centre Arjaan.

Complex general manager Karim Nahas said: “We are happy to have chef Alan as part of the Rotana Capital Centre Complex family, with his extensive experience and culinary passion, he will surely add a great flair to the various food and beverage outlets at the complex, including the award-winning signature outlets The Warehouse Wine & Tapas Bar and Dino’s Bistro Italiano.

The Ritz-Carlton Doha has appointed two new chefs. Italian Giuseppe Sparagna takes on the role of head chef at STK Doha and Lambert Chiang is head chef at B-Lounge.

The hotel says both chefs share a passion for “high-quality ingredients and inventive artistry”.

STK Doha offers choice meats and rare cuts including Japanese Wagyu, USDA prime fillet, and Australian tomahawk, as well as meat-free and plant-based dishes, fresh seafood, and desserts.

Accor has appointed Philip Mahoney as Vice President of Food & Beverage for India, Middle East, Africa and Turkey, with the main responsibility to drive the group’s strategy in the region: making food and drink the heart and soul of each of its hotels.

Throughout his 30-year career, Philip has managed hotels in the UK, Croatia and Mauritius for Malmaison, Lonrho, De Vere Deluxe, Radisson Blu and Regent Hotels, before moving into a regional responsibility for Radisson Blu and Hotel Missoni in the UK and Ireland. He then became Vice President Food & Drink for the Radisson Hotel Group for Europe, Middle East and Africa, with an overseeing role for the US and Asia Pacific, based in Brussels, Belgium, a position he held for 6 years.

His last role was Chief Operating Officer for Riverstone, a Goldman Sachs portfolio company developing luxury apartments and hospitality experiences in London, UK, before moving to Dubai to take on his current post.

Appointment | Grand Hyatt Amman brings in regional expert as DOSM

The Grand Hyatt Amman in Jordan has brought in Zaid Talhami, a sales and marketing professional who has held directorial roles across hotels in the region. He is now the director of sales and marketing at Grand Hyatt Amman.

“With his luxury experience, he will be a great asset to drive business opportunities and lead the team to achieve their targets and will bring an unparalleled combination of sales and marketing expertise together with a natural ability to recruit, motivate and nurture a dynamic team,” said Grand Hyatt Amman in a statement.

Talhami has 23 years of hotel experience, much of which has been spent within the Jordanian capital. He began as a management trainee for Crowne Plaza Amman, moving to Sheraton Amman Al Nabil Hotel as group sales coordinator. Staying there for four years, he went on to Qatar to work with Four Seasons as a reservation sales agent, before returning to Sheraton in Amman.

Here he would continue to climb the ladder, moving from sales executive, to sales manager, to senior sales manager, and finally assistant DOSM in a span of just under seven years. He then went back to Qatar to become DOSM for the Grand Heritage Doha Hotel and Spa, later joining Warwick Hotels in Doha in the same role.

From 2016 to 2020, he worked with Fairmont Amman as DOSM, with his most recent role being with voco Doha West Bay Suites as DOSM.

Rayan Aranha has been appointed as the General Manager for Novotel Chennai OMR, ibis
Chennai OMR and Novotel Chennai SIPCOT.

An industry veteran, Rayan has over two decades of hospitality experience in Sales, Marketing, Distribution and Operations.

Rayan is currently in his 10th year at Accor India, where he started as the Director of Sales and Marketing at Grand Mercure Bengaluru and later moved to various hotels such ibis Mumbai Airport, Pullman and Novotel New Delhi and Grand Mercure Mysuru as head of operations.

His most recent assignment was with Grand Mercure Bengaluru as the General Manager.
Rayan Aranha holds a bachelor’s degree in Journalism and is an alumni of SP Jain and IIMBengaluru.

He was also part of AccorHotels’ prestigious International Hospitality Management Program (IHMP), run by Academie Accor Singapore. He was awarded the General Manager of the year for Accor India in 2019.

Rayan likes to unwind in his home kitchen, creating delicacies for his friends and family. He
is also an avid traveller who is in constant search of unique culinary experiences.

Appointment | Anuj Chaudhry joins Grand Mercure Bangalore as its general manager

Chaudhry has a career spanning over 16 years in hospitality management and business leadership. He is a seasoned professional who has worked across markets in Hyderabad, Bangalore, Kolkata and Delhi NCR. Together with exceptional leadership skills, a comprehensive understanding of the business and an innovative mindset, Chaudhry will lead the hotel’s overall performance and growth.

He began his career with the Taj Krishna in Hyderabad, and later joined the Accor India team at its flagship hotel Novotel Hyderabad Convention Center and Hyderabad International Convention Center as an assistant manager - front office. At Accor, he took charge of various leadership roles in the rooms division and overall hotel operations in Bengaluru, Kolkata and Delhi. His most recent assignment was at ibis Gurgaon Golf Course Road as a general manager.

Chaudhry is a hospitality graduate from IHM Aurangabad, and also an alumni of ‘GM Pass’ 2012, Accor International’s career development programme for future general managers. Over the years, he has been the recipient of several awards and recognition, which includes the ‘General Manager of the Year’ Accor South Asia in 2018 He is also Accor India’s country champion for RiiSE, Accor International’s network in support of gender equality, diversity and inclusivity.

Novotel Hyderabad Convention Centre (NHCC) & Hyderabad International Convention Centre (HICC): Mr. Anand Prakash Ravi, Food and Beverage Manager at Novotel Hyderabad Convention Centre and Hyderabad International Convention Centre has been elevated as the Director of Food and Beverage of the complex. Anand has been associated with Accor since 2013 and started his career at Accor with NHCC & HICC. His influential mastery at discharging services in Food and Beverage section has been widely applauded.

Anand has a proven track record of 18 years of rich & extensive experience managing restaurant, convention & banquet, hotel bar and lounge Food &Beverage (F&B) Operations in National & International hotel brands like Accor, Marriott and the ITC.

He is an expert at planning as well as implementing the quality parameters in F&B service in line with the national and international guidelines to improve service performance. He is proficient in managing menu planning, new food concept and theme-based cuisines, health & dietary preferences. He is a creative & open-minded person with the knack for innovation in the F&B space.
