  • 1/2 cup fresh curry  leaves

  •  2 tablespoons oil

  • 1 teaspoon mustard seeds

  • 1 teaspoon urad dal (black gram)

  • 1 teaspoon chana dal (split chickpeas) 

  • 2-3 dry red chilies, broken

  • A pinch of asafoetida (hing) Salt to taste

  • Instructions: 

  • Heat oil in a pan on medium heat. Add mustard seeds and let them splutter. 

  • Add urad dal, chana dal, dry red chilies, and asafoetida.

  • Fry until the dals turn golden brown. Add fresh curry leaves and sautรฉ until they become crisp.

  • Add the cooked rice and salt. Mix well, ensuring the rice is coated with the tempering.

  •  Remove from heat and serve hot. You can garnish with roasted cashews or peanuts if desired.

  • Curry Leaves Chutney (Karivepaku Pachadi) Ingredients:

  • 1 cup fresh curry leaves 1/2 cup grated coconut

  • 2-3 green chilies

  • 1 small onion, chopped 1 tablespoon oil

  • 1 teaspoon mustard seeds

  • 1 teaspoon urad dal (black gram) A pinch of asafoetida (hing)

  • Salt to taste Water, as needed

 

Instructions:

  • Heat oil in a pan and add mustard seeds. When they splutter, add urad dal and

asafoetida.

  • Fry until the dal turns golden brown.Add chopped onion, green chilies, and curry leaves.

  • Sautรฉ until the curry leaves wilt and the onions become translucent.Add grated coconut and sautรฉ for a couple of minutes.

  • Remove from heat and let it cool.Grind the sautรฉed mixture into a smooth paste, adding water as needed to achieve the desired consistency.

  • Add salt to taste and blend once more.Serve this flavorful curry leaves chutney with dosa, idli, or rice.

 

Curry Leaf Chicken Curry. Ingredients:

  • 500g chicken, cleaned and cut into pieces 

  • 2 cups fresh curry leaves, washed and dried

  •  2 onions, finely chopped

  • 2 tomatoes, chopped

  •  3-4 green chilies, slit

  • 1 tablespoon ginger-garlic paste 

  • 1 teaspoon mustard seeds

  • teaspoon cumin seeds

ยท        1/2 teaspoon turmeric powder

ยท        1 teaspoon red chili powder (adjust to taste)

ยท        1 teaspoon coriander powder

ยท        1/2 teaspoon garam masala powder

ยท        Salt to taste

  • 2 tablespoons oil 

  • Fresh coriander leaves, chopped (for garnish)

 

Instructions:

  1. Temper the Spices: Heat oil in a pan over medium heat. Add mustard seeds and cumin seeds. Let them splutter.

  2. Add chopped onions and sautรฉ until they turn golden brown.Add Aromatics: Add ginger- garlic paste and sautรฉ until the raw smell disappears. Add chopped tomatoes and green chilies.

  3. Cook until the tomatoes are soft and the oil starts to separate. Add Spice Powders: Add turmeric powder, red chili powder, coriander powder, and salt.

  4. Mix well and cook the masala until it releases oil from the sides of the pan. Cook the Chicken: Add the chicken pieces to the masala.

  5. Coat the chicken evenly with the spices. Cover and cook on low-medium heat until the chicken is tender and fully cooked. Stir occasionally to prevent sticking.

  6. Add Curry Leaves: Once the chicken is cooked, add fresh curry leaves to the curry. Let them simmer in the curry for a couple of minutes to infuse their flavor.

  7. Finish with Garam Masala: Sprinkle garam masala powder over the curry and give it a final stir. Adjust salt and spice levels according to your taste. Garnish and Serve: Garnish the curry with chopped fresh coriander leaves. Serve hot with rice, roti (Indian flatbread), or naan.

