1P – Pose a Question

As a trainer we all know that asking questions is one powerful technique that every trainer must use. It is from the list of must have’s.

There are 2 types of questioning and they are Open ended and Closed ended. Both can be used as and when required but the sequence of questioning to test knowledge and learning progress while holding attention of all the attendees at the same time has a trick. Firstly, pose a question towards your learners with your eyes looking around. This would put everyone at attention as they do not know who must answer the question.

While you ask your question, keep your voice loud and clear to be audible to all in the room. Making eye contact is a must, this ensures two things – Get everyone’s attention and also helps you to gauge who could be knowing the answer. The idea is not to embarrass but to encourage participation during the training session.

2P – Pause

Post posing your question, look around, glancing over each one while taking a pause. The pause is to make sure everyone is listening to you. Incase, you notice someone has still not heard you. You may give them time to ask you to repeat.

3P – Pick a name

Out of all the learners sitting in the room, you must pick a name of the person you want to answer your question. Ensure to keep changing the names instead of picking up the same person all the time.

4P – Praise the person

Once you get the right answer, learn to praise. Praise can be in one word like "Bravo", "Superb", "Brilliant" or a phrase like, " that's the right answer". You may also ask everyone in the room to clap for the person. This would also create attention and participation. This also fills your session with good energy. Praise the person and confirm that the answer is right.

As Trainers, you must be able to gauge who has the right answer to avoid embarrassment. To involve all levels of learners, keep a bank of all levels of questions meaning easy to difficult ones so that you can ask as many questions as possible. Make note that you have balanced equally to all.

India as we all are well are of has been a land of multi-cultural diversity and for the fact that we embrace the thoughts and walks of our citizens with an open mind, it has always been a place which attracts tourists from all over the country and the world today who wants to visit various parts of India to explore not only the culinary aspects and hospitality of every state which is very impressive and engaging but also the flavours and culinary offerings which are not just robust, colourful and extravagant but also have a variety to choose from in order to suit all age groups.

This summer of 2023 has been very special for me on the whole since I finally made my way to Rajasthan covering three well known places namely Jaipur, jodhpur and Udaipur. The plan took its pace as soon as the entire plan fell in place and it was a sigh of relief since finally a little break was happening after a long time which was much awaited and due.

The excitement grew as the date of travel neared closer and bags packed, the flight boarded and reached to Jaipur to start with. I have always been a little particular about my plans before leaving home that all need to be falling well in place and no last-minute hotch potch issues to surfacing upon arrival for the holiday. And so did the case be, my car and driver were all set to receive me at Jaipur Airport which dropped me at Holiday Inn Jaipur City Centre, an impressive hotel with a five-star rating, loads of guests in house and a very warm welcome extended by the culinary team of chefs headed by Chef Surendra Shekhawat was heart- warming and a chilled glass of soothing coconut water which came by as a welcome drink was truly wow! After a little settling in the room it was time to check on the spa in the hotel which offered number of treatments to relax at the sohum spa. The green herbal tea and kadak boiled chai served there too was just amazing and soul refreshing!

The evening was set for local markets and sight seeing from the museums to the street markets which was pretty impressive as well to check out the local stuffs made there from the bandini prints/ block prints/ bedsheets and more. For dinner way back at the hotel we were greeted by the food & beverage manager at holiday inn who recommended we try the oriental and Chinese restaurant which was also hosting a Mongolian foods fiesta. The chef at this outlet was chef Nitesh who not only offered some lip-smacking delicacies from the special menu but also pampered us with his signature dishes which are still so very lingering on the palate even now! 

The later part of the evening was for leisure and it was spent over a cuppa coffee and conversations with some of the other department staff of the hotel as well including Mr. Aekham from housekeeping department who made sure my room was all set before check-in and a photo cake with number of desserts were arranged on a platter and came as a surprise as well upon entering the room on the floor. calling it a day and squeezing into the very comfortable bed in the room and within a matter of few seconds the dreams den took charge.  The next morning was a very pleasant one and started with the lavish spread of live counters, Indian and continental breakfast which was offered by the hotel. Must say I did stuff myself a little since it was too tempting overall.

