Park Hyatt Chennai announces the reopening of its signature-dining destination, The Flying Elephant. 

After a hiatus of over 2 years, Chennai’s The Flying Elephant has opened in a new avatar. Bolder,  innovative, and unscripted, its three-level architecture offers guests a multi-sensory dining experience that is unmatched in the city. 

The Flying Elephant is the Food & Beverage and Entertainment epicenter of the hotel. From its groundbreaking design and innovative and exceptionally executed menu to its unscripted and personalized service, it is a dining experience that measures itself with internationally acclaimed dining venues.  

Tapping into the vast recipe library of Executive Chef Balaji Natarajan, the new menu encompasses familiar signature dishes, served differently, paying an evolutional tribute to the regions it represents. The food is passionately prepared, thoughtfully plated, and interactively served right out of the various show kitchens around the dining floor. Ingredients have been carefully selected, while traditional recipes and preparation methods are respected and fused with modern techniques, textures, and flavors. 

The drinks menu is a curated selection of known classics with modern twists and is like the food menu, ever-evolving. It celebrates fresh ingredients and simple preparation methods, focusing on each drink’s key flavors. 

The music selection, delivered by resident DJ Ashish Nagpal, follows and compliments the creative direction of the F&B menus with remixes and versions of well-known classics and current hits.  

Informal, fun, dynamic & vibrant are just some of the attributes that describe the ambiance of The Flying  Elephant. The restaurant aims to speak to all senses, offering its patrons great food, service and breathtaking architecture. Considered as one of the main exponents of preserving traditional Mexican cuisine, Chef Colibrí Jiménez is on a mission to promote ‘real’ Mexican cuisine.

RAS AL KHAIMAH RECORDS ITS HIGHEST VISITOR NUMBERS IN 2022

Gurugram, India, January 2023: Ras Al Khaimah Tourism Development Authority (RAKTDA) announces its highest ever annual visitor numbers, with the Emirate welcoming over 1.13M overnight arrivals in 2022, a total increase of 15.6% vs 2021. The results exceed pre-pandemic levels indicating recovery and resilience in a volatile year.

 

Despite geopolitical and economic challenges, Ras Al Khaimah has become one of the fastest destinations to bounce back. In addition to its record visitor numbers, key 2022 achievements include:

 

·        Launched Balanced Tourism – its roadmap to becoming the regional leader in sustainable tourism by 2025

·        Announced the largest foreign direct tourism investment project in partnership with Wynn Resorts, Marjan and RAK Hospitality Holding

·        Intercontinental Hotels Group (IHG), Mövenpick and Radisson brands entered the destination for the first time, marking a 17% annual growth in hotel supply to over 8,000 keys

·        5,867 keys scheduled to be added over the next few years, a 70% increase on current inventory – among the highest growth rates in the UAE

·        40% increase in international visitors driven by 90+ roadshows, trade fairs, workshops and media events across 24 markets

·        Recognition in Time magazine as one of the World's Greatest Places of 2022 and CNN Travel’s best destinations to visit in 2023

·        Opened new attractions, including Jais Sledder, which has seen more than 100,000 visitors since its February opening, and the longest developed hiking trails in the Emirate

·        Achieved a visitor satisfaction score (NPS) of over 80% – far above the industry average of 51

·        Hosted over 50 events including the prestigious Global Citizen Forum, 15th edition of the Ras Al Khaimah Half Marathon, Arab Aviation Summit, DP World Tour and secured the 2023 Minifootball (WMF) World Cup for the first time in the UAE

·        Two Guinness World Record titles at the New Year’s Eve fireworks and drone display

·        Authority named one of the Top 10 Great Places to Work in the Middle East 2022

 

Commenting on the Emirate’s strong tourism performance in 2022, Raki Phillips, CEO of Ras Al Khaimah Tourism Development Authority, said: It has been quite a year. From January’s announcement of the multibillion-dollar integrated Wynn resort – a project that will usher in a new era of economic development through tourism – to securing two Guinness World Record titles for our New Year’s Eve fireworks and drone display, we have shown just how dynamic we are as a destination. Our success has been led by our agility and responsiveness – and the fact we think like a community, shaping our experiences to appeal to visitors and residents. With a determined focus on diversification, accessibility and sustainability, we are on track for even bigger things in 2023.”