 

Curry Leaf Potato Fry

 

Ingredients:

  • 4 potatoes, peeled and diced

  • 1/2 cup fresh curry leaves

  • 1 teaspoon mustard seeds

  • 1 teaspoon cumin seeds

  • 1 teaspoon red chili powder

  • Salt to taste

  • Cooking oil

Instructions:

  1. Heat oil in a pan, add mustard seeds and cumin seeds.

  2. Add the curry leaves and sautรฉ until they turn crispy.

  3. Add diced potatoes, red chili powder, and salt. Cook until the potatoes are tender and crispy on the outside.

  4. Serve as a side dish.

 

Curry Leaf Rasam

Ingredients:

  • 1/2 cup fresh curry leaves

  • 1 small tomato, chopped

  • 1/2 cup tamarind pulp

  • 1/2 teaspoon black pepper

  • 1/2 teaspoon cumin seeds

  • 1/2 teaspoon turmeric powder

  • Salt to taste

Instructions:

  1. Grind the curry leaves, black pepper, and cumin seeds into a fine paste.

  2. In a pot, add the tamarind pulp, chopped tomato, turmeric powder, and salt. Bring to a boil.

  3. Add the groundpaste and simmer for a few minutes.

  4. Serve hot as a soup.

 

Curry Leaf Tea

Ingredients:

  • 10-12 fresh curry leaves

  • 1 cup water

  • 1 teaspoon honey (optional)

  • A slice of ginger (optional)

 

Instructions:

  1. Boil the water and add the curry leaves (and ginger, if using).

  2. Let it simmer for a few minutes.

  3. Strain into a cup, add honey if desired, and enjoy a soothing cup of curry leaf tea.

 

7. Curry Leaf Fish Curry

Ingredients:

  • 500g fish fillets

  • 1/2 cup fresh curry leaves

  • 1 onion, finely chopped

  • 2 tomatoes, chopped

  • 2 teaspoons ginger-garlic paste

  • 1 teaspoon cumin seeds

  • 1 teaspoon coriander powder

  • 1/2 teaspoon red chili powder

  • 1/2 teaspoon turmeric powder

  • Salt to taste

  • Cooking oil

Instructions:

  1. Heat oil in a pan, add cumin seeds.

  2. Add chopped onions and sautรฉ until they turn translucent.

  3. Add ginger-garlic paste and cook for a few minutes.

  4. Add chopped tomatoes, red chili powder, turmeric powder, coriander powder, and curry leaves. Sautรฉ until the tomatoes are soft.

  5. Add fish fillets and cook until they are done.

8. Curry Leaf Yogurt Dip

Ingredients:

  • 1 cup fresh curry leaves

  • 1 cup yogurt

  • 1/2 teaspoon cumin seeds

  • 2 cloves of garlic

  • Salt to taste

Instructions:

  1. Heat a pan, add cumin seeds and curry leaves. Sautรฉ until the leaves turn crispy.

  2. Allow the mixture to cool, then blend it with yogurt, garlic, and salt until smooth.

  3. Serve as a dip with chips or fresh vegetables.

 

9. Curry Leaf Lemonade

Ingredients:

  • 1/2 cup fresh curry leaves

  • Juice of 2 lemons

  • 4 cups water

  • 1/4 cup sugar or honey

  • Ice cubes

Instructions:

 

  1. Boil 2 cups of water and add curry leaves. Let it steep for 15-20 minutes, then strain and let it cool.

  2. In a pitcher, combine the curry leaf-infused water, lemon juice, sugar or honey, and remaining water.

  3. Stir well, add ice cubes, and serve as a refreshing drink.

 

 Curry Leaf and Tomato Chutney

 Ingredients:

  • 1 cup fresh curry leaves

  • 2 large tomatoes, chopped

  • 2 cloves of garlic

  • 2-3 dried red chilies (adjust to your spice preference)

  • 1 tablespoon cooking oil

  • Salt to taste

  • 1/2 teaspoon mustard seeds

  • 1/2 teaspoon urad dal (split black gram)

  • 1/2 teaspoon cumin seeds

Instructions:

  1. Heat oil in a pan and add mustard seeds, urad dal, and cumin seeds. Sautรฉ until they start to splutter.

  2. Add dried red chilies, garlic, and curry leaves. Sautรฉ for a few minutes until the curry leaves become crispy.

  3. Add the chopped tomatoes and cook until they turn soft and mushy.

  4. Allow the mixture to cool and then blend it into a smooth chutney. You can add a little water if needed.

November 2023: Amora Beach Resort Phuket receives extensive refurbishment costing THB 500 million (US$14 million) as part of its repositioning into a five-star modern lifestyle resort that meets the preferences of active and adventurous couples, friends and families. Located on an exclusive 80m stretch on Bang Tao Beach, the 264-key resort is expected to re-open in December this year with newly built facilities.