The further part of the day was for sight seeing and meetings lined up catching up with some old-time friends, connects, fans and students as well from hotel management colleges who dropped in to take job guidance and advice on their near future plans and it was a very pleasant evening on the whole. Dinner and late-night coffee were like cherry on the cake. Overall, I must say that the experience at Holiday Inn was a great one and Chef Surendra Shekhawat, Chef Nitesh Kanet and the team took very good care and offered best possible hospitality. Must mention here will be the coconut jaggery ice-cream prepared by Chef Nitesh which is not only his in-house creation but also excellent in taste – a must try when you visit his restaurant. Also, not to forget & appreciate the talented man behind the scenes Executive Chef Ramesh Kukreti.

The next destination was Jodhpur! 

After a nice drive from Jaipur enroute jodhpur was nature at its best and a smooth journey with a little lunch break made me reach the famous Indana Palace Hotel- Jodhpur. A warm welcome yet again and a royal rose sherbet coming our way as a welcome drink was truly heart-warming. A quick and swift check in and we arrive into a nice palatial room well prepared and presented to make a mark of impression which truly met my expectations. Upon arrival in my room, I get a call within a few minutes from Mr. Kuldeep from the In- Room Dining stating that a refreshing mint- lime mojito drink is on the way to the room to enjoy & refresh & so was it. Very well-made drink at the right temperature and great flavour. Another person I must mention here is Mr. Vikas Soni from the food & beverage department- asst. manager at the Indana Palace, Jodhpur who not only ensured that I was comfortable during the stay but also was a great host at the restaurant from suggesting some really great dishes to try out from the menu- signature of the place, we did go by the same and it was magnificent! It was also great meeting the legend -Executive Chef Mr. K. C. Verma at Indana Palace & we had some really great conversations in regards to the food industry and chef shared his valuable experience over the years which was truly inspiring and motivating. Chef not only offered us some of his best tandoori speciality samplers and some great vegetarian delicacies to try out but also ensured we ate well and enjoyed the flavours from his kitchen. 

Besides a great choice of breakfast from live counters to fresh cooked dishes the restaurant staff too were very cooperative and extended a great support all through my stay. The hotel also has a good spa which we tried for a basic treatment and is a must visit venue inside the palace hotel near the poolside. 

Jodhpur too was a nice place to explore from the ancient monumental venues to the places of historic interest, the forts especially the Ummaid Bhawan Palace here was very interesting and it was a great experience visiting here. Overall, it was a wonderful experience at jodhpur as well with a little local shopping, some great Rajasthani foods and culture, I had great memories to take back from every person I came across here.

On the final destination it was now time to reach Udaipur! A place much awaited on my list to visit for the very first time and to explore- visit and also meet a few old connects kept up the excitement. For Udaipur after much research and recommendations I had selected The Ananta Resorts, a place which not only creates a great first impression but also takes one back close to nature, greenery and serene atmosphere to unwind and relax! Upon a warm welcome and quick check in here as well which was well managed and executed by Mr. Vaibhav Ameta- Senior duty manager- front office, it was a moment to indulge into some nice Chinese food at their restaurant which was served for lunch, good taste and flavour showed up here too in order to make me carry a positive impression all the way during my stay. The restaurant manager here Mr. Raza Shaikh was very warm and welcoming, made us feel comfortable during the meal hours and ensured that all went well on my table. Mr. Suman- the executive at the restaurant who attended my table during the meal was very open to having conversations and guest with hotel staff connect happened quite smoothly here as we spoke. Mr. Rambilash- f & b executive also was a friendly and helpful person here at the resort.  After a nice meal I check into my villa room up all the way on the level 6 at the resort, there are buggies and cars which shuttle up and down all through and are a just a call away. 

