Milestone Moment as Four Seasons Resorts Maldives Plant 9000th Coral Frame

The blue-hued Maldives are renowned for marking milestone moments. At Four Seasons Resorts Maldives, a very special celebration has taken place this month; one that impacts the future of the islands themselves. In partnership with Reefscapers, the Resorts planted their 9000th coral frame in the ocean, the latest landmark in a series of pioneering marine conservation projects that span more than two decades.

One of the most successful coral restoration projects of its kind in the world, the reef regeneration efforts at Four Seasons Resorts Maldives were born in the wake of the 1997-1998 El Nino bleaching event. Coastal oceanographer Thomas Le Berre of Seamarc Pvt. - now Reefscapers - approached the then new-to-the-Maldives Four Seasons with his dreams of coral propagation. A visionary partnership was born, leading to one of the Indian Ocean’s largest masses of artificial reefs to date covering 3.05 acres (2,351 square metres).

Supported by Four Seasons, Thomas’s research led to the development of a revolutionary coral frame technique.  Now adopted by conservationists worldwide, it involves attaching small coral fragments onto metal frames that are then planted on the seabed to regenerate coral reefs.

Like the coral it supports, the project has grown in myriad ways over the years. The coral propagation success at Four Seasons Resorts Maldives at Landaa Giraavaru and Kuda Huraa led to Marine Discovery Centres at both Resorts served by a team of 11 full-time marine biologists. Marine conservation projects there include coral spawning research, sea turtle rehabilitation, and a Fish Lab to breed ornamental reef fish in captivity, reducing pressures on the natural reef. Landaa also became the birthplace of The Manta Trust - now a global charity dedicated to the worldwide protection of manta rays.

Reefscapers and Four Seasons continue to evolve reef restoration. Resort guests at Four Seasons two resort islands as well as Four Seasons Private Island at Voavah can transplant their own reef and watch it grow via online photo updates. In 2020, the onsite development of an AI catamaran that uses robotics to improve monitoring efforts led to the publication of the world’s largest coral restoration study to date in peer-reviewed journal Nature Ecology & Evolution, using Artificial Intelligence to assess, analyse and record data.

Climate change poses a huge threat to a country reliant on coral reefs. In 2016, the teams were devastated when 90 percent of the shallow water corals in Baa died in a bleaching event. When a mass bleaching event was predicted in 2024, the onsite Reefscapers teams were able to take preventative action, relocating an incredible 28,000 corals – between 450 and 500 frames – from shallow 2-3 metre sites to depths of 6-12 metres in a bid to save them.

On nearby island Fulhadhoo, building the coral frames supports the local economy. The frames are made from metal rebars and coated in a special mix of sand and resin to protect them from corrosion. Fragments of Acropora corals - collected from local healthy mature colonies - are attached securely before the frame is labelled, planted in the reef and photographed for monitoring purposes.  

“Our 9,000th coral frame is an uplifting milestone for us," comments Armando Kraenzlin, Regional Vice President and General Manager at Four Seasons Landaa Giraavaru. "The Reefscapers teams at Four Seasons Resorts Maldives are all inspired by a shared love for the ocean and a determination to protect it from harm caused by human actions. As the restoration sites grow, we are seeing significant growth in the numbers of smaller species that live in and around the coral. This in turn attracts larger animals including sharks, eagle rays and turtles around the sites - restoring hope with every frame.”

The Reefscapers teams at Landaa Giraavaru, Kuda Huraa and Voavah know that one of the most important aspects of reef regeneration is education. School visits to local islands spread the conservation message and inspire a sense of custodianship of the reefs. Landaa also runs a marine biology internship for local students that is now in its third year, while guests at both resorts can learn about the pioneering project through hands-on reef building, as well as immersive programs for juniors at Kuda Huraa and Trainee Marine Savers modules for environmentally minded teens at Landaa Giraavaru.