Mumbai, November 2023: F&B SaaS platform Fudr has announced a strategic partnership with Barista, one of the largest coffee chains in India with over 400 outlets. As part of this partnership,  Barista will be launching its rewards-based food ordering & payment app in Q3 2023. Fudr has also signed Zorawar Kalraโ€™s Massive Restaurants, which runs 20+ popular brands like Farzi Cafe, Pa Pa Ya, Louis Burger, to launch their super app for all the F&B brands under the umbrella. In addition, Hyderabad-based well-known F&B chain Ohris has also come onboard to launch their app for self pick up, ordering and loyalty cards for their speciality coffee brand Qaffiene.

INDIA, November 2023: Travel marketplace Skyscanner is today publishing a new report exploring the latest trends in global travel. Titled Skyscanner Horizons: 2023/4 destination and booking insights, the report unpacks and explores a combination of consumer survey and proprietary search and booking data to provide a unique view of how travellers are thinking about their plans for the next 12 months.

Survey data from 18,000 consumers in 15 markets reveals insights about key indicators such as travel propensity, spend, trip type, mobile device actions and the trip planning process, including the top sources of destination inspiration. Skyscanner search and booking data is overlayed to provide additional information about booking windows by haul type, trending destinations as well as snapshots of three important travel markets โ€“ India, Saudi Arabia and the USA.

The report also features exclusive expert commentary on these trends shaping recovery from industry thought leaders such as Hugh Aitken from Skyscanner, Centre for Aviationโ€™s Marco Navarria, and Nick Hall of Digital Tourism Think Tank.

With travel spend a key priority for consumers globally, destinations, along with their industry partners, must focus on value proposition more than ever. Honing in on what sits at the very core of the destinationโ€™s brand values is key to winning travellersโ€™ hearts. Yet, driving demand, with timely product proposition, is key to shaping decisions.โ€

Marco Navarria, Global Content and Marketing Director at CAPA said: โ€œAs highlighted in the 2023/24 Skyscanner Horizons report, travellers are increasingly opting for connections to smaller niche markets over the major tourist destinations of years gone by. Recovery from the pandemic has allowed airlines to rebuild and expand their networks to explore new and different locations. This willingness to venture into new routes and build new markets supported the rebuild of global capacity to pre-pandemic levels in 2023. There are increased expectations that airlines will go beyond this in 2024, connecting the globe better than ever before.โ€

Travel planning

โ€ข Positive outlook for 2024 in terms of travel demand, with 42% of travellers planning to travel more and 39% planning to spend more.

โ€ข Globally, the expected number of trips is set to increase to 2.7 from 2.3.

โ€ข Insurance, seat selection, food, baggage, and lounge are the top flight ancillary requests. 20% of travellers surveyed also indicated a willingness to upgrade to business or first class.

โ€ข Airfares (30%) and hotel (21%) costs are the biggest decision-making factors in travel planning.

โ€ข Travellers surveyed highly engaged on mobile devices in the travel planning and booking process, researching destinations (48%), comparing flight and hotel options (47%), booking (40%), with a fifth (22%) having used an AI chatbot.

Destination planning

โ€ข Cultural experiences top the 2024 agenda, with destination choice influenced not by just the weather (60%), food (58%) and culture (54%), but the overall โ€˜vibeโ€™ (41%).

โ€ข In-destination activities also play a role, in particular local cuisine (46%), sightseeing (42%) and beach (40%).