The room here too was pretty impressive, well set and hygienic, presentable and had all the features of creating a good first impression. Mr. Rakesh Damor from housekeeping department was a very friendly employee here and made sure that everything was fit and fine in my room all through the stay. Chef Shravan a senior chef at the Ananta resort, Udaipur along with his team was very instrumental in ensuring that the buffets, live counters and overall set up was being done promptly. He was not only a person who loved interacting with the guests but also was open to suggestions and feedback from them in order to make things better in the days to come as per the guest expectations.

Chef Shravan not only was a great individual to interact with and have culinary conversations with but he also surprised me with a number of his delectable delicacies from Indian and Chinese cuisine during my stay at Ananta Resort, Udaipur. Besides Ananta on my list, I also had an opportunity to meet with a number of hoteliers, chefs and hospitality experts here at Udaipur which was truly heart-touching. To start with the young- energetic & talented Chef Mushtaq, who also manages the very impressive hotel at Udaipur called the parallel- a five star rated hotel with a very impressive open air restro- lounge which was just too cool- great ambience and amazing food well curated, crafted and complimented with choice of beverages. Chef Devendra who is known for his Italian dishes also presented some of his specialities during my visit to the hotel especially the mushroom risotto which was wow!  The parallel hotel has a good number of rooms, suites- standard rooms well designed, state of the art – very well clean and hygienic set up which not only suits the traveller on the move but also great for those who wish to unwind and have a family holiday as well. The hotel also has an excellent SPA and gym facility as well. food served here is perfect to suit the tastes of all age groups and has a choice of Indian- Arabic- oriental and the chefs are open here to even customise dishes to your taste as needed to offer you a great experience. A must visit hotel when in Udaipur – The Parallel!

Udaipur was all about exploring, meeting people, interacting with like-minded professionals and networking! One of the much-awaited hotels to visit on my list was the absolute wonder – The Oberoi – Udaivilas & yes, the name says it all. A property which not only represents ultimate luxury with class and quality but is also very well known for its culinary diaspora! Upon having reserved a table for lunch at the Udaivilas, I met with yet another legendary talented and well experienced chef Mr. Alok Anand, the executive chef at the Oberoi Udaivilas. Chef Anand thoroughly pampered us during this lunch with some of the great mouth-watering Rajasthani delicacies from this kitchen which came dished out with a touch of royalty and garnished to perfection, piping hot and it is going to be difficult for me to define the aromas and the first impression while it all came down on the table- simply superb! From the desi Indian starter platter to the mongodi ki subzi to gatte ki curry, the dal makhni cooked on a low flame for hours, the lacchedaar parathas, salad, raita it was all simply amazing and to add to the cherry on the cake was the home-made gulab ki kheer which is one of the signature desserts of the hotel, it was just out of the world. We enjoyed the kheer till the very last spoon. While we kept saying there’s no place for dessert Chef Anand challenged us that it would be a delight for the palate and it truly was! This was one of my best dining experiences with some great conversations with chef Anand at the Oberoi Udaivilas. I am now looking forward to my next visit to the hotel for a stay as well to experience complete luxury like never before!

While the weather during the day time was a little warm the evenings at Udaipur were pretty pleasant and windy and to make the most of it I also happened to accept a dinner invite from a few old connects to sit by the lake Fateh Sagar at an open air dining place to have a nice re-union coupled with some great food and beverage, this too was a nice experience and there’s nothing like enjoying conversations with great food and company which matters a lot! 

Udaipur for me was the finale of this rendezvous journey to Rajasthan this summer of 2023, though it happened all of a sudden it turned out to be great! The 3 cities Jaipur- Jodhpur and Udaipur makes me take back some of the fondest memories of recent times which will remain with me forever.

On a concluding note, I must thank each and every one who made this possible in order to cover all these places, the wonderful hospitality at Rajasthan every place, every person, every hotel employee, common man had a lot of humility and down to earth attitude which speaks miles about the places and would surely be a positive recommendation from my end to everyone who loves to travel, visiting new places in our own country itself must visit Rajasthan at your own convenient time during the year, it is a must go and visit destination.

