RECIPE-1] CHILLI MASALA FISH CURRY 

Ingredients:

500 grams fish, cut into small pieces

2 onions, finely chopped

 3 tomatoes, pureed

 2 green chilies, slit

 1 tablespoon ginger-garlic paste

 1 teaspoon turmeric powder

 1 tablespoon red chili powder

1 tablespoon coriander powder

1 teaspoon cumin powder

1 teaspoon garam masala

Salt to taste

2 tablespoons oil

Fresh coriander leaves for garnish

METHOD:

1. Heat oil in a pan or kadai over medium heat.

2. Add chopped onions and sauté until golden brown.

3. Add ginger-garlic paste and slit green chilies. Cook for a minute until the raw smell disappears.

4. Add the pureed tomatoes and cook until the oil separates from the masala.

5. Add turmeric powder, red chili powder, coriander powder, cumin powder, garam masala, and salt. Mix well.

6. Add the chicken or fish pieces to the masala and coat them evenly. Cook for a few minutes.

7. Add water as needed to adjust the consistency of the curry.

8. Cover the pan and simmer until the chicken or fish is cooked through and tender.

9. Garnish with fresh coriander leaves.

10. Serve the Chilli Curry hot with steamed rice or roti.




RECIPE-2] ISLAND STYLE PRAWN COCONUT CURRY

Ingredients:

12-15 no medium prawns

1/2 cup tamarind paste

6-7 black peppercorns

2 tsp garlic paste

2 tsp ginger paste

1 tsp cumin seeds

½ tsp mustard seeds

4-5 garlic cloves, chopped

1 tsp red chilli powder

4 tbsp refined oil

1 cup onions, chopped

1 lemon for its juice.

1 tbsp green chillies, chopped

½ tsp turmeric

1 cup coconut milk

2 tbsp coriander leaves, chopped

Salt

Water

Method: 

1.Deshell and devein the prawns, wash them well.

2.Marinate the prawns with a mixture of ginger paste, garlic paste, red chilli powder, salt and lemon juice.

3.Heat refined oil in a pan, add chopped garlic and saute. Add black peppercorns, cumin seeds, mustard seeds and stir.

4.Then add onions, green chillies, red chilli powder, turmeric powder and saute well.

5.Now add tamarind paste, salt and the prawns to the curry. Stir well.

6.Add coconut milk. Garnish with the coriander leaves and serve hot.





RECIPE- 3] FISHY FARE ALL THE WAY 

Ingredients:

1.5kg fish fillets Basa

 Salt to taste

1 ½ tsp ground turmeric

6 tbsp of vegetable oil, or mustard oil

1 large white onion, finely grated

4 garlic cloves, crushed

1 knob of ginger, 2.5cm long, peeled and crushed to a paste

1 tbsp of ground coriander

1 tsp ground cumin

1 tsp chilli powder

3 tbsp of tomato purée

200g of tomatoes, cut into 2.5cm cubes

3-4 cups warm water for the gravy.

½ tsp sugar to balance the flavours.

Method:

1.Cut the fish into 12 equal portions. Mix 1 tsp of the salt and 1 tsp of the ground turmeric, rub on all sides of the fish and set aside for 30 minutes

2.In a shallow saucepan, heat 5 tbsp of the oil over a medium-high heat. If you are using mustard oil, heat until it is smoking hot – this removes the bitter pungency of the oil – then bring it down to a medium-high heat. Add the fish to the pan and fry to seal each piece, but do not let the fillets cook through. Remove from the pan to a plate and set aside

3.Add the onion, garlic and ginger to the pan and cook, stirring, for 2 minutes over a medium-high heat. If the paste is burning or sticking to the base of the pan, add a splash of water. Add the remaining salt and ground turmeric, followed by the ground coriander, ground cumin, chilli powder, tomato purée and diced tomatoes. Pour in the warm water and cook for 5 minutes. Keeping the pan on a medium-high heat, let the liquid reduce for 15 minutes or until the oil comes to the surface and seeps to the sides of the pan

4. Gently return the fish fillets to the pan and cover with the sauce, ensuring all sides of each fillet are cooking evenly. If possible, cook the fish fillets in a single layer in the pan as this will prevent them from breaking up into flakes. Lower the heat, add the sugar and cook, covered, until the fillets are cooked through – this should take no longer than 5 minutes.

5. To serve, garnish the fish with whole green chillies and sprigs of fresh coriander leaves.

RECIPE- 4] MARINATED BAKED FISH FARE

Ingredients

300 grams salmon fish

For Marination

8 cloves garlic

2 handful coriander leaves

1 piece ginger

2 tablespoon lime juice

1 tablespoon grated lime zest

1 tablespoon red chilli powder

½ teaspoon cumin powder

½ tablespoon garam masala powder

Salt as required

1 cup oil

3 tablespoon gram flour (besan)

120 grams hung curd

METHOD:

1. Prepare A Special Ginger-Garlic Paste, to begin with wash and clean the fish. Next, make a fine paste with half of the vegetable oil, garlic, coriander, ginger, red chilli powder, cumin powder, garam masala, lime juice and zest, and salt.

