Indian Snacking Reimagined: Discovering Emerging Trends and Consumer Preference

As they say, there are those who live to eat and those who eat to live. Irrespective of this, for us Indians, snacking has been an activity that culminates in satiating both body and mind. On top of that, with India being the land of rich culinary heritage, the Indian snack industry has undergone several significant modifications over the years to adapt to changing eating habits.

In recent times, India’s snack consumption patterns have witnessed a considerable change in terms of social, cultural, and economic dynamics. The consumers’ relationship with their snacks has become deeper and more meaningful. New trends and ways are shaping this dynamic market as customers continue to look for convenience and variety in their snacking options. Keeping this in mind, let us further explore the key trends in the market and changing consumer patterns.

New Trends Shaping the Indian Snacks Market

The Indian snack market is critical to the country’s culinary market, encompassing diverse flavours, ingredients, and textures. According to statistics released by the IMARC Group, the delectable India snacks market size achieved INR 42,694.9 crore in 2023. Looking ahead, the market is estimated to reach INR 95,521.8 crore by 2032, showing a growth rate of 9.08% during 2024-2032. However, with the changing consumer lifestyle and urbanisation, the industry is undergoing metamorphosis. With that, the evolving snacking culture and emerging trends are poised to revamp the nuances of this savoury ecosystem.

 Increasing Demand for Premium Snacks

From artisanal baked goods to exotic chip flavours, the Indian snack market is witnessing a considerable shift. In recent times, consumers are opting for premium products. This trend has stirred the innovation for high-quality and gourmet snacks containing top-notch ingredients and premium packaging. For instance, many snacking brands have introduced their premium and gourmet range, including ice creams and well-known snack brands. Other examples include ready-to-eat gourmet meals and foreign-packaged snack items such as ramen, sushi, etc. The newfound exposure to international flavours is the catalyst responsible for this change.

Flavour Fusion

In the evolving dynamics of the Indian snack market, an interesting trend is rising: the fusion of traditional flavours with international ingredients. With this, the manufacturers are experimenting with exotic ingredients from all around the world with the hopes of turning them into a beloved local snack item. As a result, the existing market is plagued with an abundance of delightful novelty snacks. For instance, there are plenty of brands that sell snacks infused with international flavours such as salsa, American cheese, and Manchurian. Barbeque chips, Chilli Momos, Gulab Jamun cheesecake, etc, are some examples of fusion-flavoured food items available in the market.

E-commerce and Direct-to-Consumer (D2C)

The introduction of e-commerce, quick commerce, and direct-to-consumer models is revolutionising the Indian snack market environment furthermore. According to the India Brand Equity Foundation, the Gross Merchandise Value (GMV) of e-commerce has reached INR 6,000 crore, increasing at an annual growth of 22%. On the other hand, the quick commerce sector currently stands at a value of INR 3369 crore, growing at a CAGR of 24.33%. This massive boost is due to the fact that e-commerce platforms allow brands to improve their visibility and provide consumers with a smooth online shopping experience. On the contrary, D2C models offer brands an opportunity to connect with their consumers and accumulate valuable feedback.

Building a Snacking Narrative

Modern consumers look for more than just a product. They look for a story behind their food products. While keeping this in mind, the brands that display the origin of their ingredients, the artistry in their product making, and their dedication to social responsibility are captivating consumers’ attention. For example, a ketchup company has used this approach in their marketing strategy. With this, they have built a narrative of how they procure fresh tomatoes from farmers to make their products.

A Preference for Savoury Snacks

According to a recent survey conducted by Farmley, 68% of consumers prefer savoury snacks to sweet snacks, 44% seek spicy flavours such as peri-peri, and 38% have a preference for classics like black pepper. According to researchers, black pepper holds significant value in the eyes of consumers as it provides a source of warmth and has a specific nostalgic charm associated with it. It is made for the people who seek comfort and tradition in their food products.