Four Seasons also sponsors a number of frames every week, although the majority are sponsored by guests. "A key part of our role here is to spread knowledge and spark interest," concludes Armando. "What happens next is largely down to the passion, drive and commitment of those who visit the Maldives and choose to become the ocean stewards of the future through involvement in sponsorship programs and internships. Bhel Puri is a savoury snack originating from India, and is also a type of chaat. It is made of puffed rice, vegetables and a tangy tamarind sauce, and has a crunchy texture. Bhel is often identified as a 'beach snack', strongly associated with the beaches of Mumbai, such as Chow patty or Juhu. Bhel puri is thought to have originated within the Gujarati cafes and street food stalls of Bombay, and the recipe has spread to most parts of India where it has been modified to suit local food availability. It is also said to be originated from Bhadang, a spicy namkeen from Western Maharashtra

Bhel Puri is a low-fat, nutritious and popular comfort snack enjoyed in Western India. Bhel puri is also known as bhel in Marathi, Jaal Muri in Bengali and churumuri in Kannada language. Jhal means spicy and Muri is puffed rice. Jhal Muri is a spicy puffed rice snack that everyone loves. Bhel puri & churumuri are 2 other popular variations of Jhal Muri. Puffed rice is known by different names in India. This easy snack is whipped up using the puffed rice, groundnuts, bhel, potatoes and tamarind sauce.

 In Mumbai bhel puri is enjoyed as a beach savouries or comfort snack. Bhel puri always tastes good when prepared and served immediately. Normally juices of tomatoes and chutneys are used to soften the puffed rice and to add flavor to the bhel puri. Another dry variant of bhel puri called bhadang is also enjoyed throughout North India. Bhadang is served after garnishing with coriander, lemon juice and onions.

Common Ingredients Used in Bhel Puri Recipes
There is lots of confusion regarding what goes in the preparation of a bhel puri. But some of the commonly used ingredients are puffed rice, mixture, sev (fried noodles like snack prepared from besan flour), onions, chilies and boiled cut potatoes. Generally different types of sauces and chutneys are also used to impart the spicy flavor to the bhel puri. Atleast two types of chutneys: date chutney and tamarind chutney are used in the preparation of the bhel puri. The date chutney is prepared by using dates and tamarind; tamarind chutney is prepared using coriander leaves and green chilies. Generally, the bhel puri is served after garnishing with diced onions, coriander leaves and green chilies. 

During the summers -sweet mango chunks are also added to the bhel puri. The bhel puri is either eaten with a spoon or a crispy wheat bread called papri puries. Bhel puri may also be garnished with a combination of chunks of diced raw sweet mango, diced onions, coriander leaves and chopped green chilies. It is sometimes served with papri puries, a deep-fried small round and crispy wheat bread.


Variations of Bhel Puries:

Sev Papdi Chat: It is prepared by mixing 2-3 types of chutneys, chana masala (horse gram mixture) and boiled potatoes.

Sev Puri: It is just a simplified version of the bhel puri. It is prepared using sev, chutney, bhel puri and Papdi.

Dahi Puri: Dahi puri is the mixture of bhel puri, Papdi, chutney and yoghurt.

Mumbai Bhel Puri: This is a simple bhel puri which is enjoyed as an evening snack across Mumbai, has become popular the world over now and people especially come and relish this delicacy when are in Mumbai and want to treat on some street side famous foods also adapts itself to fusion concoctions as well.

Churumuri - finely cut pieces of onion, tomato, coriander leaves along with chilli powder are mixed, adding a few drops of coconut oil. Sometimes fried or roasted groundnuts may be added.

Recipe-1] TAK-A-TAK BHEL PURI

Ingredients:

For the Bhel Mix:

Kurmura/ puffed rice- 2 cups

Flat papdi- 10-12 no

Nylon sev/ bhujia- ½ cup

Onion-1/2 cup chopped

Raw mango- 2-3 tsp chopped

Tomato-1/2 chopped

Green chili-1 tsp chopped

Salt to taste

Chaat masala-1/2 tsp

Lime juice-1-2 tsp

Boiled cubed potatoes-1/2 cup

Assorted farsan/ gathiya etc as desired- ¼ cup

Assorted chutneys: green mint-coriander, red chili and garlic, sweet jaggery and sour tamarind chutney or saunth- with ginger powder.

Method:

1. Assemble the ingredients for the bhel and keep ready.

2. In a mixing bowl, combine together the listed ingredients.

3. Add in the chutneys and seasonings and give it a nice toss and mix.

Ingredients:

For the Bhel Mix:

Lotus seeds/ makhanas- 2 cups lightly roasted.

