MICHELIN-starred restaurant wows guests with “our kitchen is your dining table” concept

PHUKET, Thailand October PRU, the only restaurant in Phuket to have ever received the prestigious Michelin star, will give guests front-row seats to the best of Thailand when its new kitchen premieres on November 1.

Helmed by Executive Chef, Jimmy Ophorst, PRU has blazed a trail for sustainable fine dining in Thailand. And the “Inside-Out” experience, housed in a new purpose-built restaurant, dissolves the traditional wall between the kitchen and the dining room.

With an open kitchen encouraging connections with guests, diners will be able to see how each morsel is prepared, thereby providing complete transparency to the culinary process.

“We’ve been inspired by the kappo style of service, where the formality between the chef and his guests are eliminated as the chef ‘cuts and cooks’ the freshest seasonal ingredients based on interactions with each guest,” said Ophorst. “We adopted the philosophy in the new restaurant design to create the Inside-Out experience and bring our guests closer to the best ingredients Thailand has to offer.”

Honey Carrot Kheer

Method:                                                     

  • Put the pan on low-medium heat and saute the carrots in ghee for a few minutes.

  • Add sugar and water and cook until the carrots are soft and tender.

  • Now add milk and keep it on the boil for a few minutes.

  • Now add your cashew nuts and cardamom and serve it hot. (You can also serve carrot kheer cold based on your liking!).

    Method:

    • In a wok mix grated coconut or khoya with sugar or jaggery and place it over low flame. If making with khoya, add little milk.

    • Add cardamom in it.

    • Keep stirring the mixture till it gets sticky. Keep aside to cool. The process will take 15-20 minutes.


    Patishapta

Prepare the patishapta:

  • Take maida, sooji, and rice flour in a bowl.

  • Add milk. Mix it carefully not making any lumps. Keep the mixture for half an hour.

  • Heat the non stick pan. Put a little oil. Pour a thin layer of the mixture on it and spread it quickly with the laddle.

  • Put the filling lengthwise at the center of it and roll it. Wait till the colour is light brown.

  • Place it on the plate. Serve hot or cold.

  • You can pour condensed milk over it before serving

 Sevai with stevia

Method:

  • Take 1 litre of milk in large surface pan and cook it on medium flame. Continuously stir the milk to avoid stickiness of the milk particles to the bottom of the pan.

  • Add wheat vermicelli to the boiling milk.

  •  Once Vermicelli comes to boil after 8-10 mins, add 40g of 4 4. Magic leaf stevia sweetener to the boiling milk and mix it well.

  • When the vermicelli softens and floats on the top, add the ¼ teaspoon of cardamom powder and mix it well.

  • The vermicelli kheer is ready to serve. Serve it chilled or hot


Maple gulab jamun

Method :

  • Prepare A Flour Dough

To start making this unique sweet delicacy first, mash the khoya and mix it in the flour and baking soda and knead into firm dough.

  • Give The Dough Ball Shape And Deep Fry

Next, shape the dough into smooth marble-sized balls. Now, take a kadhai on low heat and heat the ghee. Add balls of dough to the ghee and fry until they turn light brown. Keep aside.

  • Make Maple And Milk Syrup

In another pot bring maple syrup and milk to boil on high flame. Do not stir. Cook till syrup thickens a bit and let it cool for about 30 mins.

Strain The Syrup, Add Cardamom And Boil Again

Next, strain the prepares syrup through a fine nylon sieve or muslin cloth, add cardamom and bring syrup to a boil again.

Add Gulab Jamuns To The Syrup And Serve

Finally, in the syrup Add the fried gulab jamuns and put off the heat. Let jamuns soak for at least half an hour before serving.

Method : 

  • Roast Sunflower seeds, almonds, cashews, black currants, magaj seeds, pumpkin seeds in a pan. In a bowl combine all together.

  • Take the dates in a bowl and remove the date seeds and take the dates in a mixer bowl and grind it.

  • Heat ghee in a pan and fry the date paste on low flame. When the date paste starts to come out from the pan, turn off the heat and add it to the dryfruit mixture in the bowl.

Marriott International, Inc. announced it has signed a Hotel Management Agreement with Indonesian real estate developer, PT. Pakuwon Jati Tbk. to open three properties in Indonesia’s new capital city, Ibu Kota Negara Nusantara. The multi-deal agreement was signed by President and CEO of Marriott International Anthony Capuano and President Commissioner of PT. Pakuwon Jati Tbk. Alexander Tedja.

“We are thrilled to be working with PT. Pakuwon Jati Tbk. on this landmark agreement,” said Ramesh Jackson, Area Vice President, Indonesia and Malaysia, Marriott International. “This milestone signing underscores our commitment to strategically expand our footprint in Indonesia, and we are pleased to also support the local government’s efforts to accelerate the country's economic transformation especially with the designation of Indonesia’s new capital city in Nusantara.”

Concentrating on one harvest per year the winemakers imposed a selective approach that allows focus on the quality, freshness and integrity of the grapes. This delightful event served as a warm welcome to the forthcoming Christmas and New Year celebrations, setting the stage for a season filled with good tidings and happiness.  The grape stomping festivities kicked off with great enthusiasm, as guests dipped their feet into barrels brimming with ripe grapes, marking the traditional start of the festive season Novotel Hyderabad Convention Centre’s team gracefully escorted guests to a beautifully adorned mixing table, showcasing a delightful assortment of ingredients, including Black currant, Golden Apricot, Rum Soaked Figs, Drunk Resins, Dates, Candied Orange Peel, Candied Ginger, Dry Cherries, and more.