VISTARA EXPANDS BILATERAL CODESHARE WITH LUFTHANSA, ENHANCES INTERNATIONAL CONNECTIVITY

BEING SELECTIVE OF ELECTIVES IN TODAY’S HOSPITALITY JOB OFFERINGS – DR. KAVIRAJ SHARES HIS THOUGHTS & SUGGESTIONS.


Competence and confidence two of the many list of essentials required in the field of hospitality have also been facing a slight twist and elements of change in the last few months. In recent times my observations and experiences have a lot to say about the thought processes and mindsets of certain aspiring to be futuristic hoteliers. It has always been a challenge to get the right person for the right job at the right time and place when it comes to building teams and filling in the gaps which arise and appear almost at all times in the last few years.

From freshers to slightly experienced and even the higher-ups have been looking for something good and being able to meet up self-expectations, growth plans, increments, promotions, and beyond. The very fact that the industry has just picked up in the last few months has seen a huge rise in new appointments, new recruits, and positions available for almost every single department in the hotels from top to bottom. 

If I look back around a year and a half, the scene was very unexpected and unavoidable which left a big number of candidates in a lot of confusion and unsure on what next? a lot of counseling, mentoring and lifestyle coaching, career guidance picked up and I even came across experienced profiles asking shall I switch my industry? Will there be any luck of things opening sometime in the near future? The level of bewilderment rose to great heights and many gave up for the survival fact and some thought of self-driven ventures too. The fact of the matter remains that we have all lived through challenging times and have evolved as better individuals, brands, hotel chains, restaurant businesses, airline companies and more.

A few of my thoughts and experiences are shared below and I am sure many of you will somewhere resonate with a few facts.

1. The Connective Social Media: while most people don’t even remember the passwords to their social media accounts very easily, their presence on them is widely visible and has been for the fact that I myself have received hundreds of messages asking for job references, referrals on whom to connect with? queries like which department shall I apply for? What salary and benefits shall one look forward to? Is brand A better, competitive or less adviced to join than brand B? having been stood in a little contributing support towards our industry I did get a chance to counsel and advice a number of people on the above and more, and I must share that we should maintain connects not only when we have tough times in life, or not having any other options, or needing help from each other in challenging phases of our careers. The need to keep the connect is important.

2. MAKE YOUR RIGHT MOVE: while a lot of today’s young generation gets carried away with peer suggestions, online visibilities, ratings and surveys, a dream profile and a dream start-up job with a particular brand or hotel, we also need to look at the realistic approach factors. I came across candidates who said they wanted to have their jobs within 4-5 km of their residence since they read somewhere that saving energy is maximizing quality at work. Another example that comes to mind is that I wanted to join a particular hotel, all went well, got selected, joined and within 2 weeks left the place of work since there was nothing much to learn and therefore wish to quit. After a little interaction and understanding the views of such candidates a few inferences which came to mind, we are we not in a position to adjust in new environments? Or is there something like a fast-forward mode that needs to be activated upon starting a new job.



3. BEING INSIGHTFUL & NOT IGNORANT: Due to the online mode of the education system in recent times the student fraternity across the globe has little experience when it comes to the real true face and expectations by the practical industry on the whole. Theory and online practicals have indeed been a way of instruction and learning for a while now, keeping that in mind candidates need a little time to be a part of conversations, guidance, special career planning seminars etc which can play a role in shaping minds and bridging the gap between demand and supply. If a candidate during an internship is being asked to cut and chop/slice onions, bags full of them which is the case since our times, instead of complaining about it and making a fuss at work one should take it up as a challenge and task to enhance your cutting skills and more. Every task we do or come across has something to teach us, be it polishing of glasses, cleaning tasks in house-keeping, carrying out store pickups, setting up banquet venues and requirements or for the fact of simply filing papers at the back office.