To add while roasting the makhanas:

Salt and pepper powder to taste

Turmeric powder and chaat masala to taste

Flat papdi- 10-12 no

Roasted/fried peanuts-1/2 cup

Nylon sev/ bhujia- ½ cup

Onion-1/2 cup chopped

Raw mango- 2-3 tsp chopped

Tomato-1/2 chopped

Green chili-1 tsp chopped

Salt to taste

Chaat masala-1/2 tsp

Lime juice-1-2 tsp

Boiled cubed potatoes-1/2 cup

Assorted farsan/ gathiya etc as desired- ¼ cup

Assorted chutneys: green mint-coriander, red chili and garlic, sweet jaggery and sour tamarind chutney or saunth- with ginger powder.

Dates- 2-3 finely chopped

Salt to taste

Chaat masala-1/2 tsp

Lime juice-1-2 tsp

Boiled cubed sweet potatoes-1/2 cup

Also try adding a fruit like guava cubes- ½ cup

Assorted farsan/ gathiya etc as desired- ¼ cup

Crumb fried paneer cubes- 1 cup can be used for veg

Boiled chicken cubes/shred- 1 cup for non-veg

Boiled eggs-2-3 cubed also work well

Fried noodles-1/2 cup as an option

Schezuan sauce- 2 tsp

Salt to taste

Chaat masala-1/2 tsp

Lime juice-1-2 tsp

Boiled cubed sweet potatoes-1/2 cup

    Scheduled to take place at Raj Bhawan within six months, this conference will explore Uttarakhand's connection between food, spirituality, and culture. Key highlights include panel discussions, interactive workshops, live demonstrations of forgotten cooking techniques, and a curated exhibition of local dishes.

  3. Women Empowerment Through Self-Help Groups (SHGs)
    The Governor emphasized the importance of empowering local women by strengthening SHGs involved in food products. This initiative focuses on structured culinary training, entrepreneurship, and market integration, enabling women to achieve financial independence and sustainable livelihoods.

Reviving Forgotten Recipes: The Mussoorie Food Trail

During the visit, the delegation experienced a heritage food trail in Mussoorie, where they discovered long-lost recipes and traditional cooking methods passed down through generations. A notable encounter with a local chef, whose family once served the royal kitchens of the King of Tehri Garhwal, unveiled rare heirloom ingredients and cooking techniques.

From copper vessel cooking to unique spice blends, the trail showcased Uttarakhand’s rich culinary diversity, sparking interest in preserving such traditions.

Culinary Heritage Meets Sustainability

The initiative is more than just celebrating flavors; it is about creating an ecosystem where food acts as a bridge between heritage, sustainability, and economic empowerment. Located in Pen, a growing industrial hub in Raigad district, the upcoming Holiday Inn Express will serve the rapidly developing Mumbai Metropolitan Region (MMR). Marriott International Announces Strategic Agreement with PathSpot, an Innovative Real-Time Hand Hygiene Management System and Safety Operations Suite

Marriott International, Inc. (Nasdaq: MAR) today announced it has entered into a strategic agreement with technology company PathSpot Technologies, Inc., the creator of a real-time hygiene management and digital kitchen system that protects against the threat and spread of illness with a handwashing validation system and equipment monitoring technology. As Marriott continues its legacy of hospitality industry innovation, including food and beverage operations, it is the first hospitality company to make PathSpot technology available to the company’s portfolio of over 9,300 properties across the U.S. and Canada, Caribbean and Latin America, Asia Pacific, and Europe and the Middle East.

Using a network of sensors plus visible, audible, and electronic cues, PathSpot’s technology is engineered to immediately notify associates utilizing the scanners when invisible contamination is detected, and additional handwashing is needed. By utilizing PathSpot’s Hand Scanner technology and logging system, Marriott properties have the ability to more efficiently adhere to strict operating procedures while streamlining handwashing record-keeping and monitoring.

All Marriott properties that have installed PathSpot hand scanner technology have also implemented the PathSpot SafetySuite. The interconnected hardware and software tools are helping properties modernize, digitize, and elevate back-of-house operations to create improvements in health and safety standards, like PathSpot’s real time temperature monitoring, which consistently records temperatures in refrigerators and freezers and alerts associates of any temperature-related issues that may impact food quality. 

Implementation of PathSpot’s Hand Scanners and SafetySuite have helped properties save an estimated two to eight hours per day in back-of-house monitoring and logging, freeing up associates to focus on guest-facing efforts and allowing the properties to create efficiencies in maintenance and engineering costs as well as to reduce food waste and energy consumption.