Market Diversification

The post-pandemic era has led to changes in every possible aspect of our lives, including eating habits. With this, products such as flavoured makhane, ragi, or oats-based products, and innovative flavours of popcorns have made their indelible mark in the industry. Products such as Desi Veggie Noodles, Masala-flavoured oats, and Ragi Bites Choco sticks are currently trending in the market.

What’s Next for the Snacking Sector?

The transforming ecosystem of snacking in India depicts an interplay of evolving consumer patterns and advancements in technology. As traditional Indian snacks make room for more innovative creations, manufacturers are coming up with more personalised and regional snacking specialties to cater to diverse tastes. As a result, this revolution offers promising prospects for both customers seeking new culinary experiences and the snack industry to meet changing demands.

Banyan Tree Samui Scoops 3 Major Awards in 1 Week

There was a celebratory mood recently at Banyan Tree Samui, a luxury beachfront resort in southern Thailand, after the hotel was recognised with three independent international awards in the space of one week.

The French-based MiICHELIN Guide, famed for its accreditation of “stars” to the most exquisite restaurants, has for the first time introduced a ranking system of “keys” to acclaim the most outstanding hotels in the world. The 2024 MICHELIN Guide hotel selection in Thailand included a total of eight Three-Key hotels (its highest decoration), 19 Two-Key hotels, and 31 One Key hotels. Each hotel had been anonymously visited and assessed by MICHELIN inspectors.

Banyan Tree Samui, and its sister resort Banyan Tree Krabi on Thailand’s western Andaman Sea coast, were both recognised by the new MICHELIN Guide with two “keys”.

“These [all MICHELIN’s recommended hotels and resorts] are places that significantly add to your experience as a traveller” read the MICHELIN Guide announcement on September 24, “each vetted and judged excellent in five categories: architecture and interior design; quality and consistency of service; overall personality and character; value for the price; and a significant contribution to the guest experience in a particular setting.”

No sooner had the champagne settled when, on October 1, the Condé Nast Traveler Readers’ Choice Awards 2024 were announced. The placement marked a jump up the rankings for Banyan Tree Samui, which finished 5th in 2023, while Banyan Tree Krabi had come in 4th in the Top Resorts in Thailand awards.

In between those announcements, Area General Area General Manager Remko Kroesen was on hand in Bangkok to receive an accolade on 26 September 2024 when he was presented with the “Best Luxury Hotel - Koh Samui” prize at the 33rd Annual TTG Travel Awards 2024 Ceremony & Gala Dinner

Meliá Hotels Limit Food Waste With AI

In recent months two upscale resorts, Meliá Koh Samui in Thailand and Meliá Ho Tram in Vietnam, have taken huge strides in their food waste reduction with the introduction of AI technology. The new food management system from Lumitics makes sure the resorts are limiting leftovers without any erosion on the high level of gastronomy the Spanish hotel group has become known for.

Meliá Koh Samui, a beachfront resort on one of Thailand’s most popular islands, implemented the Lumitics Insight system in June 2024, encouraged by its own commitment to sustainability.

With the help of sensors and computer programs the culinary team has been able to track all food waste created by their F&B operations. From that baseline, adjustments were made and they have now seen a 40% reduction in leftovers. The team is now monitoring its buffet and making adjustments according to data. For example, when the guest base is heavily European, the hotel lightens the Asian dishes in the buffet. Where possible, repurposing food has also been an important part of their efforts.

Along Vietnam’s southern coast at Meliá Ho Tram, the culinary team has recently established a baseline and is now working on an action plan to emulate the success at Meliá Koh Samui. The Insight device has been implemented at their Sasa restaurant; again, the main focus is tracking the leftovers from the breakfast buffet.

Other Meliá hotels and resorts in the region are using a circular food economy to ensure food waste is kept at a minimum. As of early 2024, Meliá Chiang Mai had sent back more than 3,000 kg of food for compost and fertilizer to the sustainable farm they get their produce from. This kind of recycling has been ongoing since the hotel launched its 360° system in 2022.