4. AFFIRMATIVE APPROACH TO ADVANCEMENT: A pre-set mind, pre-conceived notions and hearing a few unpleasant experiences doesn’t make work places unsuitable or cutting them off your lists. No human being is perfect and hence we need to be able to accept the law of nature which says acceptance, affirmations and being adjustable. Interactions via offline sessions/seminars/ career guidance meets with graduating hospitality students offered a lot of new world thoughts and queries which came up checking on working conditions, people’s behavior, and comfort zone expectations upon joining a new place of work. A few instances and experiences also showed me lack of affirmative thoughts being instilled upon carrying out even a short-term internship exposure which was meant to be a value-added approach beyond online classes to get first-hand experience and practice which is being offered by almost all hotels in the city and country at the moment. In spite of being mentored by academic team members, and guides, the human resource department teams at hotels giving up too soon has been the observation which is not really advisable. One has to get used to new environments, people, situations and work cannot be defined to that extent where a fresher does mise-en-place for a week and starts working on the live range cooking up guest orders. A steady phase of understanding nuances and building confidence side by side will all make it happen.

5. SKY IS THE LIMIT TO ACHIEVEMENTS & PERFORMANCE: well phrased, written and endorsed! The fact of the matter remains whether we are ready to even take a few steps to reach out where we wish to. While most candidates choose to pursue hotel management to become chefs, has now become a shift in thoughts and today we come across aspirants who say we wish to do something different, want to be a self-made entrepreneurs, guess I can be a good sales and marketing professional, some of the passionate ones wish to be celebrity chefs, a good name in the industry, would like to get into event management, have in mind to start my own restaurant chain, aspire to be an in-flight manager with a leading airline company, see myself working on a well-known cruise traveling around the world making big money! With time things change, and guess some of we the seasoned ones are well-tempered and accustomed to managing change with our enriched experiences and realistic lifestyles. In conversation and interactions with leading teams from human resources, training managers, and learning and development specialists across India gave me nourishing feedback too on the same and while some focussed candidates who join in for internships or start their careers with reputed brands and hotels are able to meet up expectations and keep up their spirit of learning, experiencing and work on themselves as well to in-still a sense of discipline, dedication, consistency, performance and feedback strategy plans, multi- departmental skills development approach and more.

6. ALTERATIONS & REVIVAL PLANS MAY WORK:

Not everyone is born with a golden spoon, all five fingers aren’t the same size, Rome was not built in a day, patience is the key, and persistence pays! At times we see, hear and say a lot of things without actually reading in between the words, thoughts, and statements. Our industry is not a bed of roses for all, it is a two-way approach that always works. We cannot be selecting a job because the brand offers six or eight off days in a month or has limited workload or will be a general shift from nine am to six pm. Making a choice with the right homework being done in advance can help one to be more sustainable. Operation departments like kitchen, bakery, restaurants, banquets, house-keeping, front office cannot be time bound all the time, there are times when we have to stay back and adjust to situations, meet up the guests expectations, offer our one hundred percent and more at work to maximize revenue and maintain guests with us for long. The competitive world today which has loads of competition cannot be taken so lightly and hence joining a place of work and living it day by day, working up the ladder, having a need to accept challenges and to be able to get recognized as well should be on the to do checklist of aspiring future hoteliers. Giving up too fast, not giving yourself a second chance, not being open to getting the right guidance, thinking one-sidedly only, and concluding things by just facing a few tough days is not the solution.

On a Concluding Note: passion to achieve, a keen interest and liking to do something, utilising your own inner skills, talent and capabilities not only help us to evolve much better on a personal level but also on a professional level. In times to come, we will witness a lot of development and positive steps being coming to real in our industry on a global platform. My little advice to all would be to not deviate from your selection choice, do not change your mind every day on selecting a department, choice of subject for a specialization, attending certain lectures, practical and theory sessions etc. be open, receptive, willing to take part in self-development, speaking your mind out, connecting with experienced resource people is the need of the hour. Let us all take a vow that come what may we shall not give up on our dreams and achieve the very best from the electives on our selection list.

