The word Tempeh comes from Indonesia and has been known since quite some time however most of us have not yet tried and incorporated it into our favorite recipes in our kitchens, it is very obvious to have a doubtful thought process on the how’s? what’s? and what if not? when it comes to trying something new. The same thing happened with me as well when I found myself acquainted to tempeh but once it turned out to be a delight and burst of flavors in the form of a recipe it has now become an anytime welcome with a number of ways doing it and that is how this feature of sharing more about tempeh started.

Tempeh is actually a meatless source of rich protein, vegan in nature, healthy and nutritious for those who love plant based foods and enjoy experimenting with recipes which are not only colorful to the eyes but also tempting to the palate. Tempeh is made from fermented soy beans which are broken down by micro-organisms and is further compacted and pressed into cakes which have a nice texture, appealing color and a little chewy in texture with a little nutty in its taste.

Most tempeh in Indonesia is sold wrapped in banana leaves and are available in local markets, though in the united states and other places we have seen it being available in vacuum packed formats. Here are a few Simple- Easy & Healthy Recipes with Tempeh:

Recipe-1] TEMPEH SOUP

Ingredients:

Tempeh- 150 gms cut into cubes.

Veg stock- 500- 750 ml

Oil- 2 tbsp.

Salt and pepper to taste

Chili flakes- ½ tsp

Soy sauce- 1 tsp

Red chili sauce- 1 tsp

Garlic- 2-3 cloves, chopped

Onion-1 small, chopped.

Carrots- ¼ cup cut into cubes.

Celery- 2 tbsp. chopped

Mixed herbs/ fresh basil leaves- 2 tbsp.

Bayleaf-1 no

Green/yellow zucchini-1/2 cup cut into cubes.

Fresh parsley/micro-greens to garnish the soup- 2 tsp.

Method:

1. Heat 1 tbsp. oil in a sauce pan and add in the pieces of tempeh and saute it for a couple of minutes until golden browned, remove and keep aside.

2. In the same saucepan add in a little more oil and add in the Bayleaf, garlic, onion, celery, carrots and cook for 1-2 mins, add in the seasonings, herbs and chili flakes, sauces to taste.

3. Bring to a boil and add in the zucchini cut into med cubes and also add in the tempeh pieces, simmer for 10-12 mins until all veggies are just done right in texture.

4. Serve hot garnished with fresh herbs, micro-greens and a dash of crushed black pepper.

Recipe-2] TEMPEH KA DESI TADKA

Ingredients:

Tempeh- 150 gms cut into cubes.

For the marination:

Curd -1 cup

Lime juice-2 tsp

Cumin powder-1/2 tsp

Ginger-garlic paste-1 tsp

Garam masala powder-1/2 tsp

Salt to taste

Kasuri methi-1 tsp

Oil-1 tbsp.

Red chili powder-1/2 tsp.

For the sauce/gravy:

Oil-2 tbsp.

Onion- 2 medium chopped

Ginger-garlic-green chili paste-1 tsp

Red chili powder-1/2 tsp

Salt to taste

Turmeric powder-1/2 tsp

Tomato puree-1/4 cup

Coconut milk-1 cup

Green peas- ½ cup boiled

Coriander leaves- 2 tbsp. chopped

Method:

1. In a mixing bowl combine together the ingredients for the marination, add in the cut cubes of tempeh into the same and mix well, keep in the fridge for 45 mins.

2. Heat oil in a pan add in the onions, ginger-garlic-chili paste and saute them all well around 3-4 mins, add a little water if needed. Add in the powdered spices and salt and mix them all well.

3. Add in tomato puree, the marinated tempeh and stir well. Now also add in the coconut milk and green peas and mix well. Simmer and allow to cook for 20 mins.

4. Serve hot garnished with fresh coriander leaves.

Recipe-3] STIR FRIED TEMPEH

Ingredients

Tempeh- 150 gms cut into cubes/fingers

Oil- 2 tbsp.

Ginger- 1 tsp chopped

Garlic- 1 tsp chopped

Green chili & red chilies- 2-3 each slit

Spring onions- 3-4 sliced

Red/green/yellow capsicums-1/2 cup cubes

Salt and pepper to taste

Red chili sauce-2 tsp

Soy sauce- 2 tsp

Sugar-1/2 tsp

Tomato ketchup-1 tbsp.