โ€ข Globally, YouTube is the top source of travel inspiration, followed by word-of-mouth recommendations (35%) and Instagram (33%), however there are big variations by market. Guidebooks (27%) and TikTok (21%) also feature.

โ€ข Skyscanner has identified seven travel vibes and trip types that travellers are seeking in 2024: gig tripping, main character energy, budget bougie foodie, destination zzz, analogue adventurers, celebration vacationers and lux-for-less seekers.

Booking windows

โ€ข EMEA travellers are booking flights further in advance, with most booking over 90 days ahead for both short-haul and long-haul trips.

โ€ข AMER travellers are booking further ahead for long haul, with 90+ day booking windows exceeding 2022 levels.

โ€ข APAC travellers show greater volatility in short-haul booking windows compared to other regions. For long-haul flights, there's been a surge in last-minute bookings.

Trending destinations

โ€ขEMEA travellers are seeking out smaller hidden gems away from larger cities. Top destinations include Rayong (Thailand), Ouarzazate (Morocco), Pristina (Kosovo), and Klagenfurt (Austria).

โ€ขAMER travellers are looking towards Asia and island getaways. Top destinations include the Cayman Islands, French Polynesia, Osaka (Japan), and Tokyo (Japan).

โ€ขJapanese destinations dominate the top 10 list for APAC travellers with six cities featuring. This is evident of Japan's recent bounce back after lifting its COVID restrictions

ITDC posts big jump in Revenue and Profits during half yearly financial results (2023-24)

India Tourism Development Corporation (ITDC), the public sector undertaking under the aegis of the Ministry of Tourism is delighted to announce a big jump in H1 turnover. Following its remarkable financial performance in FY 2022-23, ITDC continues to demonstrate impressive results in H1 2023-24. The total turnover for the H1 of the year 2023-24 stood at Rs. 246.66 Cr, representing a substantial increase of over 32% compared to the corresponding period of last financial year.

The Profit Before Tax (PBT) for the H1 of the FY 2023-24 reached Rs. 50.87 Cr as compared to Rs. 33.22 Cr for corresponding period of last FY, a growth of over 53% whereas, PAT during this H1 stood at Rs. 37.42 Cr as against Rs. 23.29 Cr for H1 of the last FY. As against last quarter (Q1), the turnover and PAT this quarter (Q2) also grew by 11% and 10% respectively.

1.Papdi Chaat

Ingredients:

ยท        20-25 papdis (crispy deep-fried flour discs)

ยท        1 cup boiled and mashed potatoes

ยท        1/2 cup boiled chickpeas

ยท        1/2 cup finely chopped onions

ยท        1/2 cup chopped tomatoes

ยท        1/4 cup sweet tamarind chutney

ยท        1/4 cup green chutney (made with mint and coriander)

ยท        1/2 cup yogurt

ยท        1/2 teaspoon red chili powder

ยท        1/2 teaspoon roasted cumin powder

ยท        Salt to taste

ยท        Chopped coriander leaves for garnish

ยท        Sev (crispy chickpea flour noodles) for garnish

Method:

ยท        Arrange the papdis on a serving plate.

ยท        Top each papdi with mashed potatoes, chickpeas, onions, and tomatoes.

ยท        Drizzle sweet tamarind chutney and green chutney over the toppings.

ยท        In a bowl, mix yogurt with red chili powder, roasted cumin powder, and salt. Spoon this mixture over the papdis.

2. Thandai: Traditional Indian Drink

Ingredients:

ยท        1 cup almonds

ยท        1/4 cup cashews

ยท        1/4 cup pistachios

ยท        2 tablespoons poppy seeds

ยท        1 tablespoon melon seeds

ยท        10-12 black peppercorns

ยท        1/2 teaspoon fennel seeds

ยท        1/2 teaspoon cardamom seeds

ยท        A pinch of saffron strands

ยท        1 cup sugar

ยท        4 cups milk

Method:

ยท        Soak almonds in hot water to peel them. Grind almonds, cashews, pistachios, poppy seeds, melon seeds, black peppercorns, fennel seeds, cardamom seeds, and saffron strands into a fine paste.