IHG fills luxury gap in Marbella with Kimpton’s third Spanish signing

IHG Hotels & Resorts, one of the world’s leading hospitality companies, is proud to announce the signing of Kimpton Los Monteros Marbella – the latest milestone in its rapid European growth.

The agreement, revealed at this month’s International Hospitality Investment Forum (IHIF) conference in Berlin, marks the third Spanish signing for the Luxury & Lifestyle brand, following Kimpton Vividora Barcelona and Kimpton Aysla Mallorca.

Kimpton Los Monteros Marbella will provide visitors with an idyllic retreat in the foothills of the Sierra Blanca mountain range between Malaga and the Strait of Gibraltar on the world-famous “Costa del Sol”. Before opening its doors, it will undergo a full refurbishment to transform it from the former The Hotel Los Monteros – Spa & Golf Resort Marbella which has been closed since late 2022.

The 178-key hotel will be a highly-valued addition to the quickly growing Kimpton Hotels & Restaurants portfolio of properties which are beloved by guests – including IHG One Rewards members – for their individual identities, eye-catching designs and repurposing of inspiring, iconic buildings.

Waffle is a dish made from leavened batter or dough that is cooked between two plates that are patterned to give a characteristic size, shape, and surface impression. 1869 – Cornelius Swarthout of Troy, New York, a Dutch-American, receives a patent for the first waffle iron in the U.S., on August 24th.There are many variations based on the type of waffle iron and recipe used. Waffle-making made its way to America with Dutch colonists in the 1620s. It was one hundred years later, in Robert Smith's Court Cookery, that the English language saw the appearance of the word "waffle" for the first time. 

Waffles were enjoyed sweet, with butter, syrup, or fruit, or savory, with kidney stew. Pancakes and waffles are bread, the type known as 'quick bread' - bread leavened with baking soda or baking powder. Waffles are almost identical to pancakes, only having a little fatter in the batter, and cooked on a grid-shaped pan (waffle maker). A soft, bread-like cake with a surface of uniform indentations similar to a honeycomb. Waffles are made with a pourable batter that usually consists of flour, milk, oil, sugar, eggs, salt, and baking powder.

In many places, waffles are served and eaten with a knife and fork. Pierce the corner of the waffle with your fork, and use the knife to cut off a small, bite-sized piece. Use the fork to pick up the piece and bring it to your mouth. Wait until you chew and swallow before cutting another small piece. Serve them hot, warm, or chilled, depending on your toppings. Cooked waffles can be frozen and heated up in the toaster. Recipe-1] CRISPY CHICKEN WAFFLES

Ingredients:

For the waffle batter:

Refined flour / maida-2 cups

Melted butter- 2-3 tbsp.

Salt-1 pinch

Eggs- 2 no

Milk-1/2 cup

Water-1/4 cup

Sugar-1/4 tsp

Baking powder-1/4 tsp

For the waffle filling:

Boneless chicken breasts- 250 gms, thinly sliced

For the marination:

Salt and pepper to taste

Oil-2 tsp

Mustard paste-1/2 tsp

Mixed herbs-1/4 tsp

Lime juice-2 tsp

Apply on the chicken and keep aside for 20 mins

To coat and deep fry:

Maida- 1 cup

Eggs-2 no

Bread crumbs- 1 cup

Oil to fry

To assemble the waffle:

Butter-2-3 tsp

Cream cheese- 2-3 tsp

Parsley-2-3 tsp chopped

Peanut butter-1-2 tsp

Lettuce leaves- 1 cup

Tomato ketchup-2-3 tsp

Sliced tomatoes, cucumbers, onions

Mayonnaise-1/2 cup

Chili sauce-2-3 tsp

Method:

1. Prepare all the ingredients for the waffle recipe as listed.

2. Start with the waffle batter first, mix all the ingredients well and using a hand blender prepare a batter of a light coating texture and allow to rest for 20 mins.

3. Proceed with the marinated chicken pieces, coat them with dry maida, then beaten eggs and finally with bread crumbs and deep fry in medium hot oil until golden color, remove and drain excess oil.