2. Make Gram Flour Paste, heat the oil in a pan and add the gram flour, stir to make a paste, and cook for about a minute till fragrant and lightly colored.

3. Add Spice Paste, Yoghurt & Marination Ingredients Add the mixture to the spice paste and combine with the yoghurt. Mix well all the ingredients for the marinade.

5. Marinate the Fish Cubes & Preheat the Oven. Gently rub the marinade over the fish pieces and marinate for an hour. Preheat the oven to 200 degrees Celsius and spread out the marinated fish in a baking dish.

6. Bake For 10-15 Minutes, Bake the tandoori fish for 10-15 minutes on the top rack turning the fish pieces once. Baste the fish pieces once or twice during cooking with butter. Serve hot with chutney or sauce.

RECIPE- 5] DESI BREAD IN THE BASKET

INGREDIENTS 

1 cup Maida

1 tablespoon olive oil 

For Seasoning

Salt as required

For Dough

½ teaspoon baking powder

¼ teaspoon baking soda

½ teaspoon sugar

2 teaspoon refined oil

2 tablespoon yoghurts (curd)

2 tablespoon lukewarm milk

METHOD:

1. Knead the Dough for The Kulcha, to prepare the dough, take a large bowl and sieve the flour in it. Add baking powder, baking soda, curd and refined oil in it. Add sugar and salt in the flour and mix it well with your fingers. Add warm milk in flour and knead the mixture to prepare a firm dough. Cover it with a damp cloth and keep it aside.

2.Now take the dough and divide it into two equal portions. Roll each portion into a ball and then flatten the ball using a rolling pin. Place a spoonful of aloo filling in the centre of the flatten dough and close the kulcha well. Sprinkle some flour over it and roll it again into a paratha.

3.Toast the Kulcha On Both Side, Take a non-stick pan, add olive oil and heat it over medium flame. When oil bubbles start to rise, gently place the kulcha in the pan and cook for a minute. Flip the kulcha and cook the other side till both sides turn crispy and golden brown in colour. Once done, serve hot with Amritsari Chole.



RECIPE- 6] COCO NAKA SWEET BON BONS

Ingredients:

grated coconut- 1/ ½ cup.

Cardamom powder- 1/2 tsp

Condensed milk- 3/4 cup

Ghee- 1 tbsp

dessicated coconut- 1 /½ cup

Method.

1.In a pan, add ghee add grated coconut and saute on low flame

2.Add condensed milk, cardamom powder, mix well

3.Stir continuously

4.Pour the mixture in a big bowl, make small balls

5.Roll balls in the desiccated coconut

6. Serve it

Workshop on Online Safety, Wellbeing and Digital Resilience organized at IHM Ranchi

42% of students surveyed by FLAIR are moderately addicted to internet usage, 25% addicted to social media

 In collaboration with FLAIR (Forum for Learning and Action with Innovation and Rigour) and SHICAA (safe and Healthy Internet for Children and Adolescents Alliance) organized a three-day workshop on “Online Safety, well-being, and Digital Resilience” at the Institute of Hotel Management, Catering Technology and Applied Nutrition (IHM), Brambe, Ranchi. Three-day workshops took place on 29th September, 6th October, and 13th October 2023.

