Hygienic and clean washrooms have been a prominent issue in the rural parts of our country. When we travel on the highways from one city to another, the one problem every woman and child faces is finding a hygienic washroom in between their journey. There are many public washrooms that we pass through, but hygiene is something that we cannot count on. To eradicate this problem once and for all, Kamats Restaurants, being a highway restaurant brand made it a mission to become a pit-stop with having a clean washroom, changing rooms, and pocket-friendly fresh food, keeping the quality of food persistent.

When asked Dr. Vikram Kamat about his thoughts on the same, he said, "Kamats has always been serving fresh and hygienic food to all its customers but when I joined the business, the first thing I tried focusing on, was the hygiene factor of our washrooms. A lot of road travelers in our country choose internationally famous brands for using their washrooms while they crave eating hot and fresh Indian meals. This made me think about the importance of clean washrooms for Indian road travelers along with great food. Therefore trying to bridge this gap we have ventured into making all Kamats provide not only hygienic food but also clean washrooms so that our guests can eat and freshen up in comfort at the same pit stop.”

He further added saying, “Along with clean washrooms, beginning from Kamats Karad, we have also started installing sanitary napkin vending machines at our women's washrooms. This will not only help our business but also improve us as a community and make Indian highway restaurants a preferred option too. This initiative is also aimed at our country's overall mission towards good hygiene and promoting local businesses and Kamats being an iconic brand it only makes us proud to contribute towards our own country and society.”

The Westin Resort & Spa Himalayas partners with The Plus Initiative supported by THSC to provide skill training to the youth in Uttarakhand

National, May 2023 - The Westin Resort & Spa, Himalayas has announced a partnership with The Plus Initiative, a joint project between The Job Plus and Tourism and Hospitality Skill Council, to empower the youth and create a skilled workforce for the hospitality industry. To be located in the historic heart of Turin close to the Piazza Castello, Royal Theatre and Gardens, will benefit from leisure guests, business travellers and event goers to the local Pala Olimpico. 

  • IN THE PIPELINE: Hotel Indigo Trieste - Palazzo Kalister, – Partnering once again with Gruppo CHC, this conversion project will see an historical palace built in the 19th century transformed to a Hotel Indigo hotel set to open in late 2025. This hotel will enjoy the growing local area, whose Italian/ Slovenian border location has recently seen strong investment due to its local port, increase in cruise ship tourism and opening of a convention centre. 

IHG has 27 hotels* operating under six* brands in Italy including Crowne Plaza, Hotel Indigo, voco Hotels, Holiday Inn and Holiday Inn Express. There are a further seven* properties in the pipeline, all but one of which are in the luxury and lifestyle space.

Michelin revealed, at the Atlantis The Royal hotel, its new selection of restaurants in the MICHELIN Guide Dubai 2023. A total of 90 restaurants, covering 23 different types of cuisine, have caught the attention of the famously anonymous MICHELIN inspectors.

 

For this second edition, the MICHELIN Guide Dubai recognizes three new one MICHELIN Star restaurants, and one new two MICHELIN Stars restaurant, as well as 17 Bib Gourmands which were unveiled on May 16th.

Last year, Chef Solemann Haddad received the MICHELIN Young Chef Award 2022, but this year, his restaurant, moonrise, confirmed its potential and is awarded one MICHELIN Star. Dinner here features 10 dishes, each with their own story, where Middle Eastern ingredients are prepared using Japanese techniques, for a result as original as it is stimulating.

Two restaurants receive a MICHELIN Green Star in this 2023 Dubai selection:

Boca, a new addition to the Guide, offers joyful and sunny Mediterranean cuisine while following an impressive sustainable ethos that includes using local produce, proactive and conscious waste management, valuing resources, and using renewable energy.

Teible is a cool eatery whose menus showcase seasonal, local ingredients combined with innovation and simplicity to enhance their potential. The tasty cooking illustrates a sustainable approach focusing on seasonality and integrity.

IHCL SIGNS ITS THIRD HOTEL IN INDORE, MADHYA PRADESH

Indian Hotels Company (IHCL), India’s largest hospitality company, today announced the signing of a SeleQtions branded hotel in Indore, Madhya Pradesh. The currently operational property will be rebranded SeleQtions.

Commenting on the signing, Ms. Suma Venkatesh, Executive Vice President - Real Estate & Development, IHCL said, “The signing of this hotel further strengthens our presence in the strategically important state of Madhya Pradesh. Indore, its financial capital lies in proximity to major industrial hubs and is home to several large IT parks. Ingredients

Watermelon- 2 cups freshly cut

Water- 2 cups

Cucumber-1/2 no peeled and cut into cubes.

Mint leaves- 12-15 no.

Ginger juice- 1 tbsp.

Lime slices- 3-4 no.

Lime juice- 2 tbsp.