Properties like Meliá Vinpearl Phu Quoc and INNSiDE by Meliá Kuala Lumpur Cheras are also using food waste for fertilizer. Sol by Meliá Benoa Bali and Gran Meliá Jakarta, both in Indonesia, are managing food waste through the Scholars of Sustenance program. Through this partnership they are providing hundreds of meals per month, using food that may otherwise be wasted.

“The implementation of this new food waste system is one of a number of tools our properties are using to ensure food waste is kept to a minimum,” said Igancio Martin, managing director for Melia Hotels International in the APAC region.

Ingredient Ideology |   The Curd Connect Healthy & Holistic By: Dr. Kaviraj Khialani- Celebrity Master Chef.

While the story of curd being known to us goes back in history, according to a popular legend, while travelling across a desert, some Turks kept milk in a goatskin bag and slung it across the back of a camel. The desert sun and the bacteria in the bag had enabled preparation of curd, also known as yoghurt. Curd and yogurt: the two terms have often been considered to be synonymous. Curd or dahi is a dairy product which is made by curdling milk with edible acidic substance like lemon juice, vinegar and even curd itself. Curd is a great probiotic that contains good beneficial bacteria known to promote gut activity, soothe the inflamed digestive system and heals an upset stomach.

Curd has somehow been a chosen ingredient by a number of international cuisines and its adaptability and versatile nature has helped it gain a lot of popularity when it comes to indian marination, gravies, lassi or chaas, shrikhand or even layered desserts where can use hung curd as well.

Milk is converted into curd or yogurt by the process of fermentation. Milk consists of globular proteins called casein. Here curd forms because of the chemical reaction between the lactic acid bacteria and casein. During fermentation, the bacteria use enzymes to produce energy (ATP) from lactose. Curd is made by bacterial fermentation of milk. In this process lactose in milk is converted into lactic acid by several probiotic microorganisms. The species involved in the fermentation depends on the temperature and humidity of the environment, and may include Lacto coccus lactis and a few more.

A favorite of many of us in a number of ways from having a bowl full of it or into a raita form, cooking it up in a kadhi concept preparing sweet dishes etc.

Here are a few popular Health Benefits of Curd:

  • Curd is rich in proteins and also essential minerals like calcium that helps keep our bones strong.

  • Curd possesses good bacteria called pro-biotics which are great to consume since it helps in digestion.

  • Curd is a great immunity booster and also good to consume on a weight loss program.

  • Curd is heart healthy, good for our hair and skin too.

  • Curd also helps in preventing allergies and infections.

Introducing Tevana Garden: An Oasis In South Bali’s Luxury Hospitality Scene

Guests at AYANA Bali now have access to a six-hectare rejuvenating and culturally rich sanctuary that sets the bar for luxury in harmony with nature.

Bali, Indonesia (October 8, 2024) – AYANA Bali, the island's premier integrated resort, is setting the bar for luxury eco-tourism with the official opening of Tevana Garden on October 8, 2024. Embracing the true meaning of its namesake AYANA – meaning ‘place of refuge’ – the resort has dedicated over six hectares of land to create a garden oasis where resort guests can enjoy a delightfully sensory nature experience. Through its walking paths and stopping points, guests will have the opportunity to connect with nature in an unparalleled way for South Bali, all while appreciating the island's rich biodiversity with over 80 species of tropical flora.

Derived from Sanskrit, “teva” signifies “divine” or “godly,” thus Tevana refers to a place of divine connection. This is felt on arrival at Tevana Garden, where visitors are greeted by a striking water feature at the entrance plaza. A narrow, winding pathway leads guests into a realm of natural wonder where sounds fade to chirping birds, a gentle breeze in the trees, and footsteps on the pebbled path beneath. This lush, green sanctuary invites visitors to escape the hustle and bustle of everyday life, enhancing the serene tropical atmosphere of AYANA Bali to ensure a truly restorative vacation for every guest.

