The 14th India International Hotel, Travel & Tourism Research Conference commenced on March 6, 2024, at the BCIHMCT in New Delhi, focusing on the pivotal theme, "Tourism & Hospitality: Climate Change, Geo-political Conflicts & Crisis Management." The first day unfolded with a series of engaging sessions. Against the backdrop of a rapidly changing world, this conference serves as a crucial platform for exploring the intersection of climate change, geo-political conflicts, and effective crisis management within the hospitality and tourism sector.

The event began with the felicitation of esteemed guests and the traditional lamp lighting ceremony, followed by a soulful Ganesh Vandana. Prof. R.K. Bhandari, President of IIHTTRC 2024 and Director of BCIHMCT, welcomed the distinguished guests, researchers and the audience.

The chief guest, Mr. Rajan Bahadur, CEO of Tourism & Hospitality Skill Council of India, addressed the gathering, highlighting the crucial role of hospitality sector in the revival of economy after the Covid 19 era. He emphasized on the necessity for professionals in the hospitality and tourism sector to remain agile, alert, and aware in the rapidly evolving landscape. He stressed on the importance of swiftly adapting to changing circumstances to ensure the continued delivery of quality service to customers. He emphasized the importance of flexibility, noting that success in the post-COVID era would require a willingness to embrace change and innovate.

Dr. Kevser Cinar, President of EATSA, (Euro Asia Tourism Studies Association), Associate Professor – Necmettin Erbakan University, Turkiye delivered a warm address, emphasizing the global significance of the conference. She shared her thoughts about the Tourism & World Peace.

Distinguished personalities in the industry graced the occasion with special addresses. Mr. Niranjan Khatri, Founder at iSambhav and Former General Manager of Environment Initiatives at ITC Hotels, added his perspectives on sustainability. He provided us with a comprehensive view of the issues that are currently affecting us, such as global warming, drought, and a lack of access to clean water. In his address, he also provides a quick overview of the measures employed in hotels to promote sustainability and reduce waste.

The Keynote Speech by Prof. Maharaj V. Reddy, Associate Dean (Research & Knowledge Exchange), Faculty of Art, Business & Social Science, University of Wolverhampton, United Kingdom on “Building Resilience in Tourism & Hospitality: A Critical Review of Disaster and Crisis Management Research “ in which he talked about his first Project in Andaman & Nicobar Island having cultural Heritage category Biosphere conservation point. As principal investigator and co-investigator, Vijay’s inspiring projects that fit under the broader theme of sustainable development were commissioned by a range of national and international organizations, including UNESCO.

Prof. Dr Jan Mosedale, Director of Studies Master Tourism & Change & Head of Research, Institute for Tourism and Leisure Research ITF, University of Applied Sciences of the Grisons, Switzerland expressed his thoughts on “Climate Change impacts on Swiss Tourism and Hospitality” He began by outlining how climate change is affecting Swiss tourism by generating glacier melt, unexpected weather patterns, and changes in water supply, all of which have an influence on skiing, winter sports, and outdoor activities such as swimming and boating. He also stated that the drop in these activities is producing a problem in the country's tourism industry and will eventually have an impact on the economy, particularly in mountain areas. He went on to discuss the issues that farmers confront as a result of climate change.

At the end of the day, Dr. Vernika Agarwal, Associate Professor, and Dr. Pooja Chaturvedi Sharma, Assistant Professor, Apeejay School of Management, New Delhi, conducted a Research Workshop on "Writing a Research Paper/Project for Undergraduate Students". The main goal of this workshop was to familiarize participants with various research approaches, provide practical insight into conducting effective research, and discuss research issues and solutions. It brought together academics, scholars, and students from various academic backgrounds to exchange their knowledge, experiences, and best practices in research.

The inaugural day of the conference set a promising tone, initiating knowledge exchange and collaboration among experts in the field of tourism and hospitality.

Recipes using Organic Lentils 

1. Masoor Dal Pakoda (Red Lentil Fritters)

Ingredients:

  • 1 cup organic red lentils (masoor dal), soaked for 2-3 hours

  • 1 onion, finely chopped

  • 2 green chilies, finely chopped

  • 2 tablespoons rice flour

  • 1 teaspoon cumin seeds

  • 1/2 teaspoon turmeric powder

  • Salt to taste

  • Oil for frying

  Method:

  1. Drain the soaked lentils and blend them to a coarse paste without adding water.

  2. Transfer the paste to a bowl and add chopped onion, green chilies, rice flour, cumin seeds, turmeric powder, and salt. Mix well.

