New Delhi, September, 2023:  99 Pancakes, India’s first QSR chain in the pancakes segment, is on an aggressive expansion spree via Company Owned Company Operated (COCO) and franchise models across different cities of India. The QSR chain is planning to open 100 + outlets in the next 18 months taking the total number of outlets of the brand to 140-plus.

Currently, 99 Pancakes has 40+ outlets in 10+ cities, of which 22 are operating on the COCO model. As part of the expansion plans, the brand will invest approximately Rs. 20 crores, and  enter markets such as Delhi, Bengaluru, Ahmedabad, Mumbai, Pune, Hyderabad, Chennai, Nagpur, Nashik, etc. 

Aiming to aggressively expand its presence in tier II cities, the brand plans to open 10-12 outlets per city in the near future. Moreover, the company plans to raise funds and use them to open new outlets PAN India.

Vikesh Shah, Founder, 99 Pancakes, said, “Since the inception of 99 Pancakes, the company has operated on Company Owned Company Operated (COCO) and franchise model, which has worked really well for us. Looking at the prospects of growth in other regions of India, we wish to enter the untouched markets in collaboration with the master franchisees and retail franchisees. New Delhi: Tata Group's consumer unit is in talks to buy at least 51% of popular snack food maker Haldiram's but is not comfortable with the $10 billion valuation sought, two people briefed on the matter said.

If successfully concluded, a deal would see the conglomerate directly compete with Pepsi and billionaire Mukesh Ambani's Reliance Retail.

Haldi ram's, a household name in India, is also talking with private equity firms including Bain Capital about the sale of a 10% stake, they said

Tata Consumer Products, which owns UK tea company Tetley and has a partnership with Starbucks in India, is negotiating the stake purchase, the sources told Reuters.

A third person with direct knowledge of the talks said Tata wanted to buy more than 51% but has told Haldiram's that its "ask is very high."

The potential acquisition represents an exciting opportunity for Tata, the person said, adding: "Tata (Consumer) is seen as a tea company. Haldiram's is huge in the consumer space and has a wide market share."

Reuters reported that the sources spoke on condition of anonymity.

With the addition of this new facility, General Mills India will double its manufacturing footprint, enabling the company to meet the increasing demand for its Pillsbury bakery solutions in India. The Pillsbury brand holds a strong presence in the Baking Mixes segment and is well positioned to supply baking products to the growing bakery and food service industry in India.

Celebrated German Chef Tim Raue to helm Flying Sauces at Soneva Fushi

Germany’s best chef and entrepreneur Tim Raue is collaborating with award-winning sustainable luxury resorts operator Soneva to bring Berlin’s two Michelin-starred Restaurant Tim Raue to Soneva Fushi in the Maldives. Chili flakes- ½ tsp

Fresh basil/ parsley/coriander-2 tbsp.

Water-1/2 cup

Red chili sauce- 2 tsp

Tomato ketchup-2 tsp

Boiled chicken cubes-1 cup

Boiled potato cubes-1/2 cup

Green capsicum-1/2 chopped.

Method:

1. Prepare all the ingredients for the masala baked bean recipe.

2. Heat oil in a pan saute the garlic, onions, chilies for a few seconds, add in the baked beans and all seasonings, herbs, spices, sauce and masala to taste and mix well.

3. Add in the chopped green capsicums, saute well and add a little water and boiled chicken cubes, potatoes and allow to simmer for 6-8 mins.

4. Once it all comes well together and well cooked, turn off the flame add fresh herbs for garnish and serve with brown bread, multi-grain bread etc. an ideal dish to have for a Sunday brunch or a mini meal on the whole.




Recipe-2] BLACK EYED PEA SALAD WITH GARDEN VEGGIES

Ingredients:

For the base of the salad:

Assorted salad leaves/ lettuce leaves- 1 cup

For the body of the salad:

Black eyed peas- 1 cup boiled.

Onion-1/2 no cubes

Tomato-1 no cubes

Green chili-1 tsp chopped

Coriander leaves-2 tbsp. chopped

Green capsicum-1/2 no cubed

Cucumber-1/2 no cubes

Sweet corn-1/2 cup boiled.

For the dressing of the salad:

Olive oil-2 tbsp.

Lime juice-2 tsp

Mustard paste-1/2 tsp

Dates- 3- 4 chopped

Salt and crushed black pepper to taste

Mint leaves- 8-10 leaves

Honey-2 tsp

Chaat masala-1/2 tsp

Sunflower seeds/ melon seeds-2 tsp

For the garnish of the salad:

Fresh herbs as available- 2 tbsp.

Micro-greens -2 -3 tbsp.