 

Strong December performance

The impressive full-year figures follow a strong December performance in which the Emirate welcomed its highest ever footfall in one month, with over 128,000 visitor arrivals, representing a 23% increase vs. December 2021. This was bolstered by the Emirate’s record-breaking New Year’s Eve fireworks and drones display, which saw Ras Al Khaimah set two GUINNESS WORLD RECORDS™ titles for of the ‘largest number of operated multi-rotors/drones with a simultaneous fireworks display’ and the ‘largest aerial sentence formed by multirotors/drones. The festivities drew over 30,000 visitors with public events and hotels across the Emirate fully booked, making it the most visited show to date.

 

Sustainable agenda for 2023 and beyond

Under its bold new approach to sustainability – Balanced Tourism, the Emirate will become the regional leader in sustainable tourism by 2025, placing all aspects of sustainability at the centre of its investment, from environment and culture to conservation and liveability.

 

As part of this, the tourism authority aims to award more than 20 businesses with tourism certifications in the first year with the ultimate goal of obtaining the internationally recognised “Sustainable Tourism Destination” certificate for Ras Al Khaimah in 2023.

 

Promoting employee well-being, the tourism authority was named one of the Top 10 Great Places to Work in the Middle East 2022 – the highest placed government entity – as well as one of the Best Workplaces for Women and a Great Place to Work in 2021, the first and only organization in Ras Al Khaimah to be awarded this certification. The Authority has also introduced RAKFAM, a series of initiatives aimed at enriching connectivity, community life and facilities for tourism sector employees in the Emirate.

 

Driving international tourism

2022 also saw a 40% increase in international visitors, with key source markets including Kazakhstan, Russia, the United Kingdom, Germany and Czech Republic. This was driven by a series of partnerships with airlines and leading tour operators to target emerging and growing source markets, supported by 90+ events and roadshows in 24 markets worldwide. In a further boost for the Emirate’s accessibility, Ras Al Khaimah also received three luxury cruises in 2022, welcoming over 2,500 passengers and crew. With a focus on developing its burgeoning cruise sector, the Emirate aims to attract 50 cruise ship calls each season, and over 10,000 passengers within the next few years.

 

Boosting the tourism and hospitality offering

New hotels and resorts opened in 2022, increasing the Emirate’s inventory by 17% to reach over 8,000 keys. The Intercontinental Hotels Group (IHG), Mövenpick and Radisson brands entered the destination for the first time with the opening of the InterContinental Mina Al Arab, Mövenpick Resort Al Marjan Island and the Radisson Resort Ras Al Khaimah Marjan Island.

 

With 19 upcoming properties, including global brands like Marriott, Millennium, Anantara and Sofitel, and 5,867 keys in the pipeline over the next few years, a 70% increase versus current inventory and one of the highest development rates in the UAE, Ras Al Khaimah’s tourism vision continues to gain momentum.  A major addition will be the multibillion-dollar integrated resort development with Wynn Resorts in 2026, announced early last year. The multipurpose integrated resort marks the largest-of-its-kind foreign direct investment in Ras Al Khaimah and will include 1,000+ rooms, shopping, meeting and convention facilities, spa, more than 10 restaurants and lounges, extensive entertainment choices, and gaming area. 

Another key feat for last year was Ras Al Khaimah’s inclusion in Time magazine's World's Greatest Places of 2022 – a highly coveted list of 50 must-visit global destinations – in recognition of its adventure offerings and stunning, unique topography and geodiversity. To further bolster the Emirate’s nature positioning and attract both international and domestic visitors, the Ras Al Khaimah Tourism Development Authority also announced the opening of key new sustainable attractions, including the Jais Sledder, the region’s longest toboggan ride, which has welcomed over 100,000 visitors since opening in February.

