New Delhi, December 2023: Vistara, India’s finest full-service carrier and a joint venture of Tata Group and Singapore Airlines will boost international connectivity from Mumbai by increasing frequencies to two popular international destinations - London Heathrow and Singapore. The airline will increase the flight frequency between Mumbai and London Heathrow, from 4x weekly to daily flights, starting 1 March 2024. Additionally, Vistara will introduce a second daily flight between Mumbai and Singapore from 1 February 2024, using its A321neo aircraft. Vistara also operates daily flights between Delhi and London Heathrow and flies daily to Singapore from Delhi and 6x weekly from Pune. Bookings for the flights are open on all channels, including Vistara’s website, mobile app, and through travel agents.

Vistara connects Mumbai to a total of 14 international destinations, including Abu Dhabi, Bangkok, Colombo, Dammam, Dhaka, Doha, Dubai, Frankfurt, Jeddah, London Heathrow, Male, Mauritius, Muscat, and Singapore.

- 1/2 tsp urad dal (black gram)

- 1/2 tsp chana dal (split chickpeas)

- A pinch of asafoetida

- 1-2 tbsp oil

- Salt to taste

Method:

1. Heat oil in a pan and add mustard seeds. When they splutter, add cumin seeds, urad dal, and chana dal.

2. Add dried red chilies and asafoetida. Sauté for a minute.

3. Add chopped tomatoes and cook until they become soft and pulpy.

4. Cool the mixture, then blend it into a smooth paste. Add salt to taste.

2. Coconut Chutney (Kerala):

Ingredients:

- 1 cup grated coconut

- 2-3 green chilies

- A small piece of ginger

- 1/2 cup yogurt

- Salt to taste

- For tempering: oil, mustard seeds, curry leaves, and urad dal

Method:

1. Blend coconut, green chilies, ginger, and yogurt to a fine paste. Add salt.

2. Prepare tempering by heating oil, adding mustard seeds, urad dal, and curry leaves. Pour over the chutney.

3. Peanut Chutney (Gujarat):

Ingredients:

- 1 cup roasted peanuts

- 2-3 green chilies

- 1/2 tsp cumin seeds

- A small piece of tamarind

- Salt to taste

Method:

1. Blend roasted peanuts, green chilies, cumin seeds, and tamarind into a coarse paste.

2. Add salt to taste.

4. Pudina Chutney (Punjab):

Ingredients:

- 1 cup fresh mint leaves

- 1/2 cup fresh coriander leaves

- 2-3 green chilies

- 1 small onion

- 1 tsp lemon juice

1. Blend mint leaves, coriander leaves, green chilies, onion, and lemon juice into a fine paste.

2. Add salt to taste.

5. Date and Tamarind Chutney (Rajasthan):

Ingredients:

- 1 cup pitted dates

- 1/2 cup tamarind pulp

- 1/2 cup jaggery

- 1 tsp cumin powder

- 1/2 tsp red chili powder

- Salt to taste

Method:

1. Combine dates, tamarind pulp, and jaggery in a saucepan. Cook with some water until they soften and form a thick paste.

2. Add cumin powder, red chili powder, and salt. Simmer for a few more minutes until the chutney thickens.

6. Thecha (Gunpowder chutney) (Maharashtra)

Ingredients:

1 cup dried red chilies

1/2 cup roasted peanuts

1/4 cup roasted sesame seeds

4-5 cloves of garlic

A small piece of tamarind

Salt to taste

2-3 tablespoons oil

Method:

Roasting: Dry roast the dried red chilies in a pan until they become crisp. Set them aside to cool.

Blending: In a blender or food processor, combine the roasted chilies, roasted peanuts, roasted sesame seeds, garlic, tamarind, and a pinch of salt.

Grinding: Grind the mixture until it reaches a coarse, grainy texture. Don't make it too fine; you want to retain some texture and crunch.

Tempering: In a separate pan, heat the oil. Add a bit of mustard seeds and curry leaves for added flavor. Once they start to sizzle, pour this tempering over the chutney and mix well.

Indian Chef Zareen Shaukat Beams With Pride After Bagging Fourth Spot At World Tapas Competition 2023 In Spain

Mumbai: There is just something about Indian food that people from all corners of the world find hard to resist and to see our cuisine getting appreciated on the global front is all the more gratifying. Taking our desi flavours global recently is the Indian pastry chef Zareen Shaukat who stood fourth in the World Tapas Competition 2023 Competition held in Spain. She gave an Indian twist with her pastry skills to the Spanish delicacy of Tapa and made Murgh Makhani Mille Feuille which was immensely loved by the jury.

