73% of Indian travellers want to leave the places they visit better than when they arrived reveals Booking.com’s Sustainable Travel Report.

Booking.com’s latest Sustainable Travel Report, found that Indian travellers are integrating sustainable thinking into their vacation planning, beyond everyday small habits such as using reusable water bottles or reusable shopping bags. Some say, they now travel outside of peak season to avoid overcrowding and opt for walking, biking, or taking public transport as part of their means of transportation. Others have also taken on the “buy local” mantra, favouring small, independent stores to contribute to the local economy.

Recycling, reusing and the value of reducing are becoming the mantra of the Indian traveller

A majority of Indian travellers recognize by conserving resources now and being more sustainable, one can help save the planet. In just a year, Indians have grown extremely conscious of how they impact the planet and are implementing several measures as a result.

In a bid to save water, 55% travellers reuse their towels multiple times, up 21% from 2022. As more people are comprehending the value of reducing, reusing, and recycling 57% of them brought their own reusable water bottles, up by 12% since 2022. 52% individuals are utilising reusable bags to be more responsible; 44% practise recycling garbage while travelling and surprisingly, 51% of individuals always carry their personal, reusable water bottle.

Indians are making greater efforts to be more mindful of their travel impact at every step of their journey

Indians are taking several sustainability-related actions as their environmental consciousness grows.

Taking conscious habits from home when travelling, 66% now turn off their air-conditioning when they aren’t there (up 23% from 2022)

Indian travellers are moving towards sustainable travel practices and are becoming more selective when deciding their accommodations and modes of transportation primarily due to the worsening effects of climate change and growing environmental awareness.

When it comes to transportation, 51% of Indian travellers now plan their sightseeing so that they can walk, use bicycles or take public transportation - essential for ecotourism

Looking to further reduce their impact, 41% decide to go off-peak to avoid overcrowding, up 5% since 2022.

Additionally, taking the ‘buy local’ ideology is also a popular mantra amongst travellers while on vacation with 52% respondents favouring small, independent stores.

Incentives and discounts can further drive Indians to be more sustainable

Today, while the intent is clear, there are several challenges travellers face to find and book sustainable properties, however, they are open to further incentives to travel sustainably. Nearly half of Indian (44%) travellers are asking for discounts and financial incentives to choose eco-friendly options. Additionally, it has been found that 53% of people would be motivated to travel more sustainably if they were given reward points for selecting sustainable options. These reward points can also be used to receive additional benefits or discounts through online travel agencies.

According to Santosh Kumar, Country Manager, India, Sri Lanka, Maldives and Indonesia at Booking.com, "Indians are travelling with a renewed outlook to reduce their impact on the planet. With 73% of respondents wanting to leave the places they visit better than when they arrived, today’s travellers are increasingly adopting a regenerative approach to travel. They are converting intent into action by taking active small steps at home and when travelling to drive a more sustainable future. To help travellers in their sustainability journey, Booking.com has taken measures to help not only travellers but also local communities and the environment. This includes awarding thousands of properties in India and globally with the Travel Sustainable Badge, the ability to compare the CO2 emissions for different flight options or being able to find and book greener taxi options. ITC Hotels have consciously carried the culinary-advocacy of heritage and modernist India; through an ever-evolving research on native dining experiences that transcends the anecdotal to actual achieved through the scrupulous supervision of groups Master Chefs.

This time the group is taking the iconic Dehlnavi trail all around India, with its multicity culinary tour bringing the cross-border melange of erstwhile Capital City- in a handpicked curation of unaltered taste influenced from Mughal, Baniya, Kayasth, Punjab and many more. Served at homes, by food carts or at the high table, Delhi’s flavours, like her unique gharana, tells the story of the city. Successive settlers have invested the city with their own heirloom flavours and sense of urbanity.

The four-day Dehlnavi trail dinner pop-up in Mumbai can be enjoyed ITC Maratha at Sahar Andheri East and ITC Grand Central Dishes at Parel in its award-winning restaurants Peshwa Pavilion & Hornbys Pavilion respectively giving an ease proximity access to gourmet enthusiast from North, Central and South districts of Mumbai. The culinary showcase is led by cuisine authority Chef Rais – ITC Maurya & Chef Mofid – Welcomhotel Sheraton New Delhi  Hotel to Mumbai.