White sesame seeds- 1 tsp

White vinegar-1 tsp

Veg stock/water-1 cup

Corn flour and water solution-2 tbsp. to thicken up.

Spring onion greens-2 tbsp. chopped.

Method:

1. Cut the tempeh into cubes/fingers as desired and heat oil in a pan and slightly saute the tempeh for a couple of minutes, once slightly browned remove and keep aside.

2. In the same pan and a little more oil saute the ginger, garlic, chilies, onions and add in a little stock or water to prevent burning and to have a little sauce being formed.

3. Add in the salt, pepper, sauces to taste and bring it all to a boil, add in the peppers and the saute tempeh and allow to simmer for 2 mins.

4. Now add in the corn flour water solution and thicken the gravy and get it to a nice coating texture on the tempeh, check for seasonings, add in the vinegar and finally garnish with toasted white sesame seeds, the spring onion greens and serve hot as a snack/starter.

Recipe-4] TEMPEH SANDWICH

Ingredients

Tempeh-150 gms cut into slices

For the marination of tempeh:

Mustard paste-1 tsp

Olive oil-2-3 tbsp.

White vinegar/ balsamic vinegar- 2 tsp

Honey- 1 tbsp.

Peanut butter-2 tsp

Mixed herbs-1/2 tsp

Chili flakes-1/2 tsp

Soy sauce- 2 tsp

Red chili sauce- 2 tsp

 Sliced bread of your choice- 4-6 no.

Spread of your choice on the bread- mayo-mustard, cream cheese- herb spread, almond and mint butter, peanut butter and honey spread etc.

For the additions in the sandwich:

Assorted lettuce leaves- ½ cup fresh and crispy

Sliced tomatoes- 3-4 slices

Sliced cucumber- 4-5 sliced

Avocado slices- 4-5 no

Salt and crushed black pepper to taste

Vegan cheese/ cheese- as desired.

Accompany the sandwich with olives, pickled vegetables/chips etc.

Method:

1. Assemble all the ingredients for the sandwich with tempeh.

2. Steam the tempeh slices for 10 mins and remove, apply the marination and keep aside for 30 mins.

3. Heat 1 tbsp. oil on a grill pan/ non-stick pan and saute/grill the marinated tempeh for 2 mins on each side, remove and keep aside.

4. Arrange the slightly toasted slices of bread, apply the spread of your choice from simple butter to the varieties and place the lettuce leaves, tomato slices, cucumber slices, avocado etc add a little seasoning as needed.

5. Finally place the tempeh and close the sandwich and grill/ toast the sandwich as desired and serve hot with assorted dips and chips etc.

IHG to bring the iconic InterContinental brand to Kodaikanal

IHG® Hotels & Resorts, one of the world’s leading hotel companies, has announced the signing of a management agreement with Adyar Gate Hotels to develop InterContinental Kodaikanal Resort. Slated to open in 2028, the resort marks an exciting new addition to IHG’s luxury portfolio in India and aligns with the group’s strategy to expand lifestyle and luxury brands in key leisure destinations across the country. This signing marks the debut of the InterContinental brand in Kodaikanal and the sixth (open and in the pipeline) in the country, following successful ventures in Chennai, Mumbai, Jaipur, Hyderabad and Delhi.

Perched at 7,200 feet, Kodaikanal is celebrated for its breathtaking landscapes, pleasant climate, and rich colonial heritage, making it one of South India’s most popular getaway destinations for high end leisure and corporate clientele. Vertical Garden Tower for Rosewood hotel

French architect Jean Nouvel has designed a lattice-covered tower to house guest rooms and residences at the Rosewood São Paulo resort, which features interiors by French designer Philippe Starck.

Pritzker Architecture Prize-winner Nouvel's 25-storey concrete Mata Atlantica Tower houses the majority of accommodation at the Rosewood São Paulo, which is located close to the major Avenida Paulista thoroughfare and many of the Brazilian city's important cultural institutions.

The tower steps inward gradually as it rises, creating spaces for large roof gardens as well as balconies for the 114 guest rooms and 100 private Rosewood Suites available for purchase inside.

