LIMITED TIME DEHLNAVI CUISINE POP-UP MAKES WAY WITH VISITING CHEFS  AT ITC MARATHA & ITC GRAND CENTRAL

ITC Hotels have consciously carried the culinary-advocacy of heritage and modernist India; through an ever-evolving research on native dining experiences that transcends the anecdotal to actual achieved through the scrupulous supervision of groups Master Chefs.

This time the group is taking the iconic Dehlnavi trail all around India, with its multicity culinary tour bringing the cross-border melange of erstwhile Capital City- in a handpicked curation of unaltered taste influenced from Mughal, Baniya, Kayasth, Punjab and many more. Served at homes, by food carts or at the high table, Delhi’s flavours, like her unique gharana, tells the story of the city. Successive settlers have invested the city with their own heirloom flavours and sense of urbanity.

The four-day Dehlnavi trail dinner pop-up in Mumbai can be enjoyed ITC Maratha at Sahar Andheri East and ITC Grand Central Dishes at Parel in its award-winning restaurants Peshwa Pavilion & Hornbys Pavilion respectively giving an ease proximity access to gourmet enthusiast from North, Central and South districts of Mumbai. The culinary showcase is led by cuisine authority Chef Rais – ITC Maurya & Chef Mofid – Welcomhotel Sheraton New Delhi  Hotel to Mumbai.

The food trail will start off with chaats such as papdi chaat, and the unique kulle ki chaat, Bhe ke Kebab, Tulsi ke kebab from the walled city. Kulle ki chaat, for the unversed, is made by scooping out the centres of boiled potatoes, sweet potatoes or summer specials like watermelons, and filling them with a mixture of chickpeas, pomegranate seeds, spices, and tangy chutneys. The stuffed potatoes or watermelon are then garnished with a variety of toppings such as sev, coriander leaves, and chaat masala, which is a spice blend commonly used in Indian cuisine.

Besides the chaats, Dehlnavi cuisine trail will also feature kebabs and fish fry. While bhey ke kebab or lotus stem kebabs will stand true to the earnest effort for uniqueness, the other offerings on Purani Dilli Fried Chicken and Fish Fry will reflect the vast diaspora of Mughlai kebabs and street foods of Delhi.

The main course, however will remain the highlight of the fare and perhaps for the first time ever, the vegetarian side will seem more enticing with Dal Dehlnavi served with a crisp biscuitty roti will catch your fancy. Imagine the tantalizing fragrance of slow-cooked moth and split moong dal, infused with the pungency of chopped chillies, roasted cumin, and ginger juliennes. As you dip the sweet, biscuit-like roti into the creamy and thick textured dal, a heavenly blend of flavours dances on your taste buds.

The nimona pulao will be as intriguing as the dal and biscuitty combination, since the usual nimona pulao has green peas (matar), it is given a unique spin with matar stuffed inside the salan mirchis! The matar paneer naize would be the perfect nod to rustic flavours and a smooth, creamy-like texture thanks to the pine nuts. The chatpate soya charra aloo mime the mock meat hype in Mughal corterie introduced by Bania community. While kunni dal which is slow cooked on a gentle flame with a blend of Bengal gram and black lentils is infused with a handful of secret spices and a hint of garlic, is sure to comfort you to no end.

The non-vegetarian fare on the other side will be as royal as it could get. Expect the all-time favourite Dilli Butter Chicken in luscious gravy with a velvety texture and an indulgent buttery taste that coats the tongue. The juicy and tender boneless chicken pieces perfectly cooked and complemented the buttery goodness of the dish, will guarantee a lasting impression on the taste buds. The extravagant Nihari and Gosht Pulao too irresistibly delicious and added the perfect touch of Mughlai to the unforgettable experience.

The dessert platter will be the perfect conclusion to the hearty meal – full with Barf Ki Handi and decadent kheer (Khurchan) and gulab jamun.

Raffles Hotels in Cambodia Host Exclusive International Champagne Sabrage Ritual

PHNOM PENH, Cambodia (February 2023) — The worldwide organization dedicated to the noble art of Champagne sabrage will host two exclusive events in Cambodia next month with 5-star Raffles hotels, including at Raffles Hotel Le Royal in Phnom Penh and, for the first time ever, at Raffles Grand Hotel d’Angkor in Siem Reap.

Confrérie du Sabre d’Or is internationally renowned among Champagne aficionados for the ritual, which involves severing the top of the bottle with a sword. Champagne sabrage dates to the era of French emperor Napoleon Bonaparte, who is said to have cherished a drink of Champagne from bottles newly opened with a military saber after every winning battle.

