  2. Transfer the paste to a bowl and add chopped onion, green chilies, rice flour, cumin seeds, turmeric powder, and salt. Mix well.

  4. Remove the pakodas from the oil and drain on paper towels. Serve hot with chutney or sauce.

2. Dal Makhani (Creamy Lentil Curry)

  • 1 cup organic black lentils (whole urad dal), soaked overnight

  • 1/4 cup organic red kidney beans (rajma), soaked overnight

  • 1 onion, finely chopped

  • 2 tomatoes, pureed

  • 2 tablespoons ginger-garlic paste

  • 1/2 cup cream

  • 1 teaspoon cumin seeds

  • 1 teaspoon garam masala

  • Salt to taste

  • 2 tablespoons ghee

 Method:

  1. Pressure cook the soaked lentils and kidney beans until soft.

  2. Heat ghee in a pan and add cumin seeds. When they splutter, add chopped onion and sauté until golden brown.

  3. Add ginger-garlic paste and sauté for another minute. Add tomato puree, garam masala, and salt. Cook until the oil separates.

  4. Add the cooked lentils and kidney beans along with some water. Simmer for 15-20 minutes.

  5. Add cream and simmer for another 5 minutes. Serve hot with rice or naan.

3. Chana Dal Fry (Split Chickpea Curry)

Ingredients:

  • 1 cup organic split chickpeas (chana dal), soaked for 2-3 hours

  • 1 onion, finely chopped

  • 2 tomatoes, chopped

  • 1 teaspoon ginger-garlic paste

  • 1 teaspoon turmeric powder

  • 1 teaspoon cumin powder

  • 1 teaspoon coriander powder

  • 1/2 teaspoon red chili powder

  • Salt to taste

  • Fresh coriander leaves for garnish

  • 2 tablespoons ghee

 Method:

  1. Pressure cook the soaked split chickpeas until soft.

  2. Heat ghee in a pan and add chopped onion. Sauté until golden brown.

  3. Add ginger-garlic paste and sauté for another minute. Add chopped tomatoes and cook until soft.

  4. Add turmeric powder, cumin powder, coriander powder, red chili powder, and salt. Cook for a few minutes.

  5. Add the cooked split chickpeas along with some water. Simmer for 10-15 minutes. Garnish with fresh coriander leaves and serve hot with rice or roti.

4. Lentil and Vegetable Salad

Ingredients:

  • 1/2 cup organic green lentils (moong dal), cooked

  • 1 cucumber, chopped

  • 1 carrot, grated

  • 1 bell pepper, chopped

  • 1 tomato, chopped

  • 1/2 onion, finely chopped

  • Juice of 1 lemon

  • 2 tablespoons olive oil

  • Salt and pepper to taste

  • Fresh coriander leaves for garnish

Method:

  1. In a large bowl, combine cooked lentils, chopped cucumber, grated carrot, chopped bell pepper, chopped tomato, and finely chopped onion.

Kanyakumari-Leh: Chefs to ride again for our community

MARCH, 2024, MAPUSA: It’s on again, this time along the length of India, right down the middle. In this second edition of Chefs Ride, chefs both Indian and international, will ride their motorcycles from India’s Southern tip to its Northern-most city in their much needed effort to spread the awareness of International Chefs Day (20th October) and its message of culinary goodwill.

The group ride will start on 15th August in Thiruvananthapuram before heading towards Kanyakumari 90 kms away, then follow NH 44 all the way North to Srinagar and onwards to Leh. This route travels through India’s centre and will take in at least 18 major cities enroute where large scale events with the local hospitality communities are planned. Chefs Ride 2024 is expected to conclude on 30th September.

This is the second edition of Chefs Ride. In 2023, the route was along India’s Western Coast, commencing in Thiruvananthapuram on 30th August and concluding in Ahmedabad on 26th September. This route took in eight towns. Detailed info of last year's ride is available here:

Poised to become Muscat’s premier beachfront destination, Shangri-La Barr Al Jissah, the leading dining destination in Muscat is proudly introducing a new venue to complete its 13 existing dining offerings. The Si0 2 The Beach Lounge is set to redefine the coastal experience in Muscat, as the city’s hotspot for a feet-in-the-sand experience.

Elegantly set on the edge of the 500m long stretched beach of Al Bandar hotel, opposite the resort’s two dining venues Capri Court and Chow Mee, the SiO 2 Beach Lounge draws its name from the very elements that make up the sandy shores - quartz, silicon and oxygen. This synthesis of nature serves as inspiration for a place where the elements of earth, breeze and sea converge to create an unforgettable afternoon and evening atmosphere.

The Inspiration

The brainchild of the Area General Manager, Rene D. Egle and inspired by contemporary island beach lounges and elegantly combined with the beautiful views of the Gulf of Oman, SiO2 boasts a thoughtfully designed space with a thatched roof bar made from palm tree leaves. The combination of beach and contemporary furniture with light grey tones paired with blue and grey cushions adds a glamour touch to the dramatic sunset setting behind the Hajar mountains. The white drapes around the rattan cozy lounge brings a light and yet cozy sense of place to the venue for a warmer experience. The beach lounge can cater for 70 guests while keeping the venue intimate and exclusive.

The menu is crafted to revive guests’ senses with a creative blend of cocktails and mocktails to enhance guests’ palate- all inspired by the four elements of nature – fire, water, earth, and air. The ‘Above the Clouds’and ‘The Flying Bird’ cocktails, influenced by the air element, feature frankincense and a phoenix feather for a mythical touch. Under the fire element, savour the ‘Scarlet Glow’or opt for the non-alcoholic ‘Shazam! Mocktail’ our unique classic passion fruit mojito. 

The expertly curated beach lounge menu ensures an exquisite à la carte offering available daily from 5pm until 1am.

Complementing the beverage selection, SiO 2 offers a tantalising array of light bites including hot and cold Mezze as well as arancini or prawn tempura, for an enhanced beachside experience, perfectly paired with the beverage selections.