Jean Nouvel's Mata Atlantica Tower is wrapped in wooden lattices that will eventually be covered in local plants. These gardens and the vertical timber screens that cover the building were planted as part of a biodiversity programme, which aims to repopulate the indigenous flora and fauna from the Mata Atlantica rainforest.

"Covered in wood and wrapped in generous nature, the vertical garden tower features 10,000 trees and rises 100 metres into the sky," said a statement from Rosewood.

This one of several recent Nouvel projects that heavily incorporate plants, including the Aquarela complex in Ecuador.

HRAWI Issues Public Advisory : Music License Not Required for Marriage Procession and Other Social Festivities Associated With  A Marriage

Mumbai, Nov 2024: The Hotel And Restaurant Association (Western India) – HRAWI has clarified the legal stance regarding obtaining music licence for a marriage and other social festivities associated with a marriage at hospitality establishments. The clarification comes in response to recent confusion caused by certain private agencies claiming that music licenses are now mandatory for such events. HRAWI has re-confirmed that there is no change in Indian law and a marriage procession and other festivities associated are exempt from music licensing requirements. There will be no infringement of playing music at such events. It stated that any private agency seeking payment for licenses for a marriage and related celebrations would be acting contrary to the provision of Section 52(1)(za) of the Copyright Act.

“We have received reports of private agencies misleading hotels and guests regarding the need for music licenses at marriages and related/associated festivities. Some agencies are also publishing misleading reports suggesting the exemption for a marriage is no longer valid. These agencies are citing the Hon’ble Goa High Court Order dated 13.08.2024 and the DPIIT Public Notice dated 07.11.2024, misinterpreting it as a legal requirement to obtain music licenses. HRAWI has verified that Section 52(1)(za) of the Copyright Act, 1957, which exempts marriage-related festivities from licensing requirements, remains intact and enforceable,” says Mr Pradeep Shetty, Spokesperson & Hon’ Secretary, HRAWI.

The DPIIT, in a Public Notice dated 24.07.2023, had informed the public that marriages and related social festivities were exempted from requiring music licenses as per Section 52(1)(za) of the Copyright Act, 1957. In a subsequent notice dated 07.11.2024, the DPIIT placed the previous notice under abeyance. However, HRAWI has clarified that the Public Notice in any event was an explanatory note and did not establish new legal requirements.

“Additionally, even the Hon’ble Goa High Court Order does not address the interpretation or implications of the law related to music licensing for a marriage and related social events. Consequently, any claims suggesting that the Order nullifies the exemption under Section 52(1)(za) are incorrect. The law remains clear, a marriage and associated social festivities are not subject to royalty payments or licensing requirements for music,” says Mr. Nirav Gandhi, Senior Vice President, HRAWI.

The Association has emphasized that the Government of India has neither revoked nor amended its earlier public notice regarding music licensing for marriages. Furthermore, the DPIIT public notice dated 07.11.2024 does not suggest any new requirement for licensing in connection with marriage-related events. Section 52(1)(za) of the Copyright Act, 1957 remains valid, preserving the existing exemption for the public and guests regarding the use of music during marriage ceremonies and associated social festivities.

With the wedding season underway, HRAWI has issued a circular to its members to ensure that the public is not misled by false claims from private agencies seeking fees unlawfully. The Association has urged vigilance to prevent harassment and to protect the public from unnecessary payments.

“It is evident that the recent DPIIT notice is being misinterpreted to suggest that hospitality establishments or the public must obtain licenses for music at marriages and related events, which is simply untrue. We have advised members to reassure their guests about the legal exemption for music licensing in these festivities and to facilitate their events license-free. Any demand for licensing fees by private agencies for such events is not lawful and breaches Section 52(1)(za). We urge members to contact us if such demands arise so we can address the matter in Court,” concludes Mr Shetty.

Bread or double roti as it is commonly known as since times immemorial in our culinary history has been one of our all-time favorite and helpful buddy in our kitchens assisting us in so many ways working on recipes, helping bind and coat dishes, from the very basic bread butter sandwich to the classic club sandwiches, bread is one ingredient without which most of us feel lost and incomplete.

I still remember when I learnt my very basic cooking I was first taught how to make good sandwiches, how to carefully remove the crusts of the slice breads, the application of butter etc and choice of fillings, cutting and assembling of sandwiches on platters for our birthday parties etc it was so much fun working with bread and relishing its outputs.