The workshop was organized in view of increased digital usage and its impact on mental health. On 29.09.2023, the workshop was organized by the welcome address by Dr. Alok Aswal, Head of Department, IHM followed by the introduction to the seminar and workshop series by Dr. Bhupesh Kumar, Principal. Mr. Ajay Sinha, executive director of FLAIR, talked about the reinforcement of addictive behavior towards the internet and how hormones namely dopamine, serotonin and melatonin play key roles in it. Ajay highlighted that dysfunctional behavior and hormones correspondingly affect sleep and result in lower productivity, poor academic performance, procrastination, and less socialization with the immediate surroundings. He also spoke about “legal and safety measures” and how it affects our mental health at large. After the overview of the issue, Riya Tirkey, a Psychologist conducted the screening assessments of internet addiction, internet gaming disorder, social media disorder, and smartphone addiction in students. The program consisted of a quiz and short video to increase awareness of internet safety. The Second day of the workshop was conducted with the presence of chief guest Mr. Shail Kumar, Deputy Director of the income tax department. The program commenced with the address note and inauguration by Dr, Bhupesh Kumar, Principal followed by a keynote address by Mr. Ajay Kumar Sinha, executive director, of FLAIR. It was followed by a panel discussion in which Ms. Ritisha, Clinical Psychologist, Mr. Raj Kumar, Special Correspondent Hindustan Times, Mr. Nabhojit Dey, Vice President, Global program and services, Adroit Associate, Mr. Ashish Anand, Consultant- Social Development, Department of Agriculture, and Dr. B. Beck, Director and Chairman of Seven Stars Academy, Ranchi, shared their views on the topic. They discussed about healthy internet consumption and how problematic internet usage impacts one’s physical health and mental health. The panel discussion was moderated by Mr. Praveen Raman, Media Advisor, FLAIR. The third day of the workshop began with the mark of Mental Health Day with its theme “Mental health is a universal human right”. The program was further led by Ritisha, a psychologist at FLAIR about mental health problems in students and professionals of hotel management field and solutions of it, she further mentioned how maintaining professional, academic and personal life is plays a significant role in healthy functioning she also told about the kind of services flair provides to promote, maintain and treat the mental health problems at last discussion was held with the students regarding common mental health concern faced by the students and it's possible solutions. The sample data of 98 was collected through screening assessment and analyzed, the sample was from the age group between 18-25 which was assessed on the variable of internet addiction, internet gaming disorder, social media disorder, and smartphone addiction. The result of the data revealed that 29 out of 98 (approximately 29.6%) participants fall under mild internet addiction and 42 out of 98 (approximately 42.9%) students fall under moderate level of internet addiction whereas 2 out of 98 (approximately 2.0%), participant fall under game addiction criterial range and 1 participant fall under the risk of developing addiction towards game addiction, moreover 35 out of 98 (approximately 35.7%) participants were indicative of social media addiction and 39 (approximately 39.8%) participants fall under risky usage of social media, according to the frequency result 25 out of 98 (approximately 25.5%) fall under smartphone addiction and 10 out of 98 (approximately 10.2%) fall under risky usage of the smartphone. By approaching social media and the internet mindfully, we can harness their benefits while protecting our mental health in this digital age.

While speaking on the findings of the survey Riya stated that the figures underscore prominent severity of social media-related behaviors with the 39 participants suggestive of social media addiction among the surveyed participants, by shedding light on the prevalence of using social media as an emotional escape, excessive preoccupation, and emotional distress when access is restricted. While talking about the possible ways of corrective measures Ritisha stated that one should check early signs and symptoms and consult with mental health professional regarding the internet addiction, turn off or silent the notification of social media, games, applications and websites, people with problematic Internet users can use free application that can track their internet activity and usage by engaging themselves in their hobbies without using internet and people can use remainder to remind themself regarding the enough use of internet for time or day to curb the impact of problematic internet usage.

AlUla Development Company signs agreement with Marriott International to bring Autograph Collection Hotels to AlUla in Saudi Arabia

AlUla Development Company (UDC), fully owned by the Public Investment Fund (PIF), has signed recently an agreement with Marriott International to open an Autograph Collection property in Saudi Arabia. Expected to open in 2025, the hotel will be located in the heart of downtown AlUla.

The agreement was signed by Naif AlHamdan, Managing Director of UDC, and Sandeep Walia, Chief Operating Officer, Middle East, Marriott International in the Saudi capital city of Riyadh.

Spanning across 22,635 square meters, the Autograph Collection hotel will be situated in central AlUla, adjacent to the AlUla Museum and opposite the Farmer's Market. Plans for the hotel include 250 rooms and suites, and extensive recreational and entertainment offerings including four dining venues, a spa, a swimming pool, a fitness center, a business center, meeting facilities and retail space.

According to the Central Bureau of Statistics of West Manggarai Regency, the number of hotels in Labuan Bajo increased by 50% between 2016-2018, rising from 64 hotels with 1,030 rooms to 98 hotels with 1,462 rooms, making it one of Indonesia’s highest-growth territories in terms of hotel development.

More recently, the Central Bureau of Statistics of East Nusa Tenggara, the province where Labuan Bajo is located, reported that star hotels in the region have shown a strong growth in demand, with a 36% increase in first quarter of 2023 as compared to 2022.

Skyscanner Launches New Generative Ai Tool

Global travel marketplace Skyscanner has launched a new search discovery and inspiration tool, powered by generative AI. Called “Dream and discover with AI”, the tool is initially launching in beta in Australia, India, and Singapore to test traveller behaviour when it comes to using AI for trip planning, with other markets set to follow.

Powered by Open AI’s Chat GPT technology, travellers can ask open ended statements and questions such as “Best cities for cultural tours” or “What are some hidden gems in Europe?”. It also includes a variety of prompts ranging from “Short flights next weekend” to “Foodie city breaks”. The tool will then generate travel ideas and recommendations as well as three destination suggestions with links to the best flight options for each.