Cherry tomatoes- 3-4, cut 1 x 2

Method:

1. Prepare all the ingredients for the salad.

2. Arrange the base of the salad on a serving plate/salad bowl.

3. In a mixing bowl combine together the ingredients for the dressing and mix well.

4. Add in the body of the salad from the boiled peas to all other ingredients and give it a nice mix.

5. Arrange the salad on the serving bowl and garnish appropriately and serve immediately.





Recipe-3] CHICKPEA TIC- TAC – TOE

Ingredients:

Oil-1 tsp

Butter- 1 tsp

Bayleaf-1 no

Cloves- 3-4 no

Garlic-1 tsp chopped

Ginger-1 tsp shredded

Green chilies- 1 tsp slit

Onions- 1 cup puree

Tomato-3/4th cup puree, fresh

Boiled chickpeas/ kabuli chana- 1 and a half cup.

Salt to taste

Turmeric powder-1/2 tsp

Red chili powder-1/2 tsp

Coriander powder-1 tsp

Garam masala powder-1/2 tsp

Kasuri methi-1 tsp

Cashew paste-2 tsp

Water-1/2 cup

Coriander leaves- 2 tbsp. chopped.

Lime juice-1 tsp add and serve hot.

Method:

1. Heat oil and butter in a pan add in the whole spices and flavor the pan. Add in the onion puree first and saute it well for 4-6 mins add a little water if needed to prevent sticking, add in the garlic, ginger and chilies as well.

2. Next we add in the tomato puree, salt to taste, all the powdered spices, kasuri methi and bhunao the masala well for 2-3 mins.

3. Add in the boiled chickpeas and cook it with the masala for a couple of mins, stir well, add in the cashew paste, a little water and simmer the chickpeas for 10-12 mins.

4. Add fresh coriander leaves and garnish the recipe, add a splash of fresh lime juice and serve hot with rotis, naans, parathas.

Ingredients:

For the base of the salad:

Assorted lettuce leaves/ purple/white cabbage-1 cup

For the body of the salad:

Boiled kidney beans/rajma-1/2 cup

Boiled green lentils/moong-1/4 cup

Red capsicum-1/2 no cut into med cubes.

Celery-1 stalk cut into pieces

Cucumber-1/2 no cut into cubes

Tomato-1 no de-seeded and cut into cubes

Apple/pear/lychees/chickoo/mango cubes- any 1 fruit

For the Dressing of the salad:

Olive oil-2 tbsp.

Lime juice-2 tsp

Crushed black pepper-1/2 tsp

Salt to taste

Roasted crushed cumin-1/2 tsp

Flax seeds-1 tsp roasted and crushed

Mint/coriander/parsley- 2 tbsp.

Orange juice- ¼ cup fresh squeeze with segments

Boiled Amla pulp- 2-3 tsp.

Raisins/almonds/cashews- 2 tsp chopped.

For the garnish of the salad:

Micro-greens, olives, jalapenos, assorted herbs etc.

Method:

1. Prepare all the ingredients for the salad.

2. Arrange the base of the salad with assorted leaves as desired on the serving plate or salad bowl.

3.Combine all the ingredients for the dressing in a mixing bowl and give it a nice stir.

4. Add in the body of the salad just before serving and toss the salad well.

5. Portion the salad onto the base of lettuce leaves and garnish it appropriately and serve.

Black peppercorns- 4-5 no

Garlic-1 tsp chopped

Lemon grass- 4-5 pieces

Salt and pepper to taste

Ginger-1 tsp shredded

Spring onions- 3-4 sliced

Boiled sweet corn-1/4 cup

Boiled assorted pulses- 1 cup

Tomato puree-1/4 cup

Soy sauce- 2 tsp

Tomato ketchup-2 tsp

Schezuan sauce- 2 tsp

Garam masala powder-1/2 tsp

Mixed herbs and chili flakes to taste

Water-1/2 cup

Cheese- 2-3 tbsp. grated to garnish.

Cooked/boiled white/brown rice- 2 cups

Assorted vegetables like sliced mushrooms, broccoli, zucchini, bell peppers, green peas, baby corn, paneer etc can be added for the veg options.

2. heat oil and butter in a pan add in the cinnamon stick and peppercorns, add in the sliced onions, garlic, ginger and chilies and cook for 1 minute.

Collinson increases airport lounges and travel experiences in Asia Pacific to cater to strong travel growth

 

  • Collinson sees a 44% increase in airport lounge visits across Asia Pacific from January to July 2023 and a 32% increase when July 2023 figures are compared to pre-pandemic times in July 2019.

  • To cater to the increase in travellers, Collinson has added close to 20% more airport lounges and travel experiences to its Asia Pacific network in the first half of this year – including a Japanese-style public bath, capsule hotel and co-working spaces.