Salt- pink/sea salt/rock salt- ¼ tsp – optional

Fresh basil leaves- 5-6 no.

Method:

1. Prepare all the ingredients for the detox refresher.

2. In a blender jar combine together the fresh watermelon, with cucumber, little water and churn it.

3. Remove in a mixing bowl, add in the ginger juice, lime juice, Mint and basil leaves, a pinch of salt if desired.

4. Mix well and pour into glasses and serve immediately.

5. Have a couple of glasses of this detox refresher and feel fresh and light.

Recipe- 2] WATERMELON SALSA BOWL

Ingredients:

Watermelon- 2 cups fresh cut into small pieces

For the salsa:

Garlic-1 tsp chop

Onions/ spring onions -2 tbsp. chop

Fresh red ripe tomatoes- ½ cup chop.

Fresh basil/spring onion greens/ mint leaves- 2 tbsp. each

Rock salt/ pink salt/ black salt- 1 pinch

Olive oil- 2 tsp

Honey- 1 tsp

Ginger juice-1 tsp

Chopped green chilies- 1 tsp

Crushed black pepper-1/2 tsp

Flax seeds/ melon seeds/ pumpkin seeds-1 tsp

Fresh orange segments-1/4 cup

To serve with-  whole wheat/ multi-grain savoury crackers/nachos/tortilla chips as a snack!

Method:

1. Prepare all the ingredients for the recipe and keep aside.

2. This is an uncooked version of a watermelon salsa as its more nutritious when not cooked.

3. Using a mixing bowl, combine together all the ingredients and give it a good mix, add boiled sweet corn as well if desired for some color and crunch in the salsa, I usually use freshly roasted crushed corn kernels in this one.

4. Check for seasonings, adjust accordingly and chill the salsa until being served, allow a standing time of at least 20 mins before having it.

5. Arrange the savoury crackers/nachos/tortilla chips on a serving platter and spoon in the salsa into a bowl and serve along, add olives, gherkins etc as desired.

Recipe-3] WATERMELON & AVOCADO TOSS SALAD

Ingredients:

Watermelon- 2 cups freshly cut and cubed.

Ripe avocado- 1 no, peeled- stoned and cut into cubed

Iceberg lettuce/ any fresh greens of your choice- 1 cup

Cucumber- ½ cup cubed

Tomatoes-1/4 cup cubed

Dates- 3-4 no, without seeds, cut into pieces

Assorted nuts- 2-3 tbsp.- walnuts/cashews/ almonds/ peanuts.

For the dressing:

Honey- 1 tbsp.

Ginger juice-1 tsp

Lime juice- 2 tbsp.

Mint leaves- 4-5 no.

Melted jaggery- 2 tsp

Flax seeds/ melon seeds- 1 tsp

Olives- black/green- 3-4 no sliced.

Parsley/ coriander- 2 tbsp. for garnish.

Method:

1. Prepare all the ingredients for the salad and keep chilled.

2. Just before serving, in a mixing bowl combine together the ingredients for the dressing and mix them well.

3. Arrange the base of the salad greens on a serving salad plate or bowl, place the body of the salad on top and finally drizzle the dressing over and garnish.

4. Serve the salad instantly and enjoy it before or with a light meal for lunch/dinner.

Recipe- 4] NUTTY WATERMELON SUMMER SALAD

Ingredients:

Watermelon- 2 cups freshly cut into cubes

Iceberg or any greens of your choice/purple cabbage- 1 cup

Feta cheese/ cottage cheese- 2-3 tbsp. crumbled

Assorted nuts- 2 -3 tbsp.- pinenuts, peanuts, almonds 

Assorted fresh veggies which can also be added to this salad;

Babycorn, broccoli, carrots, French beans, green or yellow zucchini, asparagus, water chestnuts, boiled lotus stem slices.

For the dressing:

Olive oil-1 tbsp.

Watermelon pulp-1/4 cup

Sweet lime juice/orange segments -2 tbsp.

Melon seeds/ chia seeds-2 tsp

Salt and pepper to taste

Balsamic vinegar/ lime juice- 2 tsp.

Mustard paste-1/2 tsp

Mint and coriander leaves- 2 tbsp.

Date puree-1 tbsp.


Method:

1. Prepare all the ingredients for the salad.

2. In a serving bowl arrange the base of greens of your choice, cabbage, etc.

3. In a mixing bowl combine the dressing ingredients and blend them well.

4. Arrange the body of the salad on the base onto the serving plate and drizzle the dressing over and serve garnished with nuts/seeds/micro-greens etc.

Ingredients for the Mango confit:

·       2 cups mango purée

·       2 whole mangoes cut into cubes

·       Half cup glucose powder

·       Half a cup of sugar

·       1 tablespoon pectin NH

·       1 teaspoon lemon juice

 

Preparation: Heat the mango puree and sugar. Once the mixture boils, add pectin. Switch off the flame and add mango cubes and lemon juice.