Slurp, Savour and Support! Nostalgia’s Second Outlet in Pali Naka Focuses on Local Heritage, Community Collaboration, and a ‘Bring Your Own Fruit’ Concept

Nostalgia in Bandra is one of the few spots in Mumbai’s vibrant cafe landscape that takes you down memory lane. One of the highlights of the new outlet is a ‘Bring your own fruit’ concept where you can buy fresh fruits from the vendors right outside the outlet, walk in to have them on your softies and relish them on the go. The new outlet pays tribute to founder Sinan Khader’s grandfather, who began his journey at a tea stall at Dadar Central railway station in the 1950s. Over time, he grew to manage 8 stalls in railway canteens, creating a legacy of enterprise. Tiny bits of his railway canteen legacy now lives on at Nostalgia - be it the bun maska or the savoury snacks from Kerala and Mangalore on the racks. It’s a coming together of family heritage to give back to the community.

Hyatt Regency, Pune Lifts Coveted Trophy: Poona Hoteliers Association Premier League 7.0

The Poona Hoteliers Association Premier League (PHAPL 7.0) concluded on a high note on 21 st March 2025, marking yet another milestone in the Pune hospitality sector’s sporting legacy. Organized by the Poona Hoteliers Association (PHA), the five-day inter-hotel cricket tournament took place at Azam Campus Grounds and witnessed an overwhelming participation of 42 teams from hotels and hotel management institutes. With 630 players and over 1,000 enthusiastic spectators in attendance, the tournament was a spectacular showcase of sportsmanship, camaraderie, and competitive spirit.

The grand Opening Ceremony on 17 th March 2025 was inaugurated by Mr Jimmy Shaw, President of the Hotel And Restaurant Association (Western India) – HRAWI, accompanied by his wife Ms Fida Shaw, alongside Mrs Abeda Inamdar, Vice President of Maharashtra Cosmopolitan Education Society, Pune; and Mr Amit Sharma, President of PHA, along with other distinguished members of PHA. The dignitaries encouraged the teams to “Play Well, Play Hard but Play Fair” and symbolically released colourful balloons to declare the tournament open.

“The 7 th edition of PHAPL is truly special as it coincides with the 25 th anniversary of the Poona Hoteliers Association and the 75 th year of HRAWI. This tournament is not just about cricket; it embodies the spirit of unity, teamwork and enthusiasm that defines the hospitality industry. The event has grown tremendously over the years, bringing hospitality industry professionals together in a competitive yet friendly atmosphere. We commend PHA for organizing such a fantastic initiative, and I look forward to seeing this tournament reach even greater heights in the coming years,” says Mr Jimmy Shaw, President, HRAWI.

The grand finale saw Hyatt Regency, Pune, clinch the trophy after a thrilling match against runners-up Novotel, Pune. Royal Orchid, Pune and Courtyard by Marriott, Chakan secured spots in the top four. Individual accolades were dominated by Roop Lal (Hyatt Regency), who claimed the Man of the Match, Orange Cap (Best Batsman) and Player of the Tournament titles. Deepak Dada (Courtyard by Marriott) earned the Purple Cap for Best Bowler.

“PHAPL 7.0 reached new heights with live streaming of all 57 matches across two grounds, making it accessible to a much wider audience. The matches were not only broadcast live on YouTube and mobile platforms but were also showcased in hotel staff cafeterias and restaurants, allowing colleagues and families to experience the action. This initiative elevated viewership from 1,000 on-field spectators to over 6,000 virtual viewers, adding to the tournament’s growing appeal,” adds Mr. Santanu Sarkar.

The tournament’s seamless execution was made possible by the dedicated efforts of Director of the Tournament, Manu, along with umpires, scorers, and ground staff, who ensured smooth operations throughout the event.

“After six successful editions, PHAPL 7.0 has firmly established itself as one of India’s largest inter-hotel cricket tournaments. The planning and execution of this year’s event were credited to the PHAPL 7.0 Organizing Committee, led by Amit Sharma, Santanu Sarkar, Sharan Shetty, Abhishek Sahai, Prapti Deshpande, Sumit Sharma, Vikram Raj Shetty, Bhushan Kumud, Pankaj Saxena and Sanjay Singh. With the PHA Executive Committee already gearing up for PHAPL 8.0, next year’s tournament promises to be even bigger, more creative and more exciting, further cementing its status as the most sought-after sporting event in the Indian hospitality industry,” concludes Mr. Amit Kumar Sharma.