There are of course a variety of them from our classic laadi Pao to the white bread, the brown variety, the multi-grain, the whole wheat concepts, the flour and seed combination breads to the designer rolls and international breads too each one of them has a different taste and outlook altogether.

Here are a few simple and easy recipes using our regular leftover/ couple of days old breads in our kitchens in a slightly twisted way and in a new look!



Recipe-1] Bread Ka Masaledaar Nashta 

[ quick fix bread snack]

Ingredients

Sliced bread/pao- 4-5 slices/3-4 no

Oil- 2 tbsp.

Cumin seeds- ½ tsp

Mustard seeds- ½ tsp

Curry leaves-10-12 no.

Onions-1 cup chopped

Tomatoes-1 cup chopped

Salt to taste

Aamchur powder-1/2 tsp

Water-1/2 cup

Coriander powder-1 tbsp.

Turmeric powder-1/2 tsp

Red chili powder-1/2 tsp

Coriander leaves-2 tbsp.

Lime-1 no

Roasted crushed peanuts-2 tbsp.

Method:

1. Cut the bread slices into small pieces using the crusts as well.

2. Heat oil in a pan, saute the cumin, mustard seeds, curry leaves, onions, add chilies to taste.

3. Add in the tomatoes and salt, all spices little water and cook for 3-4 mins on low flame.

4. Add in the bread, sprinkle little water over it and mix well, simmer cover and cook the bread in the masala for 3-4 mins.

5. Finally add in the aamchur powder, coriander leaves, peanuts, lime juice and mix well, add nylon sev or sev bhujiya on the top and serve as a snack/breakfast etc.

Recipe-2] OPEN FACED BREAD PIZZA BITES

Ingredients

Sliced bread/ bread loaf slices- 4-5 no

To apply on the bread:

Butter/cream cheese/ tomato ketchup/ schezuan chutney/green chutney/ pesto sauce/ peanut butter.

For the toppings on the bread pizza:

Onions, capsicums, tomatoes, boiled American corn, saute mushrooms, grilled paneer/tofu, leftover sliced tandoori chicken or seekh kababs, choose between ingredients like olives, gherkins, sun-dried tomatoes, non-veg like sausages, salami, ham etc.

The final topping before baking:

Grated cheese of your choice + mixed herbs + chili flakes + crushed black pepper corns + chat masala to taste mix well and place on the top and bake in a pre-heated oven or using a non-stick tava etc allow to cook and get a crusty base and cut into wedges and serve.

Method:

1. Assemble all the ingredients as per your choice for this quick snack.

2. Depending on availability decide the various parts of your pizza.

3. Pre-heat the oven to 180 degrees Celsius and bake the pizza and serve hot.

Ingredients

Sliced bread- white/brown- 4-5 no.

For the spread on the bread:
Butter/Cream cheese.

For the topping on the bread:

Veg- Option-1] paneer bhurji/grated paneer, capsicum, onion mixed with salt, pepper,

Chili flakes, herbs, and topped with white til/sesame seeds and little cheese toast and serve.

Veg- Option-2] mashed /grated potato with onion, tomato, chili, salt, pepper, chat masala, coriander leaves, mix well place on the bread slice top with cheese and til and toast.

Non-Veg- Options] boiled chopped chicken mixed with cheese sauce, herbs, chili flakes, boiled chopped eggs mixed with onion, tomato, chat masala, tomato ketchup, chili and coriander leaves, mix and place.

Method:

1. Prepare the ingredients for this interesting snack called til wale toast.

2. After choosing veg/non-veg toppings get the ingredients ready, apply a spread of butter/cream cheese on the slice of bread, place the topping of your choice.

3. Finally sprinkle the mixture of sesame seeds can use mix of black and white as well and cheese and mix well and get the toasts getting into the oven for toasting, serve hot.

Recipe-4] BREAD TOSS CHICKEN VEGGIE SALAD

Ingredients:

Leftover bread/slice bread/bread rolls- 4-5 slices.

For the base of the salad:

Assorted lettuce leaves- 1 cup or shredded cabbage.

For the body of the salad:

Boiled chicken cubes or grilled paneer cubes/tofu etc.