Growing Ras Al Khaimah’s position as a world-class events hub

The Emirate’s position as a leading sporting destination went from strength to strength, with over 50 events hosted. Highlights included the 15th RAK Half Marathon, 23rd Annual Gumball 3000 rally, the first-ever Middle East route for the world-renowned supercar rally, the UAE Tour Cycling and the DP World Tour golf championship. Ras Al Khaimah also won the competitive bid to host the 2023 Minifootball World Cup, beating Budapest and Manila to add the mega international football competition to its growing roster.

Additionally, the Emirate hosted numerous events and conferences, including the Arab Aviation Summit for the second consecutive year and the first Pacific Asia Travel Association Annual Summit in the Middle East. It also secured a three-year partnership with the Global Citizen Forum to host its prestigious annual summit.

The hotel is currently in the advanced stages of construction and will open soon, adding 204 keys to IHG’s premium portfolio in the country. The signing of a voco hotel in a Tier 1 city such as Gurugram will support the company’s growth ambitions for the brand in the South-West Asia region and build on the recent debut of the brand in India.

Besides we also use chickpeas in a number of ways too from dips to salads and even baked dishes and in stews too.

  • It is also grounded and its flour form also is useful in a number of recipes from thickening agents to adding binding and also taste and flavor in dough concepts where gluten can’t find its way.

Here are a few recipes with this charismatic ingredient:

Recipe-1] NUTTY CHICKPEA DIP

Ingredients:

Boiled chickpeas- 1 cup

Garlic- 1 tsp chop

Olive oil- 2 tbsp.

Peanut butter-1 tbsp.

Salt and crushed black pepper to taste

Lime juice- 1 tbsp.

Chilled water- 2 -3 tbsp.

Tahini paste- 2 tbsp.

Mint leaves- 8-10 no.

Paprika powder- ¼ tsp

Chaat masala powder- ½ tsp

To serve with: crackers/ sticks of vegetables/ grilled skewers of chicken/ cottage cheese.

Method:

1. Prepare all the ingredients for the dip.

2. In a food processor combine together all the ingredients and adding olive oil and chilled water blend to a smooth paste.

3. Remove into a serving bowl, drizzle little olive oil, sprinkle a little paprika powder, chaat masala powder and few whole boiled chickpeas and some greens for garnish. Serve chilled with varieties as per choice.



Recipe-2] FUSION CHICKPEA CHAAT

Ingredients:

Boiled chickpeas- 1 cup

Boiled groundnuts- ¼ cup

Blanched moong sprouts-1/2 cup

For the chaat:

Onions + tomatoes+ green chilies+ mint + coriander as desired.

Chaat masala- to taste

Salt to taste

Roasted crushed jeera powder-1/4 tsp

Lime juice- 1 tbsp.

Imli chutney- 2 tbsp.

Green mint and coriander chutney- 1 tbsp.

Mayonnaise- ¼ cup + chili sauce- 1 tsp + tomato ketchup -1 tsp- mix well.

Fried/roasted peanuts- 2 tbsp. for garnish.

Method:

1. Prepare all the ingredients for the fusion chana chaat.

2. In a mixing bowl combine all the ingredients and toss the chana chaat.

3. Arrange on a serving plate and top with a drizzling of the mayo mixture and serve chilled.

4. As an additional variety add slices of chicken tikka, seekh kababs, boiled eggs, sliced chicken sausages etc.

Recipe-3] ASIAN CHICKPEA STEW

Ingredients:

Boiled chickpeas- 1 cup

Boiled rajma-1/4 cup

Oil- 1 tbsp.

Butter-1 tsp

Bayleaf-2 no

Peppercorns-4-5

Garlic- 1 tsp chop

Onion- 1 med size chop

Tomato puree-1 cup

Salt and pepper to taste

Mixed herbs- ½ tsp

Chili flakes-1/2 tsp

Potato cubes- ½ cup

Carrots-1/4 cup cubes

Green peas/ French beans/capsicums/corn as desired.

Peanut butter- 1 tbsp. mixed with ¼ cup warm water + 1 tsp soy sauce.

Water/veg stock- 2-3 cups

Raisins/cashews/almonds- 2 tbsp. 