As they explore, visitors will discover the Viewpoint Tower, offering panoramic vistas of Jimbaran's lush landscape and the vast ocean beyond. Families will delight in the charming treehouse playground, offering a magical space for children to play and explore. Subtly highlighting the area’s geological characteristics, a small natural cave adds to the garden's natural charm. Another highlight includes the Tea Room, providing a peaceful haven for private events and experiences, such as coffee tasting or afternoon tea.

Tevana Garden also boasts a versatile 3,200 square meter outdoor event space for up to 1,000 guests, ideal for hosting unforgettable weddings, corporate events, or any large gathering seeking to embrace Bali's tropical beauty.

Tevana Garden was designed by Kazuma Hasegawa, co-representative, landscape architect, and professor at Kyoto University of the Arts, together with Maiko Shiromizu, co-representative and landscape architect—both from SAHA Landscape Design Office, based in Osaka, Japan, seamlessly blending Balinese charm with Japanese landscape techniques. While celebrating Bali's natural beauty, the garden subtly integrates Japanese influences, as seen in its careful layout, precise measurements of pathways and structures, and meticulous gardening. The result is a harmonious fusion of simplicity and natural beauty, featuring terraced landscapes, gentle flowing streams, sparkling waterfalls, and local white limestone formations. Together, these elements create a tranquil and meditative environment, inviting visitors to experience the calming effects of its design principles.

"AYANA Bali is committed to hospitality which blends nature and luxury in perfect harmony," says Giordano Faggioli, General Manager of AYANA Bali. "Whether you're planning an unforgettable event, or looking for a serene escape, AYANA Bali, with the addition of Tevana Garden, offers an experience that is truly nature-centered, allowing guests to disconnect and rejuvenate during their holiday."

Enhancing the cultural experience, Tevana Garden is conveniently located next to SAKA Museum, AYANA Bali's cultural hub and learning precinct. By combining these experiences – along with other activities on the property, such as traditional dance at Kampoeng Bali, a jamu workshop at AYANA Farm or boreh treatment at AYANA Spa – AYANA Bali guests can enjoy a rich Balinese cultural immersion. This unique combination allows guests to merge their appreciation for art and culture with the restorative power of nature.

Tevana Garden is a captivating new addition to AYANA Bali’s world-class offerings. Experience its magic by booking a stay at one of AYANA Bali’s four hotels – AYANA Resort, AYANA Villas, AYANA Segara or RIMBA by AYANA – and enjoy access to the island’s largest variety of luxury facilities in one property.

Hyatt Completes Acquisition of Standard International and Its Iconic Hotel Brands, The Standard and Bunkhouse Hotels

Hyatt Hotels Corporation (NYSE: H) today announced the completed acquisition of the brands and most of the affiliates of pioneering lifestyle hospitality company Standard International, parent company of The Standard and Bunkhouse Hotels brands. This acquisition enhances Hyatt’s leading position in the industry’s premier lifestyle segment, building on both Hyatt’s organic growth and a series of acquisitions that quintupled the number of lifestyle rooms in Hyatt’s global portfolio between 2017 and 2023.

The 100% asset-light portfolio includes management, franchise and license contracts for 22 open hotels with approximately 2,000 rooms, including The Standard, London, The Standard, High Line in New York City, The Standard, Bangkok Mahanakhon and The Manner in SoHo, which made its highly anticipated debut last month with some of New York Fashion Week’s most coveted afterparties. New properties slated to open later this year include The Standard, Singapore, Bunkhouse’s Hotel Saint Augustine in Houston, and The StandardX, Bangkok Phra Arthit, offering the immersive experiences Standard International’s brands are known to deliver. The acquisition includes a robust residential business with Standard Residences under development in Miami, Lisbon, Phuket, Hua Hin, Mexico City and Tulum as well as completed Bunkhouse Residences at Hotel Saint Cecilia in Austin, TX.