  3. Heat oil in a deep pan. Drop spoonful of the lentil mixture into the hot oil and fry until golden brown and crispy.

  4. Remove the pakodas from the oil and drain on paper towels. Serve hot with chutney or sauce.

2. Dal Makhani (Creamy Lentil Curry)

Ingredients:

  • 1 cup organic black lentils (whole urad dal), soaked overnight

  • 1/4 cup organic red kidney beans (rajma), soaked overnight

  • 1 onion, finely chopped

  • 2 tomatoes, pureed

  • 2 tablespoons ginger-garlic paste

  • 1/2 cup cream

  • 1 teaspoon cumin seeds

  • 1 teaspoon garam masala

  • Salt to taste

  • 2 tablespoons ghee

 Method:

  1. Pressure cook the soaked lentils and kidney beans until soft.

  2. Heat ghee in a pan and add cumin seeds. When they splutter, add chopped onion and sauté until golden brown.

  3. Add ginger-garlic paste and sauté for another minute. Add tomato puree, garam masala, and salt. Cook until the oil separates.

  4. Add the cooked lentils and kidney beans along with some water. Simmer for 15-20 minutes.

  5. Add cream and simmer for another 5 minutes. Serve hot with rice or naan.

3. Chana Dal Fry (Split Chickpea Curry)

Ingredients:

  • 1 cup organic split chickpeas (chana dal), soaked for 2-3 hours

  • 1 onion, finely chopped

  • 2 tomatoes, chopped

  • 1 teaspoon ginger-garlic paste

  • 1 teaspoon turmeric powder

  • 1 teaspoon cumin powder

  • 1 teaspoon coriander powder

  • 1/2 teaspoon red chili powder

  • Salt to taste

  • Fresh coriander leaves for garnish

  • 2 tablespoons ghee

 Method:

  1. Pressure cook the soaked split chickpeas until soft.

  2. Heat ghee in a pan and add chopped onion. Sauté until golden brown.

  3. Add ginger-garlic paste and sauté for another minute. Add chopped tomatoes and cook until soft.

  4. Add turmeric powder, cumin powder, coriander powder, red chili powder, and salt. Cook for a few minutes.

  5. Add the cooked split chickpeas along with some water. Simmer for 10-15 minutes. Garnish with fresh coriander leaves and serve hot with rice or roti.

4. Lentil and Vegetable Salad

Ingredients:

  • 1/2 cup organic green lentils (moong dal), cooked

  • 1 cucumber, chopped

  • 1 carrot, grated

  • 1 bell pepper, chopped

  • 1 tomato, chopped

  • 1/2 onion, finely chopped

  • Juice of 1 lemon

  • 2 tablespoons olive oil

  • Salt and pepper to taste

  • Fresh coriander leaves for garnish

Method:

  1. In a large bowl, combine cooked lentils, chopped cucumber, grated carrot, chopped bell pepper, chopped tomato, and finely chopped onion.

Kanyakumari-Leh: Chefs to ride again for our community

MARCH, 2024, MAPUSA: It’s on again, this time along the length of India, right down the middle. In this second edition of Chefs Ride, chefs both Indian and international, will ride their motorcycles from India’s Southern tip to its Northern-most city in their much needed effort to spread the awareness of International Chefs Day (20th October) and its message of culinary goodwill.

The group ride will start on 15th August in Thiruvananthapuram before heading towards Kanyakumari 90 kms away, then follow NH 44 all the way North to Srinagar and onwards to Leh. This route travels through India’s centre and will take in at least 18 major cities enroute where large scale events with the local hospitality communities are planned. Chefs Ride 2024 is expected to conclude on 30th September.

This is the second edition of Chefs Ride. In 2023, the route was along India’s Western Coast, commencing in Thiruvananthapuram on 30th August and concluding in Ahmedabad on 26th September. This route took in eight towns. Detailed info of last year's ride is available here:

“We are riding to raise awareness of Chefs Day among the larger hospitality industry because this important day belongs to everyone in a professional kitchen, irrespective of its size. The industry is responding well to this initiative with support coming in from hotel groups, hospitality institutes, chef associations and food companies ready to contribute resources,” said Alan DMello, founder, X Events Hospitality, which is organising the #chefsride.

Over the month-long ride this in 2024, the motorcycle group is expected to stop in Thiruvananthapuram, Kanyakumari, Madurai, Bengaluru, Hyderabad, Nagpur, Raipur, Nagpur, Bhopal, Gwalior, Agra, Jaipur, Gurugram, Delhi, Chandigarh, Jammu, Srinagar and Leh.

“We are expecting over 70 chefs and culinary students to ride with us. Different groups will join us at various points on the 6000 km ride. We have an open invitation to all professional chefs to join us on this ride as our guests, most expenses paid by us,” said DMello.

20th October is International Chefs Day. A special website (chefsride.in) provides all the details of the ride, its goals and partners.  We encourage professional cooks and their establishments everywhere to celebrate their day with their teams + local communities. This has been celebrated from 2004 onwards in 100+ countries. Since 2016, with our support, the initiative in India has grown from ~400 chefs to 50,000+. We stayed restrained during the pandemic’s two years, so with everyone’s help, this year, we aim to cross the 75,000+ mark. Our goal is to make Chefs Day a default celebration in India by 2030.