Coriander and mint leave- 1 tbsp. chop for garnish.

For non-veg- chicken cubes/ mutton pieces/ prawns.

Method:

1. Prepare all the ingredients for the stew.

2. Heat oil and butter and add in the Bayleaf, peppercorns, garlic and onion and saute for 15-30 seconds.

3. Add in the tomato and all seasonings and herbs, add a little all spice or garam masala powder if desired.

4. Add in the vegetables of our choice and chickpeas and rajma and saute all well add water or stock, allow to simmer for 10-15 mins, finally add in the peanut butter mixture and stir well, cook for 5 mins.

5. Serve hot garnished with greens and serve along with brown rice or assorted breads.


Recipe-4] MARINATED CHICKPEA AND QUINOA SALAD

Ingredients:

Boiled chickpeas- 1 cup

Cooked quinoa-1/2 cup

For the marination:

Olive oil-2 tbsp.

Mustard paste-1/2 tsp

Chili sauce-1 tsp

Salt and crushed black pepper to taste

Herbs like fresh basil/oregano/thyme/parsley- 1 tsp

Chaat masala-1/2 tsp

Roasted crushed cumin powder-1/4 tsp

Lime juice- 2 tbsp.

White vinegar-1 tsp

Sugar-1/2 tsp

To Add to the Salad: sliced chicken sausages/ boiled cubes of eggs/ saute prawns/ cucumber dices/ cherry tomatoes/ cubes of bell peppers/ saute sliced mushrooms/ boiled American corn/ blanched broccoli/Babycorn etc. [ any choice to be used]

For the base of the salad:

Iceberg lettuce/ assorted greens for the base of the salad.

For the garnish of the salad:

Feta cheese/ black /green olives/ fresh micro greens/ parsley/ cherry tomatoes/ sunflower seeds/ flaxseeds.

Method:

1. Prepare the ingredients for the salad as listed.

2. Marinate the chickpeas and keep them aside for 15-20 mins.

3. Toss the salad with the other choice of ingredients as per the list above and adjust the seasonings.

4. Create a base of the leaves on a serving plate or bowl, place the body and garnish appropriately and serve the salad chilled.

The one-night-only dinner at Isoletta beach, will see Chef Domenico create a five-course dinner showcasing the best of Italian flavours paired with a curated selection of wines from the Banfi portfolio.

Banfi was founded in 1978 by Italian-American brothers John and Harry Mariani. Over the past 40 years, Banfi has built a successful and notable history through four key pillars – pioneering, research, innovation, and sustainability – that have helped shape the company’s story and contributed to its success. The Banfi is arguably the most famous of the brand’s Italian wineries. Located just outside the hilltop village of Montalcino, in one of the world’s most famous wine-producing regions, Tuscany, it produces world-class Brunello’s, Rosso’s and Super Tuscans. Banfi also operates other estates throughout Tuscany and Piedmont, producing various red, white, and rose wines.

The centrepiece of their extensive vineyards in Tuscany is the stunning, walled and turreted 13th-century castle, Castello Poggio Alle Mura. It houses a hotel, a glass museum, the Enoteca, and two restaurants, including the one Michelin star, La Sala dei Grappoli -- Chef Domenico Francone’s domain.

Gujarat-based Tea Brand, Seven Spring, Introduced India’s First 100% Compostable Tea Sachets

Aiming to curtail one of the world’s largest environmental problems of global plastic pollution, Seven Spring, the premium tea brand from Gujarat, has introduced India’s first-ever 100% compostable tea bag sachets with zero plastic and aluminium foils. This new packaging is environment-friendly and focuses to cut back on waste, zero plastic consumption, and carbon emissions. To contribute its bit to build a pollution free Nation, in-line with the Government’s G20 initiative, Gujarat based start-up, Seven Spring came up with this packaging.