Cucumber- ½ cup cubes

Tomatoes- ½ cup cubes

Onions-1/4 cup cubes

Boiled beetroot/ sweet potatoes-1/2 cup

For the dressing:

Olive oil- 2 tbsp.

Lime juice-2 tbsp.

White vinegar-2 tsp

Sugar-1/2 tsp

Salt and crushed black pepper- to taste

Chat masala-1/2 tsp

Mixed herbs/chili flakes- ½ tsp

Tomato ketchup-2 tsp

For the garnish of the salad:

Cherry tomatoes/ olives/ gherkins/ micro greens/ sunflower seeds/flax seeds/ chia seeds- as desired.

Method:

1. Assemble all the ingredients for the salad.

2. Cut the bread into pieces and toast it slightly before add it in the salad.

3. In a mixing bowl combine together the ingredients for the dressing and mix well.

4. Just before serving add the body of the salad into the dressing add the bread lastly and toss gently.

5. Arrange the base on the serving plate or salad plates, place the tossed salad on top, garnish as desired and serve chilled.

Indian Travellers Lead APAC with 3 in 5 Planning to Travel More in 2025: Skyscanner Horizons Report

  • Travellers are increasingly motivated by the desire for shared experiences and continue to invest in trips, with India leading APAC in both travel plans and expenditure, including upgrades.

  • Confidence in AI-powered travel planning is growing, though adoption varies widely across different age groups and markets.

  • Travellers keen to explore off-the-beaten-track explorations, but safety remains a top priority, especially in India, Singapore and South Korea.

November 2024 – Leading global travel app Skyscanner has published its latest industry travel report exploring the latest trends in travel. Titled ‘Skyscanner Horizons: 2024/5 spending, planning and destination insights’, the report unpacks and explores a combination of consumer survey and proprietary search data to provide the industry with a unique view of how travellers are thinking about their plans for the next 12 months.

Surveying 19,000 consumers across 16 markets, the report delves into key indicators such as travel propensity, spend, trip type, and the trip planning process, including the top sources of destination inspiration, AI use and views on overtourism. Of the total, there were 6,000 survey respondents from APAC countries — Australia, India, Japan, Singapore, and South Korea. Skyscanner's search data further complements these insights by offering details on destination choice, average lead times, average trip length and year-on-year search volume comparisons.

Indian travellers are leading the charge in the APAC region, with 66% planning to travel more in 2025. Overall, across the APAC region, travel and travel expenditure remain a priority, with 80% of travellers planning to take as many, if not more, trips next year than in 2024.

Key findings relevant to the APAC region summarised below.

Travellers seeking out collective experiences

Across the board, travel behaviour is being shaped by a desire for collective experiences, from sports events and immersive art installations to gaming “pilgrimages” that bring people together. Seven travel trends were identified, consisting of Sport mode, Astro Adventurers, Reset Jetters, Art-Venture, Cowboy Core, Horti-Culture and Gami-Vacation. More details here.

Travel remains priority, with travellers expecting to spend more

Travel Spend: 

  • Across APAC, 72% of travellers are planning to spend more or the same on flights in 2025 versus the previous year.

  • Similarly for accommodation and car hire related behaviour, 71% and 46% of travellers in the region are planning to spend more or the same, respectively. 

  • Looking at Indian travellers, half or more travellers (58%) are planning to budget more on their flights for their travel in 2025.

  • 45% of Indians are planning to budget more on their accommodation and 34% are keen to spend more on car hires.


Ancillaries Spend:

  • Top flight upgrades for APAC travellers were seat selection (38%), insurance (38%), better quality food (29%), access to airport lounge (25%) and extra baggage (23%).

  • About one third (31%) are willing to upgrade their hotel rooms – for example to a larger room or one with a sea view – and the same proportion would be open to upgrading accommodation for a higher star rating.

  • Top upgrades for Indian travellers include first/ business class flights (37%), airport lounge access (42%), extra baggage (36%), and travel insurance (34%). 

  • 57% of Indian travellers are willing to pay extra for better in-flight meals, the highest globally. Food remains a top priority even in the skies. For accommodation, 41% of Indian travellers want to upgrade their room to a larger room or one with a sea view, and 35% want to move from a 4-star to a 5-star. 

Cost and food shape travel choices 

Outside of costs, food is the biggest decision-making factor when choosing a destination.  