Mumbai, August 2023: Collinson, a global leader in the provision of airport experiences, loyalty and customer engagement solutions, and owner and operator of Priority Pass, sees the strong return and growth of travel in Asia Pacific across most markets, and continues expanding its network of airport lounges and travel experiences to cater to the increasing number of travellers.

In the first seven months of 2023 (from January to July), Collinson saw a resounding 44% increase in airport lounge visits across Asia Pacific, with the strongest performing markets being located within South and South-East Asia. Additionally, a 32% increase can be seen when pre-pandemic July 2019 lounge visit figures are contrasted with July 2023.

Since its inception, the eatery has been whipping up food that’s not only delicious but also heartwarming. 

Za’atar first opened its doors in Bandra in June 2018 and was one of the few places that had a full-fledged Lebanese menu under one roof. After some time, Za’atar shifted to Khar and expanded to two more locations, with one outlet opening in Mumbai's affluent neighbourhood, Mahalaxmi, and two more opening  in Pune. Ever since it came into being, Za’atar has always worked on the principle of serving delicious yet affordable food that customers can greatly relish. They are also very adamant about not falling for the fads that keep circulating in the food industry. 

"Back in 2017, when we friends were exploring the idea of working together, the discussions would always revolve around the idea of having a prominently Indian-owned and founded QSR, but to go beyond Indian food and explore other cuisines. We always thought there was an underdeveloped market in India within the QSR space, but with a lot of potential. It was our love for Middle Eastern cuisine and wanting to be our own customers that made us push to start this brand. After having researched the market, we realised the ingredients were available, and there was no excuse to complain but to just do it ourselves—that's how Za'atar was born. The beauty of Middle Eastern and Lebanese cuisine is that it is a light and easy diet that also fits many dietary lifestyles, such as vegan, keto, high protein, and low carb. It’s my go-to meal anytime of the day," says Advait Agnihotri, co-founder of Za’atar. Besides Agnihotri, the founding team of Za'atar includes Anuj Solanki, Jai Sarvaiya, and Nirvaan Thacker, who is also the chef. 

When asked about the name ‘Za’atar,’ Jai Sarvaiya says that the name stands for a spice that is widely used in Middle Eastern food. "Everyone we spoke with had fond memories of travelling to the Middle East or the UK/US and enjoying a cheesy za'atar manakeesh or a labneh with za'atar. That’s when we decided to name our brand after the spice, as it's not only unique but also because it serves as a representation of the Middle East," he adds. 

As for the food, Za’atar has always been meticulous about respecting the cuisine and maintaining high standards. Some of their best practices for ensuring the authenticity and high quality of the dishes involve importing spices from the Middle East and working closely with their vendors, who ensure a steady supply of the freshest ingredients on a daily basis.

Some of their delicacies include a plethora of mezzes served with pickled vegetables and pita bread; Classic Falafel Shawarma consisting of crispy fried falafels, lettuce, cucumber, and tomatoes along with harissa, tahina, and pickled vegetables; Harissa Cheese Manakeesh; Chicken Seekh Bowl; Schoug Mushroom Bowl; Cottage Cheese Moussaka served with grilled paneer, red pepper and tomato sauce, and feta cheese; and more. Za’atar’s signature dessert is the Dark Chocolate and Hazelnut Hummus, which is an all-time favorite. It's vegan, light, and has some serious protein too! Also, there are certain items on the menu that can be served vegan or Jain on request. 

The person behind Za’atar’s mouth-watering, versatile menu is Nirvaan Thacker, who has always had a passion for cooking. "Since I was a child, I have always loved food and started cooking at a very young age too. There was a lot of influence from my grandmother and my parents as well, who are huge foodies and love cooking as well. The ‘Travel and Living’ channel played a big role in exposing the possibilities of a career in food; my favourite shows are Anthony Bourdain's," he adds when asked about what motivated him to enter the culinary world. 

"It's been a rollercoaster ride since we started including the COVID period, but I think it's for three reasons: Firstly, we have a simple menu that we have worked on several times to ensure that we consistently deliver the same taste and quality. Secondly, we've always tried to give something new to our customers and tried our best to keep coming with newer offerings, and lastly, we’ve got a great customer base that's supported us from the start and even continues to do so. Many of them now know us on a personal basis and have always given us honest feedback, which has helped us get things right and improve our service over the years," says Anuj Solanki.

Ayana Estate Introduces Jamu Workshop As Part Of Its Reimagined Farm Program


Guests can now create their own jamu, an ancient Indonesian herbal tonic promoting holistic health, through an expert-led workshop at the newly opened AYANA Farm.