Raffles is the only establishment in Cambodia where one can experience the official ceremony and has scheduled two exclusive events in March.

Raffles Hotel Le Royal’s Restaurant Le Royal on Friday, March 17 will serve a special four-course French menu with Champagne pairing priced at $145++ per person. Each guest is invited to saber a bottle of Champagne and officially join the Confrérie du Sabre d’Or. This will mark the second time the ceremony has been held at the hotel; the first occurred in 2019.

Raffles Grand Hotel d’Angkor on Sunday, March 19 will host the ceremony for the first time ever, with a luxurious brunch at Café d’Angkor including live music. The event is priced from $55++ per person or $95++ with free flow Champagne.

Established more than 200 years ago by stylish young French military officers, the traditional sabrage ceremony will be conducted by the Grand Master of La Confrérie du Sabre d’Or in the historic Raffles properties.

The master holds a bottle of Champagne by the heel, then slides his or her sword up and down the neck of the bottle to warm it. Then, in a single smooth movement, the master accelerates his or her arm forward, sliding the saber firmly along the neck of the bottle and—hopefully—decapitating the ring, or top neck of the bottle, and sending a gush of Champagne all over the floor and sometimes fellow guests.

Four Season Hotel Bengaluru - An evening of Christmas Cheer Of Ballet, Jazz, Giving And Celebrating

AN EVENING OF CHRISTMAS CHEER Of Ballet, Jazz, Giving, And Celebrating

Bengaluru, December 2022:  As the year winds down to a close it’s time to slow down, pause and revel in the bounty of the season. Four Seasons Hotel Bengaluru has curated a special evening of Jazz, Ballet, and the traditional Tree Lighting Ceremony on Thursday, 8th of December 2022 with the spirit of giving as its cornerstone.

The evening opens with the traditional tree lighting ceremony at CUR8, a ceremonial usherer of the festive season. The Grand Ballroom then becomes the venue for a scintillating evening of ballet by Love Kotiya, an exceptional 17-year-old talent from Faridabad, India, who has trained in classical ballet at the Imperial Fernando Ballet Company (IFBC) in New Delhi under the Argentine Maestro, Fernando Aguilera and Penelope Scarian, an Italian dancer and graduate of ENBS, from Imperial Fernando Ballet Company.

Interspersed with the ballet performances, there will be soulful music by MoonArra Jazz Trio followed by a celebration of food and beverage curated by by the chefs and mixologists of Four Seasons.

‘Four Seasons Hotel Bengaluru is delighted to be showcasing an evening of culture and art for a noble cause. Our traditional tree lighting ceremony will open an elegant evening of festive celebrations with a befitting signing off on the culinary side, by our team of talented chefs. It is our constant endeavour to create memorable experiences for our guests and this evening will be the perfect way to draw a curtain on this year.’ summed up Reuben Kataria, General Manager.

About Love Kotiya

Love Kotiya is a 17-year-old ballet dancer from the Imperial Fernando Ballet Company (IFBC) in New Delhi, India. A few months ago he auditioned for and was accepted to the English National Ballet School. This may sound unremarkable but, nothing short of a leap to a different universe for this young lad from Faridabad, in the outskirts of New Delhi. Until two years ago he had never been in a ballet studio or a theatre, let alone on a plane or in a foreign country. His mother is a widow who makes a modest living as domestic worker, and a ballet training would have been completely out of his league. Yet, he was spotted by a generous teacher, Maestro Fernando Aguilera who saw passion and potential in this young boy. He trained with diligence every day, from morning to evening, through lockdowns and uncertainty, to reach the level he’s arrived at. His talent shone during a visit to London and he was accepted at the prestigious English National Ballet School. However, the yearly fees of 20,000 pounds still seems unattainable, except for the generosity of donors who are inspired by his talent.

Marriott International Set to Expand Portfolio With Expected Addition of 30 Select Service Hotels in Greater China by the End of 2023

The company’s “Brand + Destination” strategy in Greater China is expected to capture robust travel demand by matching destinations with brand debuts and entries

Marriott International, Inc., today announced plans to expand its select service portfolio in Greater China with the expected addition of 30 hotels in the segment by the end of 2023. The additions are fueled by the strong demand for Marriott’s select service accommodations in emerging destinations and complement an existing portfolio of more than 460 properties in the region. Marriott’s select service portfolio currently includes the following brands spanning across 67 cities in Greater China: Moxy Hotels, Fairfield by Marriott, Courtyard by Marriott, Four Points by Sheraton, AC Hotels by Marriott, Aloft Hotels, and Element Hotels.