4. Continue with the waffle maker, pour in the batter into the waffle maker as per prescriptions, allow to set and cook to a nice golden brown color.

5. Remove the waffle once cooked, and start the assembling of the waffle sandwich starting with butter, cream cheese, sliced veggies, some lettuce leaves, fried chicken pieces, and cover it, serve with assorted dips/ sauces.

Recipe-2] CHEESY BAKED WAFFLES 

Ingredients:

For the waffle batter:

Refined flour / maida-2 cups

Melted butter- 2-3 tbsp.

Eggs- 2 no

Milk-1/2 cup

For the waffle topping:

Butter-2-3 tsp

Oil-1 tsp

Garlic- 1 tsp chopped

Onions-1 small chopped

Capsicum-1/2 chopped

Salt and pepper to taste

Chili flakes-1/2 tsp

Green olives- 3-4 no

Black olives- 3-4 no

Shredded roast/ grilled chicken- ½ cup

Method:

1. Prepare all the ingredients for the waffle recipe as listed.

2. Start with the waffle batter first, mix all the ingredients well and using a hand blender prepare a batter of a light coating texture and allow to rest for 20 mins.

3. Proceed with the topping for the waffle heat up oil and butter in a pan, saute the garlic, onions, and capsicums add any other ingredients/veggies as well like mushrooms, corn, broccoli etc add in the seasonings, herbs, chili flakes and cook for 2-3 mins and keep aside.

4. Continue with the waffle maker, pour in the batter into the waffle maker as per prescriptions, allow to set and cook to a nice golden brown color.

5. Remove the waffle once cooked, and start the assembling of the waffle by placing the prepared toppings on it after applying sauce, placing the roast/grilled sliced chicken pieces, top with cheese, olives and bake in a pre-heated oven for 6-9 mins, remove serve with assorted dips/ sauces.

Recipe-3] HEALTHY WAFFLE BITES

Ingredients:

For the waffle batter:

Refined flour / maida-2 cups

Melted butter- 2-3 tbsp.

Salt-1 pinch

Eggs- 2 no

Milk-1/2 cup

Water-1/4 cup

Sugar-1/4 tsp

Baking powder-1/4 tsp

For the waffle toppings:

Oil- 2 tsp

Butter-1 tsp

Green chilies-1 tsp chopped

Garlic-1 tsp chopped

Onion-1 small chopped

Chicken liver- 250 gms, cleaned cut into 4 pieces each- boiled.

For veg options- use paneer cubes/ tofu/ zucchini/ mushrooms etc

4. To prepare the tossed green salad, in a mixing bowl combine together the ingredients for the dressing and add in the ingredients toss them well and assemble on the serving plate.

5. Assemble the cooked waffle on the serving plate with the green tossed salad and top it with the prepared crumble mixture and garnish with fresh herbs and serve it.

Recipe- 6] HERB & SPICE WAFFLE COMBO

Ingredients:

For the waffle batter:

Refined flour / maida-2 cups

Melted butter- 2-3 tbsp.

Salt-1 pinch

Eggs- 1 no

Milk-1/4 cup

Water-1/4 cup

Pesto sauce-2-3 tbsp.

Assorted fresh green herbs-1/4 cup fine chopped

Chili flakes-1/2 tsp

Sugar-1/4 tsp

Baking powder-1/4 tsp

For the waffle toppings:

Oil- 2 tsp

Butter-1 tsp

Onions- ½ cup sliced

Garlic-1 tsp chopped

Salt and pepper to taste

Hung curd-1 cup

Cream cheese-2 tsp

Mixed herbs-1/4 tsp

Chili flakes-1/4 tsp

Chaat masala-1/4 tsp

Spring onion greens- 2-3 tbsp. chopped

Honey-2-3 tsp

To prepare the waffles for presentation assemble the cooked waffle on a serving plate and top it up with the saute mix of ingredients and then spoon over the mixture of cream cheese and hung curd mix and garnish with assorted fresh greens. Serve immediately with choice of dips and sauces/ salads etc.