Ingredients for the white chocolate mousse:

  • 4 cups cream

  • 3 vanilla pods

  • gelatin leaf

  • cup white chocolate

 

Preparation: Heat the cream and add the vanilla to infuse for 30 minutes. Soak the gelatin in cold water. Strain the vanilla and heat again until lukewarm. Add gelatin to the mixture along with melted white chocolate.

Ingredients for the glaze:

·   2 cups white chocolate

·    1 cup milk

·   1 cups mango purée

·  1 gelatin leaf

Preparation: Soak the gelatin in cold water, heat all ingredients, switch off the flame add gelatin to let it cool down.

Final step- assembling it together: Mix the white chocolate mousse and mango confit. Place into a mold and keep in the freezer for 4 hours. When ready, pour the mango glaze on the mousse and arrange on a plate as desired.

IHG Hotels & Resorts to Open InterContinental Sapporo in late 2025

IHG Hotels & Resorts announced an agreement with AXA Life Insurance Company to open InterContinental Sapporo in late 2025. InterContinental Sapporo will be IHG’s fifth hotel in Hokkaido, its first luxury hotel In Sapporo and its eleventh InterContinental-branded hotel in Japan.

InterContinental Sapporo will debut on the upper floors (9th to 14th floors) of a new building in the "AXA Sapporo Nakajima Park Project", which was announced today by AXA. Alongside the hotel’s two dining venues, lounge, bar, function room, indoor pool and gym, the hotel will feature 149 spacious guest rooms that range from a spacious 42 square metre lead-in room all the way up to a 159 square metre suite.

The hotel will feature a high-end, residence-like offering, with color coordination reminiscent of the nature of Hokkaido. With floor-to-ceiling windows that afford views of Nakajima Park and Toyohira River, guests will experience the rich nature of Sapporo from the comfort of their room.

The age-old question of whether blended whiskey can measure up to pure blends has been a subject of much debate. However, the truth is that creating the perfect blend of whiskeys is more of an art than a science. MYTH 4: COCKTAILS ARE BEST MADE WITH WHITE LIQUOR AS THE BASE

The First Crispr-Edited Salad Is Here

A GENE-EDITING STARTUP wants to help you eat healthier salads. This month, North Carolina–based Pairwise is rolling out a new type of mustard green engineered to be less bitter than the original plant. The vegetable is the first Crispr-edited food to hit the US market.

Mustard greens are packed with vitamins and minerals but have a strong peppery flavor when eaten raw. To make them more palatable, they're usually cooked. Pairwise wanted to retain the health benefits of mustard greens but make them tastier to the average shopper, so scientists at the company used the DNA-editing tool Crispr to remove a gene responsible for their pungency. The company hopes consumers will opt for its greens over less nutritious ones like iceberg and butter lettuce.

“We basically created a new category of salad,” says Tom Adams, cofounder and CEO of Pairwise. The greens will initially be available in select restaurants and other outlets in the Minneapolis–St. Paul region, St. Louis, and Springfield, Massachusetts. The company plans to start stocking the greens in grocery stores this summer, likely in the Pacific Northwest first.

A naturally occurring part of bacteria’s immune system, Crispr was first harnessed as a gene-editing tool in 2012. Ever since, scientists have envisioned lofty uses for the technique. If you could tweak the genetic code of plants, you could—at least in theory—install any number of favorable traits into them. For instance, you could make crops that produce larger yields, resist pests and disease, or require less water. Crispr has yet to end world hunger, but in the short term, it may give consumers more variety in what they eat.

Pairwise’s goal is to make already healthy foods more convenient and enjoyable. Beyond mustard greens, the company is also trying to improve fruits. It’s using CRISPR to develop seedless blackberries and pitless cherries. “Our lifestyle and needs are evolving and we’re becoming more aware of our nutrition deficit,” says Haven Baker, cofounder and chief business officer at Pairwise. In 2019, only about one in 10 adults in the US met the daily recommended intake of 1.5 to 2 cups of fruit and 2 to 3 cups of vegetables, according to the Centers for Disease Control and Prevention.

Technically, the new mustard greens aren’t a genetically modified organism or GMO. In agriculture, GMOs are made by adding genetic material from completely different species. These are crops that could not be produced through conventional selective breeding—that is, choosing parent plants with certain characteristics to produce offspring with more desirable traits.

Instead, Crispr involves tweaking an organism’s own genes; no foreign DNA is added. One benefit of Crispr is that it can achieve new plant varieties in a fraction of the time it takes to produce a new one through traditional breeding. It took Pairwise just four years to bring its mustard greens to the market; it can take a decade or longer to bring out desired characteristics through the centuries-old practice of crossbreeding.