Marriott’s portfolio of 30 extraordinary hotel brands offers unique brand choices to capture changes in consumer needs and characteristics across different destinations. The expansion of the select service portfolio in the region will elevate consumers’ travel choices in China’s second-and third-tier cities, such as Foshan and Changchun, while expanding its presence in first-tier cities like Shanghai.

“Representing over 50 percent of Marriott International hotels expected to open in Greater China across 2022 and 2023, our select-service brand portfolio is a growth engine for the company as we continue to expand,” said Gavin Yu, Chief Development Officer, Greater China, Marriott International. “With a well-defined ‘Brand + Destination’ development strategy, we see great growth potential in providing approachable and moderately priced choices across emerging destinations. We plan to continue to work with our owners and franchisees to enhance our select-service brands portfolio through new-builds and conversions in destinations where our guests aspire to travel."

The company is also enhancing its strategic positioning in Greater China through dual-brand projects and its franchise-plus model. The unique design of the dual-brand model will accommodate travelers’ growing desires for flexible accommodation by offering consumers more choices. In 2022, the company signed six dual-brand hotel projects representing 14 hotels, among which three are under the Fairfield by Marriott brand and two under the Four Points by Sheraton brand. With the franchise-plus model, Marriott helps to streamline hotel openings and initial stage operations and uphold brand quality. The model involves Marriott working closely with franchisees and recommending candidates for the initial general manager who, once employed by the franchisee, works toward the hotel opening and throughout the initial year of operations by leveraging Marriott’s supports, system, and resources.

Upcoming anticipated openings across Greater China include:

The highly anticipated brand debut of AC Hotels by Marriott in Suzhou is expected to welcome guests in December 2022 with a sleek, purposeful hotel design that offers an effortless experience to provide guests with everything they need. Travelers heading to iconic destinations such as Chengdu and Wuhan can soon enjoy AC Hotels’ refined experience through seamless service, curated furnishings and artwork, and thoughtful programming.

The energetic Moxy Hotels brand, which currently has six existing hotels in five Chinese cities including Shanghai, Shenzhen, Xi’an, etc., is set to bring its “Play On” spirit to more cities through its anticipated debut in Suzhou and Xi’an. Preparing for its future entry into Chongqing and Ningbo, Moxy Hotels is expected to introduce a Chinese version of its design prototype, incorporating local influences into its vibrant, social interior spaces to offer guest experiences that are always buzzing with high energy.

Evoking the feelings of calming simplicity, Fairfield by Marriott brings comfort to travelers who look for quality and value with its contemporary and uplifting design inspired by natural surroundings. The opening of the brand’s 150th hotel in Greater China — Fairfield by Marriott Hangzhou Xihu District — earlier this year marked the company’s ambition to extend diversified, affordable travel experiences and products to guests. In 2023, 10 Fairfield by Marriott hotels are expected to enter several niche destinations in eastern China, including the county-level cities Kunshan and Zhuji, which are the respective origins of Kunqu Opera and Wuyue culture.

The trailblazing Courtyard by Marriott brand expects to celebrate its 50th hotel milestone in the Chinese market in the middle of 2023, with anticipated property additions in Chongli, the location for skiing events during the 2022 Winter Olympics, as well as in Jiuzhaigou, a nature reserve designated by UNESCO as a World Heritage Site. The hotels will allow guests to escape to hidden gems across the country and offer an inviting hospitality experience for business and leisure guests to smoothly shift from work to relaxation.

Four Points by Sheraton, with the most robust share of Marriott’s select-service pipeline in Greater China, enables guests to kick back and relax while enjoying the brand’s signature Best Brews® program offering local beers on-tap. The brand expects to accelerate its growth in Greater China with over five planned openings in 2023. Four Points by Sheraton will offer an authentic sense of the local culture paired with friendly, genuine service to allow guests to unwind in a casual environment.

The future-focused brand for music enthusiasts and tech-savvy travelers, Aloft Hotels, is set to expand its footprint in 2023 with two hotel openings in Beijing and Yantai. The brand will deliver a “different by design” experience to bring people together through a lively social scene and innovative music programming.

In addition, travelers will soon be able to immerse themselves in a well-balanced and nature-influenced environment with the planned opening of Element Hotels in Guangzhou Baiyun in 2023.

Marriott International is well-positioned in Greater China with over 460 existing properties, spanning 23 brands in 120 cities and destinations. With a vision to deliver a one-of-a-kind travel experience, Marriott is committed to inspiring travel and connecting with guests through its award-winning travel program, Marriott Bonvoy, and its unparalleled portfolio of 30 leading brands.