Zareen opted for Murgh Makhani AKA butter chicken as the main dish for the competition as it perfectly represents our country’s taste, colour and vibrancy. Elaborating more about her dish, Zareen said, “Since it was a Tapa-making competition, the dish had to be bite-sized. I added a burst of flavour to it by incorporating components like mint caviar, onion & beetroot viel & papadums”. Zareen Shaukat gave a Spanish-Indian fusion touch to the dish by making smoked saffron labneh as saffron is also a culinary favourite in the former country’s cuisine adding to the ode to the amalgamation of cultures. She also showed her pastry skills by adding puff pastry as her base.

Representing India on a global platform is always a momentous occasion. Zareen beamed with pride as she bagged fourth place in this competition, and went to the stage to collect her trophy by waving the Indian national flag. Being selected for this global competition that had top chefs from 16 countries is indeed a huge feat, and Zareen impressed the jury with her Spanish-Indian fusion dish that also had a perfect blend of savoury flavours

ITC Maratha, Mumbai debuts Yi Jing- A Concept Dining Chinese Restaurant From the stables of ITC Hotels

Mumbai, December 2023: Yi Jing, the latest addition to the dynamic fine-dining offerings at ITC Maratha, in Mumbai, has officially opened its doors to immerse patrons in flavors inspired by the evolving transborder cuisine of China. Helmed by the veteran Executive Chef Liang Xiao Qing; Yi Jing is the 4th outpost of Chinese concept dining curation by ITC Hotels; with a special focus on reimagined flavors from Sichuan and Hunan.

Situated on the lobby level; the restaurant spans over 4250 sq ft with a split-level design becoming a maximalist haven that seats 90 plus guests. The expansive dining space has four zones – Demonstration kitchens for ‘Wok Hei’, Dimsum & Hand Pulled Noodle bay at an elevation, an arched bar, and two private dining rooms. Envisioned to be a ‘Celebration of Gourmet Theatrics’, the brightness of red accents in the restaurant seen on wallpapers & chairs, is intercepted with repurposed jute pendant lamps adding to the elevated mood.

Marriott International Becomes First Hospitality Company to Introduce Neuroinclusive Practices at Its Largest Customer Events

Leveraging work from Google Xi’s The Neu Project, Marriott strives to create a more inclusive experience for meeting attendees

Marriott International, Inc., a hotel industry leader for more than 95 years, today announced its commitment to incorporate neuroinclusive practices at Marriott-hosted customer events of 250 people or more globally. This commitment is a result of joining forces with The Neu Project, an initiative from Google’s Experience Institute (Xi) that aims to share resources designed to better accommodate and create a more inclusive experience during meetings and events for neurodivergent attendees. These practices are initially being previewed at Marriott’s Corporate Partnership Customer Conference, THE EXCHANGE, currently taking place November 28 through December 1, 2023 at the JW Marriott Desert Springs Resort & Spa in Palm Springs, CA.

Approximately 15-20 percent of the world’s population has neuro differences, including ADHD, obsessive-compulsive disorder, autism, dyslexia, epilepsy, and Tourette Syndrome.* In 2022, the Google Experience Institute launched The Neu Project in order to demystify and educate event professionals on the design of more neuroinclusive experiences through a helpful guide and checklist.

The following neuroinclusive practices will be incorporated at Marriott-hosted customer meetings and events of 250 people or more:

Quiet Room: A dedicated room will be available during Marriott customer events for recovery from sensory overwhelm, restoration and regulation. Designed to foster the physical, emotional, and mental well-being of attendees, the room will serve as a calming retreat where guests can break from the event to manage fatigue, overload and/or sensory needs.

Tools and Resources: At registration, event attendees will have the opportunity to request various tools to better accommodate their needs, including sensory & fidget toys, noise canceling ear plugs, sleep masks, sunglasses, printed agendas and venue maps, and details about loud music, flashing lights or surprise moments taking place during the event.

Closed Captioning for Main Stage Presentations: Real-time subtitles and captions will be available on-screen during main stage event and conference presentations.

The company has already begun implementing various neuroinclusive practices at its recent customer events, including a quiet room and tools and resources at both THE EXCHANGE: Association Masters in Phoenix, AZ and THE EXCHANGE: Europe in Madrid, Spain. Last month, Marriott and The Neu Project also implemented a quiet room for attendees at IMEX America, an annual industry event in Las Vegas, NV where members of the global business events community come together.

Looking ahead to 2024, Marriott will further its neuroinclusion efforts by conducting active listening sessions with the community through conversations with The Neu Project and people who are neurodivergent, which will help shape future content.