Talking about the move of introducing 100% compostable packaging, Sejal Purohit, Founder of Seven Spring said, “Going environment friendly or sustainable is no longer an option. We have reached a point where absurdly large amounts of single-use plastic are being used. Every company needs to make effort to reduce the use of single-use plastics. Six Senses Laamu Celebrates the Inauguration of the Sea Hub of Environmental Learning in Laamu (SHELL)


Science, marine conservation, and education meet high-end hospitality in a new hub on the shores of Six Senses Laamu.

LAAMU, Maldives – January 2023 – Six Senses Laamu proudly announces the opening of the Sea Hub for Environmental Learning in Laamu (SHELL) on March 1, 2023. The SHELL sits on the resort’s sunset beach, covering a total area of 5,952 square feet (553 square meters), with its cornerstone placed on May 6, 2022. It will house the Maldives Underwater Initiative (MUI), a marine conservation collaborative consisting of Six Senses Laamu marine biologists and partner NGOs, The Manta Trust, Blue Marine Foundation, and the Olive Ridley Project, along with a gallery exhibition space, offices, marine laboratory, cinema room, and kids’ zone. Virtual and augmented reality technologies and conservation art will further enhance the space.

Marteyne van Well, Regional General Manager, says, “Healing the ocean requires understanding first. The environmentalist Baba Dioum once said, ‘In the end, we will conserve only what we love; we will love only what we understand, and we will understand only what we are taught.’ So, let us teach; let us educate the new generation on the importance of nature conservation. The SHELL is a multi-use space designed for guest education and for offering curated and immersive marine conservation experiences. The 2,336 square-foot (217 square-meter) central exhibition space invites guests to explore the colorful and vibrant local marine life during out-of-the-ordinary encounters. The MUI team will be offering hands-on guest activities and presentations parallel to their research, conservation efforts, and initiatives. The SHELL will also feature designated facilities for hosting world-class researchers to further expand MUI’s ambitious goal to see sustainable resource management in Laamu.

With the goal of bringing an immersive experience to the guests at the SHELL, the central gallery, also called the Tank, boasts a high-resolution LED display floor and five educational viewing booths for kids and adults. It features diverse underwater scenes of the Laamu atoll to give insights into selected micro-topics on marine life. This immersive gallery, designed by Illuminate Productions in Singapore, is unique in the Maldives and seeks to showcase and educate guests on the exciting marine life around Six Senses Laamu. Inspired by a glass-bottom boat, the content will be periodically updated to reflect new footage captured by the resort’s dive team and diver hosts, bringing about an ever-changing canvas for guests to enjoy during different visits to the resort.

The Kids’ Zone is designed for young (or young at heart) and aspiring marine biologists to discover the secrets of Laamu and the underwater world. Highlights include an augmented reality sandbox which allows the users to change and redesign habitats and topography using projection mapping technology, and the ‘Draw Alive’, where children will be able to color-in their favorite marine creatures and watch them come alive on a large screen with the help of advanced animation technology to watch them swim and move throughout a virtual world.

Lawrence Menz, Project Manager of the SHELL shared, “Just like the hermit crab that moves into a larger shell when it outgrows the previous one, The Maldives Underwater Initiative by Six Senses Laamu also needs a larger space to call home, as the team is growing in size and ambitions. The SHELL will showcase the stunning marine environment that surrounds us, with breathtaking visuals and immersive and hands-on interactive experiences. We will be conducting innovative research in our new laboratory facilities that we hope will help us find the answers to, at least, some of Laamu’s questions.”

The SHELL features a 506 square-foot (47 square-meter) amphitheater displaying stunning visuals of the underwater world as a backdrop for the team to tell their stories of the land and waters of Laamu and present their research and findings to guests and scientific peers.

Quoting Philippa Roe, Head Marine Biologist, “Over the years, the MUI team has been working to establish Laamu as a hub for marine research and become an example for sustainable marine resource management in the Maldives. Having presented 12 research papers at the 2022 Maldives Marine Science Symposium focused on research on Laamu, the center’s facilities will allow us to make even greater strides toward understanding and helping the marine environment and reaching our goal. It is this information that has contributed to the establishment of six Marine Protected Areas in the atoll, and Laamu being designated a Mission Blue Hope Spot in 2021.”