Unlike other generative AI travel tools and chatbots, imagery is combined with rich destination descriptions to highlight the unique characteristics of each suggestion. Upon deciding a destination, travellers are taken straight into Skyscanner’s flight search funnel to choose their flight.

22nd Chandiwala Hospitality Ensemble: Elevating Culinary Excellence

The much-anticipated 22nd Chandiwala Hospitality Ensemble is set to take the stage once again at the prestigious Banarsidas Chandiwala Institute of Hotel Management and Catering Technology, New Delhi. This remarkable event, is an appreciation of the constant evolution of hospitality industry, and is scheduled to take place from November 01, 2023 to November 03, 2023.

In just 24 years, our Institute has established itself as a beacon in the hospitality industry, producing adept managerial and technical professionals who are a valuable asset to the hotel industry.  The Chandiwala Hospitality Ensemble is a visionary initiative, generously supported by the industry, institutions, and hospitality organizations. Some of the event highlights will be- Theme-Based Traditional Indian Regional Cuisine, Traditional/Innovative Millet Culinary Challenge, International Culinary Challenge, Hospitality Brain Twister (Quiz Competition), Barwizard Bar Challenge, Chandiwala Floral Decoration and Towel Origami among many other events.

From weaving the magic with millets, reflecting innovation in culinary traditions, crafting culinary experiences rooted in the rich tapestry of Indian regional traditions to creating dishes that transcend borders, showcasing international flavors and techniques and dazzling with mixology expertise – the event promises to be a major event of the hospitality sector.

Institutes and colleges from across the length and breadth of nation are invited to nominate up to seven participants. Each team may be accompanied by one faculty member. Due to limited slots, early registration is highly encouraged, as participation will be capped at 30 institutes.

Scoot Awarded Best Low-Cost Carrier at TTG Travel Awards and Travel Weekly Asia Readers’ Choice Awards 2023

TTG Travel Awards 2023 – Best Low-Cost Carrier

The TTG Travel Awards is organised annually by TTG Asia and honours the best of Asia Pacific’s travel industry. Winners are determined through online voting by TTG publication readers and travel trade industry professionals.

The 32nd Annual TTG Travel Awards Ceremony and Gala Dinner was held in Thailand on 28 September 2023. This year marks Scoot’s third consecutive year in winning the award.

Travel Weekly Asia Readers’ Choice Awards 2023 – Best Low-Cost Carrier (Asia Pacific)

The Travel Weekly Asia Readers’ Choice Awards acknowledges excellence in the travel and hospitality industry. Winners were selected from votes casted by industry professionals based on overall excellence, professionalism, innovation and other criteria according to their area of expertise.

The award ceremony was held at Conrad Centennial Singapore on 3 October 2023. This is Scoot’s second win in the same award category.

 Earlier this year, Scoot was also named the “Best Low-Cost Long-Haul Airline” at the Skytrax World Airline Awards 2023. Since 1999, the World Airline Awards has been regarded as ‘the Oscars of the aviation industry’ and remains fully independent and impartial, with travellers of over 100 nationalities deciding on the winners via a passenger satisfaction survey.

Meliá Chiang Mai Strikes Gold at Thailand Tourism Awards

Meliá Chiang Mai, a 22-storey luxury hotel located in the heart of the northern Thai city, was last week presented a Thailand Tourism Gold Award, only one of four hotels in Thailand to receive the accolade and the only one outside the Thai capital.

The Thailand Tourism Awards – also known as the Kinnaree Awards – was initiated by the Tourism Authority of Thailand (TAT) in 1996, and recognises quality and excellence in the country’s tourism and hospitality sector. This year’s awards were held at the Samyan Mitrtown Hall in Bangkok on 27 September and were presided over by Her Royal Highness Princess Ubolratana who conferred prizes on the winners.

In addition to Meliá Chiang Mai, the other recipients of Thailand Tourism Gold Awards were: Millenium Hilton Bangkok; The Sukosol Bangkok; and The Okura Prestige Bangkok.

According to TAT, this year’s bi-annual award “strengthens awareness for responsible and sustainable tourism with two new categories – tour programmes, and low-carbon and sustainability – in addition to attraction, accommodation, and health and wellness tourism.”

The achievement of a Kinnaree Gold Award is all the more remarkable for the fact that Meliá Chiang Mai only opened its doors to guests in April 2022.

“We were very proud to receive this honour,” said General Manager Marc Selinger. “The fact that TAT recognizes that we can provide top-class facilities not just for leisure visitors but business travellers too, enhances the hotel’s prestige and helps put Chiang Mai firmly on the map.”