  • For APAC travellers, two thirds (67%) regard food as an important factor in their decision-making process.

  • Other top factors for APAC travellers include weather (55%), natural landscape (55%), the attractions (54%) and culture (54%).

  • For Indian travellers, cost is a significant factor when choosing a holiday destination, with 65% considering hotel prices, 62% focusing on flights, and 54% on food and drinks.

Confidence in using AI for planning grows 

46% of APAC travellers express confidence in using AI tools to assist with travel planning and booking, with about 1 in 6 (17%) indicating they are very confident. 

Top four applications of AI in travel include destination research (40%), the creation of travel itineraries (36%), comparison of options (33%), and destination inspiration (31%).

This trend mirrors in India where travellers are increasingly relying on AI for travel planning, with 84% feeling confident in using it for destination research (52%), flight booking (50%), comparing options and prices (48%), and finding destination inspiration (46%).

Attitudes towards over-tourism and impact 

When asked how they would change the way they travel in the future, more than one in four (27%) APAC travellers said they would consider less touristy destinations and 25% would try to make a positive impact on the places they go. Notably, Indian travellers are the most inclined to make a positive contribution to the destinations they visit.

When discussing factors that will influence their choice: Travellers are increasingly interested in exploring lesser-known destinations, with more than one in four (27%) APAC respondents expressing intentions to visit these less touristed areas. 

  • 59% of APAC travellers cited safety as a top reason for hesitance to choose an under-touristed destination over a popular one. A high proportion of Singapore (67%), India (60%) and Korea travellers (64%) contributed to this sentiment.

  • Additionally, understanding where to go (36%) and confidence in available activities at the destination (34%) were also significant factors influencing their decisions to travel to lesser-known locations.

Top sources of travel inspiration

Social media and word-of-mouth recommendations are the leading sources of travel inspiration for travellers worldwide.

  • More than half of APAC respondents (55%) look to social media for travel ideas, while 45% rely on word-of-mouth recommendations. 

  • Other notable sources include online media (42%), films and television shows (40%) and guidebooks (28%), all of which play significant roles in shaping travel choices.

  • In India, this trend shines even brighter with 68% of travellers turning to social media for travel ideas, while 57% rely on online media, including newspapers and magazines, and 52% seek inspiration from film and TV.

2025 destination trends and trip lengths

Travellers continue to seek inspiration through Skyscanner’s popular ‘Everywhere’ search feature, which ranks highly across all regions. The top destinations identified in APAC revealed a preference for big cities across Asia. 

Average trip length is short, peaking at six days, apart from London at two weeks. Across the board, trip lengths are down YoY by around a day.  Average lead times broadly fall between 30 and 70 days, with the highest being for London and Tokyo. Travellers are booking flights to New Delhi, on average, just 28 days before departure.

Trending destinations identified in APAC showed a love for off-the-beaten path Asian destinations – with Dayong, China and Shillong, India both experiencing large YoY increases in search volume of over 800%. Dayong, home to UNESCO World Heritage Site Zhangjiajie National Forest Park, is experiencing a surge in popularity among eco-tourists thanks to the park's unspoiled landscapes and rich cultural heritage. Shillong, often called "Scotland of the East," attracts visitors with its green fields, misty mountains, and lingering traces of colonial influence. Smaller destinations in India, Japan and Cambodia are seeing a surge in popularity, taking up six of the top 10.  Average trip lengths are short – all in single digits – as travellers keep their visits brief.

Agoda: Varanasi is the Cheapest Destination for End-of-Year Holidays

New Delhi, November 2024 - Digital travel platform Agoda has announced its list of the most affordable holiday destinations for the end-of-year holidays. Travelers seeking budget-friendly accommodation options for Christmas and New Year’s Eve have many destinations in Asia to choose from, with Varanasi being the most affordable destination in India with an average room rate of 4136 INR per night.

Hat Yai, Thailand, leads the list as the most affordable on average in Asia with an average room rate of 3883 INR per night*, making it the top choice for cost-conscious travelers in late December. Following closely are Surakarta, Indonesia, and Varanasi, India, with rates of 3967 INR and 4136 INR per night, respectively. These destinations provide a mix of cultural experiences and scenic beauty, perfect for holiday celebrations.