The food trail will start off with chaats such as papdi chaat, and the unique kulle ki chaat, Bhe ke Kebab, Tulsi ke kebab from the walled city. Kulle ki chaat, for the unversed, is made by scooping out the centres of boiled potatoes, sweet potatoes or summer specials like watermelons, and filling them with a mixture of chickpeas, pomegranate seeds, spices, and tangy chutneys. The stuffed potatoes or watermelon are then garnished with a variety of toppings such as sev, coriander leaves, and chaat masala, which is a spice blend commonly used in Indian cuisine.

Besides the chaats, Dehlnavi cuisine trail will also feature kebabs and fish fry. While bhey ke kebab or lotus stem kebabs will stand true to the earnest effort for uniqueness, the other offerings on Purani Dilli Fried Chicken and Fish Fry will reflect the vast diaspora of Mughlai kebabs and street foods of Delhi.

The main course, however will remain the highlight of the fare and perhaps for the first time ever, the vegetarian side will seem more enticing with Dal Dehlnavi served with a crisp biscuitty roti will catch your fancy. Imagine the tantalizing fragrance of slow-cooked moth and split moong dal, infused with the pungency of chopped chillies, roasted cumin, and ginger juliennes. As you dip the sweet, biscuit-like roti into the creamy and thick textured dal, a heavenly blend of flavours dances on your taste buds.

The nimona pulao will be as intriguing as the dal and biscuitty combination, since the usual nimona pulao has green peas (matar), it is given a unique spin with matar stuffed inside the salan mirchis! The matar paneer naize would be the perfect nod to rustic flavours and a smooth, creamy-like texture thanks to the pine nuts. The chatpate soya charra aloo mime the mock meat hype in Mughal corterie introduced by Bania community. While kunni dal which is slow cooked on a gentle flame with a blend of Bengal gram and black lentils is infused with a handful of secret spices and a hint of garlic, is sure to comfort you to no end.

The non-vegetarian fare on the other side will be as royal as it could get. Expect the all-time favourite Dilli Butter Chicken in luscious gravy with a velvety texture and an indulgent buttery taste that coats the tongue. The juicy and tender boneless chicken pieces perfectly cooked and complemented the buttery goodness of the dish, will guarantee a lasting impression on the taste buds. The extravagant Nihari and Gosht Pulao too irresistibly delicious and added the perfect touch of Mughlai to the unforgettable experience.

The dessert platter will be the perfect conclusion to the hearty meal – full with Barf Ki Handi and decadent kheer (Khurchan) and gulab jamun.

Ingredient Ideology | QUICK FIX TIFFIN RECIPES – DELICACIES TO TRY By: Dr. Kaviraj Khialani- Celebrity Master Chef

The word tiffin is also used as a name for a lunchbox. Tiffin’s (or dabbas) come in all shapes and sizes, but traditionally they are round, with three or four stacking stainless-steel compartments firmly sealed with a tight-fitting lid and a side clip to avoid any nasty spillages and a handle for carrying on top. In India food cooked at home with care and love is considered to deliver not only healthy (and relatively cheap) food but also divine contentment. Lunch is usually eaten thali-style, with a tantalising selection of regional delicacies that may include any combination of spicy vegetables, dhal, rice, yoghurt, pickles, bread and pudding served on a big steel plate or a banana leaf. The separate compartments in the tiffin lunchbox accommodate thali lunches perfectly.

Tiffin culture is now to be found all over India. Everyone from women in brightly coloured saris working in the fields to giggling families on long train journeys – carries a tiffin to provide a compact, portable, homemade lunch. in British India tiffin has evolved to create a fascinating world of its own, a world that involves a whole range of dishes and equipment and above all of suppliers, from the tiffin wallas of Bombay to the sellers of spiced tea and savoury snacks who cater for busy punters on the run. Today tiffin might mean a packed lunchbox or afternoon tea, a savoury snack or a sweet treat. As long as it is munched between breakfast and dinner, it is simply tiffin. In India we also have a constant and dedicated effort in working on our daily tiffin’s to work being carried from home as well which can be challenging and time consuming as well if not planned ahead of time. Tiffin planning plays a crucial role in cooking and packing meals to carry at work in order to sustain the day all along and to be able to manage the hunger pangs and cravings as well in between meals.

“To me a perfect tiffin refers to variety of temptations packed in a safe manner which offers a perfect balance between color, flavour, taste, temperature and texture which is not only convenient to eat but to also please the palate on the whole!” – Dr. Kaviraj Khialani – Celebrity Master Chef.

Here are a few ideas on daily meal tiffin plans which can be prepared well in time with a little plan of action and pre-preparation to offer a good variety for in meal tiffin boxes & dabbas to work to enjoy with work mates during lunch time.