The acquisition includes more than 30 future projects with a signed agreement or letter of intent, along with new projects sparked by the August announcement of the planned acquisition. “The development community knows an industry game-changer when they see it, and the enthusiasm for bringing together the ethos of The Standard and Bunkhouse brands and the power of Hyatt’s network and distribution system is palpable,” said Mark Hoplamazian, President and Chief Executive Officer, Hyatt. “Developers love this combination as much as we do.”

In the coming months, Hyatt will debut its new dedicated Lifestyle group that will be headquartered in New York City with additional offices in Austin and Bangkok and led by President & Creative Director Amar Lalvani, former Executive Chairman of Standard International. “The lifestyle segment isn’t for the faint of heart, it takes creativity and commitment,” said Lalvani. “But if you get it right, you reap the benefits of outsized guest loyalty and outsized developer returns. The beauty of this combination is that Hyatt respects the creativity and freedom required to deliver the experiences we do, and we respect the value of Hyatt’s storied history, global infrastructure and best-in-class commercial services.”

ROHL reimagines the mid-market hotel with ‘Regenta Place’, its 5th property in Jaipur

Bengaluru, October 2024 Leading hospitality chain Royal Orchid Hotels Ltd. (ROHL) today announced its 5th property in Jaipur and 10th in Rajasthan while debuting its reimagined midscale brand-Regenta Place. Donning a fresh identity and design language, Regenta Place Jaipur aims to disrupt the value-driven mid market space through a dynamic combination of vivacious social spaces, cutting-edge technology, and quirky décor.

Arjun Baljee, President of ROHL said, “We are delighted to create a distinct visual identity for "Regenta Place". This will help us further create a clear distinction in our portfolio of properties, both for our owners and for our guests. By focusing on a modern aesthetic to local design, we hope to create a brand that is relevant to the micro-market it operates in. Over a period of time, we hope to roll this out across the platform of Regenta Places, so that they are consistent with the broader vision of providing fresh and vibrant spaces to young and modern travellers.

“The new property serves as a testament to our ongoing dedication to consistently innovating and remaining relevant in the industry. In the near future, the travel and hospitality industry will be significantly influenced by the increasing emphasis on experience-driven travel by Gen Z and Millennials. However, the moderate-tier segment of the Indian hospitality industry is distinguished by a visible service gap. The rebranding of Regenta Place is a step in the direction of creating a niche brand that can align the aspirations and budget considerations of young Indian travellers without compromising on the quality of their stays”, Mr. Baljee added.

Accommodation at the 40-key hotel is thoughtfully furnished with functional amenities and decorated to reflect a contemporary yet quirky look. To meet the discerning needs of younger and more enthusiastic clientele, the hotel has further curated its services and amenities. The signature all-day Pinxx Café has been designed to be the third space for guests, with small fun bites round the clock and spaces to work and dine at the same time.  The vibrant rooftop bar, Kat's Bar, provides guests with an ideal environment to relax and unwind in the land of Kings, with a panoramic view of the city on the golden horizon. The space transitions into the most spectacular sundowner venue assuming an entirely new character at dusk, making it an inviting hub for socialising and immersing against a stunning backdrop. In addition, the hotel offers a state-of-the-art wellness centre and a gymnasium.

Of course, ROHL’s new Regents Rewards program is well integrated into this hotel, with a slew of amazing benefits for members, like member only rates, free experiences thrown in during the day, among other value-additions.

Rajasthan as the largest state in the country has also become a prominent wedding destination in recent years for its different landscapes and architecture royalty.

Strategically located near prominent transportation hubs and Jaipur International Airport, Regenta Place Jaipur offers guests convenient access to some of the city's most renowned landmarks and attractions including City Palace of Jaipur and Hawa Mahal.