Mumbai August 2023 – AYANA Estate, the award-winning destination resort in Jimbaran, Bali, unveiled its revitalized AYANA Farm in July 2023, which offers a diverse array of guest activities. In collaboration with The Jamu BAR, AYANA Farm has announced its twice-weekly Traditional Herbal Remedies Workshop, which pays homage to the therapeutic potency of Indonesia's traditional herbal elixirs, known as jamu. Every Tuesday and Thursday, workshop participants will handpick their own herbs from over 130 plant varieties cultivated on the farm, before learning about and crafting personalized jamu.

 

Emerging in the 1300s as evidenced by the intricate reliefs of Borobudur Temple in Central Java, jamu is a revered wellness tradition deeply rooted in Indonesian culture. Its fundamental role in holistic health persevered through the Dutch colonial era and continues to thrive today, with age-old recipes passed down through generations. For over 700 years, jamu has been consumed by the peoples of the Indonesian archipelago to improve digestion, boost immunity, reduce inflammation, and improve overall health and vitality.

 

"Our Traditional Herbal Remedies Workshop invites guests to enhance their wellbeing while also reaffirming our commitment to carrying forward Indonesia’s wellness traditions that have been championed by generations of Indonesian women for over seven centuries,” says Giordano Faggioli, General Manager of AYANA Estate. The AYANA Farm workshop is led by female staff of The Jamu BAR, founded by Vanessa Kalani, the great-granddaughter of Lau Ping Nio founder of Nyonya Meneer. Born in 1895, Lau Ping Nio founded Nyonya Meneer in 1919 and was the first to produce and distribute jamu nationwide. Today, Vanessa continues her great grandmother’s legacy of sharing the spirit and essence of jamu through modernization with ready-to-drink products and workshops at AYANA Farm.

 

"We are thrilled to be partnering with AYANA Estate, the leading destination resort in Bali,” says Vanessa Kalani. “Our workshop will introduce the jamu tradition to the resort’s multinational guests while also preserving its legacy. During the workshop, we will maximize the use of medicinal herbs and plants at AYANA Farm's living pharmacy to create a basic jamu, and offer a personalized version based on the wellness goals of each participant."

 

As the base of the jamu recipe featured in the workshop, guests will first create jamu empon empon from potent ingredients including fresh turmeric, which is rich in antioxidants, enhances blood circulation, reduces inflammation, and alleviates indigestion; fresh ginger, which is also rich in antioxidants and has antiviral and antibacterial qualities; fresh kencur or aromatic ginger, which aids digestion, reduces inflammation, and boosts the immune system; and fresh lemongrass, which eliminates harmful toxins from the body.

 

Participants will then be presented with a selection of seven customizable recipes, which can be tailored to the unique needs of each guest. For those pursuing youthfulness and supple skin, the addition of the medicinal herb kumis kucing and sirih, or betel leaf, is recommended. Those seeking to enhance memory, focus, and visual acuity can enrich their jamu mixture with daun pegagan, commonly known as Indian pennywort, moringa, butterfly pea flower, and celery. For those leading an active lifestyle, the inclusion of the herb daun jinten in the jamu mixture offers benefits such as heart strengthening, relief from muscle aches, and improved lung function, while jamu sorga enhances a couple’s intimacy by boosting estrogen in women and virility in men. Guests can also try widely-known jamu such as kunyit asam, made from anti-inflammatory turmeric and tamarind, and beras kencur, which comprises rice powder, aromatic ginger and spices to treat colds and coughs by warming the body.

 

Using natural ingredients, the workshop also invites participants to create traditional Indonesian skin care products such as boreh, a traditional herbal scrub. Comprising ginger, cinnamon, cloves, nutmeg, turmeric, and rice powder, boreh is renowned for its cleansing, warming, and invigorating properties that exfoliate the skin while alleviating muscle tension and joint discomfort. Another traditional product featured in the workshop is lulur, a herbal body scrub containing a blend of medicinal herbs and spices. Rice powder serves as the foundational element of many lulur formulations, for its potent antioxidants and reputed skin-brightening qualities. Betel leaves and cloves contribute antibacterial and anti-inflammatory properties, while candlenut enhances skin hydration and diminishes the appearance of fine lines and wrinkles.

 

To continue their wellness journey, guests can take home their skin care products and recipe books. "We hope this workshop offers our guests a new wellness experience rooted in tradition and sustainability, and that it inspires them to continue these time-honored practices at home," concludes Giordano.

 

The Traditional Herbal Remedies Workshop runs every Tuesday and Thursday from 3:30pm to 5:30 pm. The admission fee is IDR 800,000++ per person, and the workshop is suitable for participants aged 13 years and above.