ยท        Boil the milk and add sugar, then let it cool.

ยท        Mix the nut paste with the milk and refrigerate for a few hours.

ยท        Serve chilled.

3. Aloo Tikki

Ingredients:

ยท        4 medium-sized potatoes, boiled and mashed

ยท        1/2 cup bread crumbs

ยท        2 tablespoons cornflour

ยท        1 teaspoon red chili powder

ยท        1 teaspoon garam masala

ยท        Salt to taste

ยท        Oil for frying

Method:

ยท        In a bowl, combine mashed potatoes, bread crumbs, cornflour, red chili powder, garam masala, and salt.

ยท        Shape the mixture into small, flat patties or tikkis.

ยท        Heat oil in a pan and fry the tikkis until they are golden brown and crispy on both sides.

ยท        Serve hot with chutney.

4. Veg Biryani

Ingredients

ยท        1 cup basmati rice

ยท        1.5 cups mixed vegetables (carrots, peas, beans, etc.)

ยท        1 onion, sliced

ยท        2 tomatoes, chopped

ยท        1/4 cup plain yogurt

ยท        2 tsp biryani masala

ยท        1/2 tsp turmeric powder

ยท        1/2 tsp garam masala

ยท        2 cups water

ยท        Salt to taste

Instructions:

ยท        Rinse the rice and soak for 30 minutes.

ยท        In a large pot, heat oil and sautรฉ the onions until golden.

ยท        Add vegetables, spices, and yogurt. Cook for a few minutes.

5. Dal Panchmel

Ingredients

ยท        1/4 cup tuvar dal (split pigeon peas)

ยท        1/4 cup chana dal (split Bengal gram)

ยท        1/4 cup moong dal (split green gram)

ยท        1/4 cup urad dal (split black gram)

ยท        1/4 cup masoor dal (red lentils)

ยท        1 onion, finely chopped

ยท        2 tomatoes, chopped

ยท        1 tsp cumin seeds

ยท        1/2 tsp turmeric powder

ยท        Salt to taste

Instructions

ยท        Wash and soak all dals for 30 minutes.

ยท        In a separate pan, heat oil, add cumin seeds, and sautรฉ onions.

ยท        Add tomatoes, spices, and cooked dal. 

ยท        Simmer for a few minutes.

6. Malai Kofta Curry

Ingredients

For Koftas:

ยท        2 cups mashed paneer (cottage cheese)

ยท        1/4 cup grated potatoes

ยท        1/4 cup grated carrots

ยท        1/4 cup all-purpose flour

ยท        Salt, pepper, and garam masala to taste

For Curry:

ยท        1 cup tomato-onion paste

ยท        1/2 cup fresh cream

ยท        1/2 tsp ginger-garlic paste

ยท        1 tsp garam masala

ยท        Salt and sugar to taste

Instructions

ยท        Mix kofta ingredients, shape into balls, and fry until golden.

ยท        In a separate pan, heat oil, add ginger-garlic paste, and sautรฉ tomato-onion paste.

ยท        Add spices and cream. 

ยท        Simmer and add koftas.

7. Missi Roti

Ingredients

ยท        1 cup besan (gram flour)

ยท        1 cup whole wheat flour

ยท        2 tbsp oil

ยท        1 tsp ajwain (carom seeds)

ยท        Salt to taste

ยท        Water for kneading

Instructions

ยท        Mix both flours, oil, ajwain, and salt.

ยท        Knead into a soft dough using water.

ยท        Roll into rotis and cook on a hot griddle.

8. Gulab Jamun

Ingredients

ยท        1 cup milk powder

ยท        1/4 cup all-purpose flour

ยท        1/4 cup ghee (clarified butter)

ยท        1/4 cup milk

ยท        1/4 tsp baking soda

For Sugar Syrup:

ยท        Sugar, water, cardamom, and rose essence

ยท        Mix milk powder, flour, ghee, baking soda, and milk to form a smooth dough.

9. Rabdi Malpua

Ingredients

For Malpua:

For Rabdi:
